The bold, delicious flavors of this traditional Mexican dish are sure to become your new favorite breakfast. Top with a fried or poached egg, or serve inside corn tortillas. I like to top mine with Cotija cheese, cilantro, and hot sauce, with a side of avocado. Home- or store-made chorizo is best, however, feel free to use your favorite brand.

1 ¼ pounds Yukon gold potatoes, cut into 3/4-inch cubes
¾ pound fresh Mexican chorizo sausage, casing removed
vegetable oil, as needed
1 small onion, diced
salt and ground black pepper to taste

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until slightly soft, 5 to 6 minutes. Drain.
  • Meanwhile, cook chorizo over medium-high heat in a large skillet, breaking up any large clumps, until browned, 5 to 6 minutes. Remove chorizo to a paper towel-lined plate using a slotted spoon, reserving about 1 tablespoon of grease in the skillet. Add oil if necessary to make up 1 tablespoon.
  • Cook onion in the same skillet over medium heat, stirring occasionally, until they begin to soften and brown, 4 to 5 minutes. Add potatoes to the skillet and saute until potatoes are lightly browned, 5 to 7 minutes. Stir in chorizo and season with salt and pepper.

2 tablespoons extra virgin olive oil, 2 turns of the pan
3/4 pound, 1 package, chorizo, very thinly sliced on an angle, pull away any loose casings
6 small Yukon gold potatoes, very thinly sliced
1 medium onion, very thinly sliced
Salt and pepper
2 teaspoons sweet paprika
1/4 cup chopped flat-leaf parsley, a generous 1 or 2 handfuls

Steps:

  • Heat a medium skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, and the chorizo. Cook sausage 2 minutes, flip cook another minute then add potatoes and onions to the pan in an even layer over the sausage. Season the potatoes and onions with salt, pepper and paprika then turn sections of the potatoes using a spatula so that the chorizo is on top and potatoes and onions are on the bottom. Place a smaller skillet on top and press down. Weight the skillet with a few heavy cans. Cook 10 to 12 minutes. Remove weight and turn again to combine all ingredients. Cook another 3 to 4 minutes then add parsley, remove from heat and serve.

1 1/2 lbs large waxy potatoes, quartered
1/2 cup peeled thinly sliced dry-cured chorizo sausage (mild or hot)
1/4 cup finely chopped red onion
1/4 cup dry white wine
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • In a saucepan, combine the potatoes with water to cover and bring to a boil.
  • Reduce the heat to medium and cook until the potatoes are fork-tender, about 20 minutes.
  • Drain and keep warm.
  • Heat a frying pan over med-high heat.
  • Add the chorizo and sauté until most of the fat is rendered, about 2 minutes.
  • Pour off the fat and continue cooking the chorizo until lightly browned, 1-2 minutes.
  • Add the onion and sauté for 1 minute.
  • Add the potatoes and wine and cook until most of the liquid evaporates, about 1 minute.
  • Transfer to a bowl, toss with the parsley and serve.

1 tablespoon vegetable oil
10 ounces Mexican pork chorizo, casings removed (see Cook's Note)
1 small onion, diced
1 pound red skinned new potatoes, cut into small (1/4-inch) dice, and boiled
Kosher salt and fresh ground black pepper

Steps:

  • Heat the oil in a heavy large skillet over medium-high heat. Add the chorizo and cook, breaking up the clumps, until dry and crisp, about 10 minutes. Using a slotted spoon, transfer the chorizo to a paper lined plate to absorb any additional oil. Pour off all but 1 tablespoon of fat from the pan and heat the pan over medium-high heat. Add the onions and boiled potatoes and saute until brown, about 12 minutes. Stir in the cooked chorizo and season with just a little salt and pepper, to taste. Transfer to a serving bowl and serve.

1 tbsp olive oil
1 onion, finely chopped
2 fat garlic cloves, finely chopped
500g cooking chorizo, cut into chunky slices if large or left whole if small
100ml red wine
1 tbsp clear honey
handful parsley, chopped
crusty bread, to serve

Steps:

  • Heat the oil in a large frying pan and gently sauté the onion for a few mins until softened. Add the garlic and cook for a few mins more.
  • Push the onion and garlic to the side of the pan and add the chorizo. Brown all over, then add the wine and stir in the honey.
  • Cover and cook gently for 5 mins or until the sausages are cooked through and coated with the sauce. Add a splash of water if the pan is looking dry. Serve scattered with parsley and some crusty bread to mop up the spicy juices.

1 tbsp olive oil
1 onion , chopped
2 garlic cloves , sliced
1 red chilli , chopped
pinch cayenne pepper
pinch smoked paprika
400g can chopped tomato
1kg new potatoes , halved or quartered
250g small cooking chorizo

Steps:

  • Heat a little oil in a pan, fry the onion, garlic and chilli until the onion softens, add the cayenne and paprika and stir. Add the tomatoes and bring to a simmer, then cook the whole mixture down for about 20 mins until you have a thick paste. Season well and, if you prefer a smooth sauce, blitz it with a hand blender.
  • Meanwhile, steam the potatoes for 10 mins and put the chorizo in a frying pan to slowly cook and release some of its oil. Tip off the excess red oil and add 1 tbsp olive oil. Add the potatoes and fry everything together, turning the heat up as you go so both the potatoes and chorizo brown in patches. Tip into a bowl. Season the sauce - if it isn't hot enough add a few more pinches of cayenne. Spoon the sauce over the potatoes and chorizo to serve.

5 potatoes, about 1 1/2 pounds or slightly less
Salt to taste if desired
Freshly ground pepper to taste
1/4 cup corn, peanut or vegetable oil
1 tablespoon butter
1 tablespoon finely chopped parsley

Steps:

  • Put the potatoes in a saucepan and add cold water to cover. Add salt to taste and bring to a boil. Cook about 20 minutes or until potatoes are tender.
  • Drain the potatoes and when they are cool enough to handle, peel them. Cut them crosswise into slices about one inch thick. Sprinkle with salt and pepper.
  • Heat about 2 tablespoons of the oil in a skillet (preferably nonstick).
  • When it is quite hot, add half the potato slices and cook about 2 to 3 minutes or until crisp and brown on one side. Turn the slices and cook on the other side until crisp and brown, 2 to 3 minutes. Drain on absorbent paper towels.
  • Add more oil to the skiller if necessary, and cook the remaining potato slices as before.
  • Pour off any remaining oil. Wipe the skillet clean and add the butter.
  • Return the potatoes to the skillet and stir gently. Sprinkle with the parsley.

2 pounds new potatoes
3 tablespoons canola or corn oil
1/2 teaspoon salt
1/2 cup chopped parsley, lightly packed
1 tablespoon unsalted butter

Steps:

  • Wash the potatoes thoroughly, place them in a pot, and cover them with cold water. Bring the water to a boil, and boil the potatoes gently for 30 to 35 minutes, until they are tender. Immediately drain off the water in the pan, and when the potatoes are cool enough to handle, peel them and cut them into 1/2-inch slices.
  • Heat the oil in a large saucepan (preferably nonstick). When it is hot, add the potato slices, and brown them over high heat for about 10 minutes, occasionally turning them gently with a spatula to minimize breakage.
  • Add the salt, parsley and butter, mix them in gently, and saute the potatoes for 10 to 15 seconds longer. Serve immediately.

1 1/2 pounds (about 4) russet potatoes
2 tablespoons olive oil
Coarse salt and freshly ground pepper
1 tablespoon unsalted butter
2 tablespoons chopped fresh chives

Steps:

  • Peel potatoes, and place them in cold water to inhibit discoloration. Remove, and cut into 3/4-inch cubes.
  • Heat half the oil in a large saute pan over medium heat. Pat potatoes dry; add half to pan. Season with salt and pepper. Cook, tossing frequently, until potatoes are golden, 12 to 15 minutes. Add half the butter; as it melts, toss to coat potatoes.
  • Transfer to a serving plate; keep in a warm place while you repeat with remaining oil, potatoes, and butter. Toss potatoes with chives. Serve immediately.
