3 cups chopped peeled tart apples
2 cups fresh or frozen cranberries
1 cup sugar
3 tablespoons all-purpose flour
TOPPING:
1-1/2 cups quick-cooking oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup butter, melted
1/4 cup chopped pecans

Steps:

  • Combine apples, cranberries, sugar and flour. Pour into a greased 11x7-in. baking dish. In a bowl, mix topping ingredients until crumbly; sprinkle over apple mixture. Bake at 350° for 50-55 minutes or until fruit is tender.

8 tart green apples, peeled, cored, and cut into small chunks
1 1/2 tablespoons safflower oil
2 tablespoons maple syrup or 2 tablespoons agave syrup
3/4 cup granola cereal
1/4 cup dried cranberries

Steps:

  • Heat the oil in a medium skillet over medium heat.
  • Add the apples and cook, stirring often, until golden brown and beginning to soften, 3 to 5 minutes.
  • Add the maple or agave syrup and continue cooking until the apples are tender when pierced with a sharp knife, 3 to 5 minutes more.
  • Divide the hot apples among eight bowls. Sprinkle the granola and a few dried cranberries over the top of each serving.

2 pounds Granny Smith apples - peeled, cored and thinly sliced
¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
  • In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.
  • Bake in preheated oven for 40 to 50 minutes, or until topping is golden brown, and apples are tender.

8 cups apples (about 9 medium-sized apples), peeled and sliced into 1/4" slices
2 cups cranberries, fresh or frozen (If using frozen, do not thaw)
2 Tablespoons orange juice
2 teaspoons orange zest
3 tablespoons all-purpose flour
3/4 cup granulated sugar
1/4 cup light brown sugar, packed
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cardamom
8 ounces unsalted butter, at room temperature, cut into cubes
1 and 1/2 cups old fashioned oats
3/4 cup granulated sugar
3/4 cup light brown sugar, firmly packed
3/4 teaspoon ground cinnamon
1 and 1/4 cups all-purpose flour

Steps:

  • Preheat oven to 375 degrees (F). Lightly grease a 9x13-inch baking dish with butter.
  • Place the sliced apples and cranberries in a large bowl and toss with the orange juice and zest.
  • Sprinkle the flour, sugars, and spices on top of the fruit and toss well to coat.
  • Pour fruit mixture into prepared baking dish and set aside while you make the crumb topping.
  • In a large bowl, combine the oats, both sugars, cinnamon and flour. Add in the cubed butter and, using two forks or a pastry blender, cut the butter into the dry ingredients until mixture resembles a coarse meal.
  • Sprinkle the topping evenly over the fruit mixture.
  • Place the pan in the oven and bake for 55 to 60 minutes, or until the top is golden brown and the fruit is bubbling.
  • Remove from the oven and place the pan on a cooling rack. Serve warm! Preferably with ice cream.

1 ½ cups whole berry cranberry sauce
1 cup whole wheat pastry flour
1 cup rolled oats
⅔ cup packed brown sugar
⅔ teaspoon ground cinnamon
½ cup butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place apple slices in an 8 or 9 inch square baking dish. Spread the cranberry sauce over the apples. In a medium bowl, stir together the flour, oats, brown sugar, cinnamon, and butter until crumbly. Sprinkle over the apples and cranberry sauce, covering completely.
