Steps:
- Heat oil in a large, shallow pan over high heat. Cook garlic 30 seconds, stirring to prevent burning. Combine stock and oyster sauce in a bowl; add to pan. Add peas; cook, turning peas constantly, until bright green and crisp, about 2 minutes. Divide among 8 bowls; top each with a handful of pea shoots.

- In a large saucepan of boiling salted water boil snow peas 30 seconds and drain. Refresh snow peas under cold water and drain. Snow peas may be prepared up to this point 8 hours ahead and chilled, covered.
- In a heavy skillet sauté snow peas in oil over moderately high heat, until heated through and season with salt and pepper.
SAUTEED COD ON SNOW PEAS AND CABBAGE WITH MISO SESAME VINAIGRETTE
Steps:
- Make vinaigrette:
- Purée all vinaigrette ingredients in a blender until smooth.
- Sauté cabbage:
- Heat oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté garlic until golden, about 30 seconds. Add cabbages and snow peas and sauté until cabbages are wilted and peas are crisp-tender, about 5 minutes. Season with salt and transfer to a bowl, then wipe skillet clean.
- Cook fish:
- Heat oil in skillet over high heat until hot but not smoking, then sauté cod, turning once, until golden and just cooked through, about 6 minutes total.
- Divide cabbage among 4 plates, then top with fish and drizzle with some dressing. Serve remainder on the side.

- In a small bowl, combine soy sauce, garlic, ginger and sugar; set aside.
- Heat olive oil and sesame oil in a large nonstick skillet over medium-high heat; add onion; cook, stirring frequently, for 1 minute. Add snow peas and soy sauce mixture (and sesame seeds, if using them); cook, stirring frequently, for about 3 -4 minutes or until snow peas are crisp-tender.

- Heat oil, red-pepper flakes, and garlic in a large skillet over medium-high, stirring constantly, until garlic is golden, about 1 minute. Add snow peas and cook, stirring, until bright green and still crisp, about 1 minute.
- Add pea shoots in batches along with 1 tablespoon water. Cook, stirring, until just wilted, about 30 seconds. Season with salt, squeeze lemon over top, and serve.
SAUTEED SHRIMP WITH SNOW PEAS
Steps:
- 1. Rinse shrimp with cold water and pat dry.
- 2. In bowl combine wine, lemon juice, seasoning and cornstarch. Add the shrimp and marinate in the refrigerator for 30 minutes.
- 3. Lightly coat a non-stick wok or frying pan with cooking spray and place over medium heat. Reserving the marinade, add the shrimp and saute until they just turn pink, 2-3 minutes. Transfer to a bowl.
- 4. Add the snow peas, onion, and ginger to the pan and stir-fry for 2 minutes. Add the reserved marinade and soy sauce to the pan along with the cooked shrimp. Mix the ingredients well and continue to cook until most of the sauce is absorbed, 1-2 minutes. Transfer to serving bowl, sprinkle with sesame oil and serve hot.
