A friend gave me this recipe after I had mentioned that my meat pies lacked "punch". The pie has a delicious, distinctive flavor thanks to lots of seasonings. Flecks of carrots peek out of each neat slice. My family especially enjoys this dinner when the weather turns chilly. -Paula L'Hirondelle, Red Deer, Alberta

2 medium potatoes, peeled and quartered
1 pound ground beef
3/4 cup sliced green onions
1 large carrot, finely chopped
1 garlic clove, minced
1/2 teaspoon dried thyme
1/2 teaspoon rubbed sage
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon celery salt
Pinch ground cinnamon
1/4 cup minced fresh parsley
1/4 cup chili sauce
Pastry for double-crust pie (9 inches)
1 tablespoon Dijon mustard
1 tablespoon 2% milk

Steps:

  • In a saucepan, cook potatoes in boiling water until tender; mash and set aside. , Meanwhile, in a large skillet, brown beef until no longer pink; drain. Stir in the next nine ingredients. Simmer for 4-5 minutes. Stir in the potatoes, parsley and chili sauce; remove from the heat. , Place bottom pastry in a 9-in. pie plate; brush with mustard. Add the meat mixture. Top with remaining pastry; seal and flute edges. Cut slits in the top crust. , Brush with milk. Bake at 450° for 10 minutes. Reduce heat to 350° bake 25 minutes longer or until golden brown.

A last-minute quick meal turned into a family favorite. Best homemade skillet burgers I have ever had and they are surprisingly not too bad for you! Making them into sliders on lightly toasted sourdough is an amazing gourmet treat for guests! My boyfriend got out the ketchup, and after one bite of these burgers he put the ketchup away. These burgers are perfect as-is--you don't even need buns!

1 tablespoon oil, or as needed
1 ¼ pounds lean ground beef
½ cup egg whites
⅓ cup chopped and drained oil-packed sun-dried tomatoes
3 ounces crumbled goat cheese, or more to taste
2 teaspoons sea salt
1 teaspoon steak seasoning
1 teaspoon dried parsley flakes
2 tablespoons liquid hickory smoke seasoning

Steps:

  • Lightly oil a large skillet and put over low heat.
  • Mix ground beef, egg whites, sun-dried tomatoes, goat cheese, sea salt, steak seasoning, and parsley in a large bowl. Shape into 5 hamburger patties.
  • Put patties in the skillet and cook for 5 minutes. Flip and cook another 5 minutes. Increase heat to medium or medium-high, cover, and continue to cook, flipping occasionally, until burgers are cooked through and juicy, 5 to 10 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Top with liquid hickory smoke seasoning.

1 1/2 lbs lean ground beef
1/2 cup chopped celery
1/2 cup diced onion
2 teaspoons Worcestershire sauce
2 tablespoons ketchup
1/2 teaspoon pepper
1 (10 1/2 ounce) can condensed tomato soup, undiluted (or 1 jar of beef gravy, I prefer the soup)
1 teaspoon garlic powder (more or less to your taste)
3/4 teaspoon salt
1 (14 1/2 ounce) can French style green beans, drained
1/2 cup light sour cream
4 -6 potatoes, boiled until tender (number depends on size, can prepare 4-6 servings of instant if you prefer also)
1 tablespoon chopped chives
1/2 cup shredded American cheese (or 4-5 slices)
paprika

Steps:

  • In Large skillet cook beef, celery, and onion until meat is browned and vegetables are crisp-tender. Meanwhile cube and boil potatoes in salted water until tender and drain.
  • Stir in Worcestershire, pepper, green beans, tomato soup, ketchup, and 1/4 cup of water, and simmer over medium-low heat for 15 minute
  • Whip potatoes with sour cream, chives, salt, garlic powder and hot water as needed until desired consistency, added a little bit at a time. (any way you typically prefer to do your mashed potatoes will work fine as well).
  • Spoon the mashed potatoes in dollops over the mixture, sprinkle with the cheese and a little paprika, cover and heat until the cheese melts.

3 cups flour, all purpose
2 tablespoons dried onion flakes
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon fresh ground black pepper
1/2 cup butter
1/2 cup shortening, such as crisco
1 egg, beaten
6 -8 tablespoons cold water
1 tablespoon milk (for eggwash)
1 egg, beaten (for eggwash)
2 cups mushrooms, sliced
1 cup onion, chopped
2 lbs ground beef
1 cup fresh parsley, chopped
1/2 cup breadcrumbs
8 ounces cream cheese
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon thyme leaves

Steps:

  • In large skillet, cook beef, mushrooms, and onions until beef is browned.
  • Drain off fat, and add remaining Stroganoff ingredients, cooking over medium heat until cream cheese is melted.
  • In bowl, stir together flour, dried onion flakes, salt, sugar, and pepper.
  • Cut in butter and shortening until mixture is crumbly.
  • With a fork, add egg and enough water until flour is moistened.
  • Divide dough in half.
  • On floured surface, roll dough into two 14 inch squares.
  • Place one square into a 9 inch by 9 inch baking dish, trimming edges to 1/2 inch from rim of dish.
  • Fill dough with Stroganoff ingredients and top with remaining dough square.
  • Trim top crust to 1/2 inch from rim of dish, then roll both edges of dough under to form a rim inside of the baking dish.
  • Crimp edges of dough and cut vent holes into surface of the pie.
  • Mix egg wash ingredients together and brush over top and edges of the pie.
  • Bake at 375 degrees for 35 to 45 minutes, or until crust is golden brown.
  • Let stand for 5 minutes before serving.
