CINNAMON SAUTEED BANANAS
I believe this is an old Helen Corbitt recipe. It is an excellent, easy dessert and complements so many things.

Steps:
- Cut bananas crosswise into 1/4" slices.
- Toss slices in a bowl with the sugar, cinnamon and lemon juice.
- Heat saute pan over medium-high heat, add butter.
- When butter is bubbly, add the bananas.
- Holding the pan by the handle, toss the bananas every 10 seconds or so for 2-3 minutes until tender.
- (The slices should hold their shape and be carmelized) Serve on a warm plate-- good with ice cream or angel food cake or by itself!

- In a large saute pan, add the butter and melt it over medium-high heat. Add the bananas and saute until they begin to caramelize. Add the orange juice, sugar and salt and cook an additional 1 to 2 minutes. The bananas should be nicely browned, and the orange juice and sugar will have formed a glaze. (If needed, add a tablespoon of water.) Serve on a dessert plate with a tablespoon of Tangy-Sweet Cream.;
- In a medium bowl, mix all the ingredients until creamy and smooth.

- To Make The Waffles
- Preheat a waffle iron according to the manufacturer's directions. Preheat the oven to 200°F.
- In a food processor, pulverize the pecans until finely ground. Add the eggs, butter, honey, vanilla, baking soda, and salt, and blend well.
- Grease the waffle iron using a partially wrapped stick of cold butter. Hold the butter by its wrapped end and rub the other end all over the waffle iron's cooking surface. Add 1/4 cup batter and cook for a few minutes, until golden brown. Set right on the oven rack to crisp up and keep warm while you cook more.
- To Prepare The Bananas
- Melt the butter with the oil in a sauté pan over medium heat. Add the bananas and cook for about 6 minutes, turning once, until golden brown. Set aside.
- Mix the honey and cinnamon until well blended.
- Place the waffles on warmed plates, top with the bananas, honey, and serve.
SAUTEED BANANAS IN PRALINE SAUCE WITH VANILLA ICE CREAM
Steps:
- Heat grill to high. Melt the butter in a large saute pan on the grates of the grill. Whisk in the sugar and cook until melted and smooth. Standing back, carefully add the bourbon and cook for 2 minutes. Add 1/3 cup pecans and cook for 30 seconds. Add the bananas and spoon the sauce over the bananas constantly until softened, about 4 to 5 minutes.
- Scoop the ice cream into bowls and top with the bananas and sauce. Garnish with the remaining chopped pecans and serve.

- In a bowl, whisk together flour, granulated sugar, and salt. Make a well in the center. Add milk, eggs, and 1 tablespoon butter; whisk to combine. Cover, and refrigerate 1 hour (or up to 1 day).
- Preheat oven to 250 degrees; place a baking sheet in oven. Heat a medium nonstick skillet over medium high. Lightly coat skillet with butter. Pour 1/3 cup batter into skillet, and quickly swirl skillet so batter evenly coats bottom. Cook crepe until edges are dry, 1 to 2 minutes. Loosen with a wide spatula, and using both hands, grip edges with fingertips and quickly turn over. Cook 1 minute more. Slide onto sheet to keep warm. - In a small saucepan, melt the butter over medium high.
- Stir in 1 tablespon peanut oil, honey and brown sugar, stir until sugar is dissolved, about 3 minutes.
- Sit in milk, 1 tablespoon at a time.
- Stir and cook until the sauce thickens slightly, about 3 minutes.
- Remove sauce from heat and stir in raisins and chopped walnuts.
- Set aside and keep warm.
- Peel the bananas, cut each crosswise into 3 sections and then cut each section in half lengthwise.
- Add the additional 1/2 teaspoon peanut oil to a nonstick frying pan and place over medium-high heat.
- Add the cut bananas and saute until they begin to brown, 3 to 4 minutes each side turning once.
- Transfer to individual serving plates.
- Pour the rum into the pan, bring to a boil, and deglaze the pan.
- Cook until rum is reduced by half.
- Add the carmel sauce to the rum and warm.
- Spoon warm sauce over the bananas and serve immediately.

- In a small saucepan, combine 1/2 cup cream, 1 tablespoon butter and 2 tablespoons sugar over medium heat and bring to a boil. Remove from heat and stir in chopped chocolate until smooth. Set aside.
- In medium bowl, whip 1/4 cup cream with electric mixer until stiff peaks form. Set aside.
- In large skillet melt 1 tablespoon butter over medium heat. Sprinkle 1 tablespoon sugar evenly over surface of pan and cook until it begins to turn golden. Place bananas cut side down in pan and pour rum over bananas. Continue to cook, basting with sauce, until bananas begin to soften.

- Preheat oven to 400 degrees F.
- Spread a cookie sheet with parchment paper. Top with a layer of phyllo and brush the sheet with the melted butter. Mix sugar and cinnamon. Scatter a layer of sugar across the butter coated pastry. Repeat with 2 more layers of pastry, then top with a final sheet of dough then cut pastry into long triangles, working from side to side of the cookie sheet, using a sharp paring knife or pizza wheel.
