Easy and Authentic Mexican Guacamole / Avocado Dip image

A tasty dip that is a success at any party. I got this recipe from a friend from Mexico. Easy to make!

3 ripe avocados (ripe as in really dark in color and slightly soft when squeezed)
1 small onion, finely diced
1 medium tomatoes, diced
1 lime (juice of )
salt and pepper (to taste )
Tabasco sauce (optional)

Steps:

  • Take avocados and cut into and around the circumference of the avocado's pit.
  • With both hands twist the two halves in opposite directions and pull apart.
  • Remove the pit with a knife or a spoon.
  • Carve out the flesh of the avocado with a tablespoon.
  • Place avocados into a medium bowl and mash and stir until moderately creamy. I use a fork or a pastry blender.
  • Some people like the avocados more chunky than others-- either way it tastes great.
  • Add diced onion and tomatoes to the avocados.
  • Add salt, pepper, tabasco sauce and lime juice and taste to see if seasoned enough to your liking.
  • In a separate small bowl put in 2 tablespoons of the dip.
  • Add 1 tbsp of sour cream and adjust your seasonings again.
  • Taste it and decide if you prefer your guacamole with or without sour cream.
  • If you like with sour cream add 4 tablespoons or more to the avocado mixture and adjust your seasonings again.
  • If not, do nothing and leave it like it is.
  • Serve chilled with chips or add a little to your taco salad, tacos or fajitas.

Avocado pits unite!! Save this guacamole/avocado dip from turning black or brown!! The pit/seed of an avocado prevents guacamole/avocado dip from turning brown or black. It keeps it green, even after a day. This dip does not have any tomatoes in it. My mom made it this way when we kids were growing up. It is simple to make and very tasty. For a spicier, hotter dip, use jalapeƱos or serrano chilies instead of green chilies. The full flavor of the avocado comes through because there are not a lot of ingredients to mask its true flavor. This can be served as a side dish on a leaf of lettuce. You can also put a scoop of it on top of enchiladas or burritos. Larger avocados can be used but you will need to add more of the other ingredients as well. Preparation time is approximate.

4 small avocados
1/4 cup green chili (diced or chopped)
1/4 cup chopped green onion
1 tablespoon lemon juice
1/4 teaspoon salt

Steps:

  • Cut avocados in half and remove the pits.
  • Set the pits aside.
  • Peel the avocados and put the pulp in a bowl.
  • Mash the avocado pulp.
  • Add the rest of the ingredients and stir well.
  • Put the avocado pits into the dip and plunge them in so that they are completely covered with the avocado dip.
  • Cover the bowl with plastic wrap and refrigerate for at least one hour before serving.
  • Keep at least one of the pits in the dip until it is completely gone.
  • If the dip does turn brown it will be a very slight brown.

2 tablespoons fresh lime juice
2 cups mandarin orange sections, diced
1 cup pomegranate seeds
1/2 cup green onion, thinly sliced
1/2 cup cilantro, minced
2 tablespoons honey
1/2 teaspoon salt
1 jalapeno, minced

Steps:

  • Mix all ingredients together and let sit for 1 hour in fridge for flavours to blend.
  • Serve with home made pita chips or anything else you like to dip.

1/2 cup sour cream
1 tablespoon lemon juice

  • Place on round platter, garnish with tomato bits, green onions (chopped) and shredded Cheddar cheese. Serve with corn chips.

4 small avocados, peeled & sliced
1 1/2 teaspoons onion powder
1 romano tomatoes, chopped
4 tablespoons sour cream
1 1/2 teaspoons lemon juice
1 drop Tabasco sauce

Steps:

  • Placed peeled avocado slices on flat cutting board and mash with fork.
  • Sprinkle& fold in 1/2 t of Lemon Juice.
  • Fold in 1-1/2 t onion powder.
  • Place mashed avocado mixture into a bowl and fold in 4 T of Sour Cream, 1/2 t Lemon Juice, 1 drop of Tabasco.
  • Finely chop tomato and fold into the avocado& sour cream mixture.
  • Add the final 1/2 t lemon juice.
  • Chill for 1-1/2 hours.

3 large avocados
1/2 lemon
1/2 cup red onion (chopped)
1 teaspoon salt substitute
1 teaspoon pepper
1 tomatoes (diced)
2 -3 sprigs cilantro (finely chopped)
1 jalapeno (minced)
1 garlic clove (minced)

Steps:

  • Remove avocado flesh from shells and chop. Squeeze lemon juice onto avocado to keep from browning. Lightly mash avocado with fork. Mix in red onion, tomato, cilantro, jalapeno, garlic, pepper and smart salt. Serve with tortilla chips.
