  • Cook 2 strips chopped bacon in olive oil in a pot over medium heat until crisp. Add 1 chopped onion; cook until softened, 4 minutes. Add 1 cup chicken broth, 1/2 head sliced red cabbage, 3 tablespoons white wine vinegar, 2 tablespoons sugar and 1 bay leaf; season with salt and pepper. Cover and cook, stirring occasionally, until tender, 30 minutes. Stir in 1/3 cup golden raisins and 2 tablespoons chopped parsley.

3 tablespoons red-wine vinegar

Steps:

  • Halve, core, and thinly slice red cabbage.
  • Heat olive oil in a large skillet over medium heat. Add cabbage and red-wine vinegar; season with coarse salt and ground pepper. Cook, tossing frequently, until cabbage is crisp-tender, about 15 minutes (add a splash of water if pan becomes dry).
  • Add light-brown sugar; toss until dissolved, about 30 seconds. Season again with salt and pepper, as desired.

2 rounded tablespoons sugar
1 teaspoon mustard seed

Steps:

  • Heat a skillet over medium high heat. Add oil and onion and saute 2 minutes. Add cabbage and turn in pan, sauteing it until it wilts, 3 to 5 minutes. Add vinegar to the pan and turn the cabbage in it. Sprinkle sugar over the cabbage and turn again. Season with mustard seed, salt and pepper and reduce heat a bit. Let cabbage continue to cook 10 minutes or until ready to serve, stirring occasionally.

1/4 cup olive oil
1/3 cup pine nuts
1 (2-pound) red cabbage, thinly sliced

Steps:

  • Add the raisins to the wine and let soak until raisins have plumped, about 15 minutes. Set aside.
  • Heat the oil in a large saucepan, add the pine nuts and saute until golden, 3 to 5 minutes. Add the cabbage and saute briefly while tossing, about 1 minute. Add the reserved red wine and raisins, and season with salt.
  • Reduce the heat to very low, cover the pan tightly and simmer for 30 to 40 minutes.

1 large head Savoy cabbage (2 1/2 pounds), quartered and cored
2 1/2 tablespoons peanut oil
3/4 teaspoon kosher salt

3 tablespoons unsalted butter
2 fresh thyme sprigs

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Soak raisins in very hot water to cover in a small bowl 30 minutes, replacing hot water once or twice as it becomes tepid.
  • Tear cabbage into large pieces.
  • Heat oil in a 12-inch heavy ovenproof skillet or pot over moderately high heat until hot but not smoking, then add cabbage in 5 batches, adding some salt and pepper with each batch, stirring, and adding next batch as previous batch begins to wilt. (Some cabbage will brown.) Add butter and thyme and cook, stirring frequently, until all cabbage is wilted, about 3 minutes. Drain raisins and add to cabbage, then transfer skillet to oven and roast, stirring every 10 minutes, until cabbage is tender, 30 to 40 minutes. Discard thyme sprigs before serving.

1 small red cabbage head (about 1 1/2 pounds)
1 tablespoon olive oil
1 small onion, chopped
1 garlic clove, crushed with press
1 cup apple juice (or cider?)
1/2 cup golden raisin
1 pinch ground cloves
8 ounces spaghetti (I prefer angel hair)

Steps:

  • Heat large covered saucepot of cold water and 2 tsp of salt and bring to boiling over high heat.
  • Meanwhile discard any tough outer leaves from cabbage. Cut cabbage into quarters; cut core from each quarter. Then thinly slice cabbage.
  • In nonstick 12-inch skillet, heat oil over medium heat. Add onion and cook about 8 minutes or until tender, stirring occasionally.
  • Add garlic and cook 1 minute, stirring.
  • Stir in cabbage, apple juice, raisins, clove and 1/2 tsp salt. Cover and cook about 15 minutes or until cabbage is tender, stirring occasionally.
  • About 5 minutes before cabbage is done, add pasta to boiling water and cook as label directs.
  • Reserve 1/4 cup pasta cooking wat4er; drain pasta.
  • Stir pasta into cabbage mixture in skillet; add cooking water if mixture seems dry.
