MINI SWEET PEPPERS WITH BROCCOLI AND ONION

Steps:
- Preheat oven to 375°F . Place veggies on a large baking sheet. Drizzle the top with olive oil and sprinkle with salt.
- Using your hands or a spoon, toss veggies in the olive oil and salt.
- Place in the oven and set timer for 10 minutes.
- After 10 minutes, remove the veggies from the oven and flip using a spatula. Bake for another 5-10 minutes. I like mine more crisp so I usually do 10 minutes.
- Remove from the oven and use as a side, grain bowl topper, or in a fajita.

- In 12-inch nonstick skillet, heat oil over medium-high heat.

- Place in serving dish; top with cheese.

- Heat oil over medium heat in a large skillet.
- Add broccoli and garlic and cook until crisp-tender (5 - 8 minutes).

- In a large saucepan, bring 6 cups water to a boil. Add broccoli; cook, uncovered, 3 minutes. Drain and immediately place broccoli in ice water. This is quick and very addictive. The original recipe came from a magazine, I 'm not sure which one. It's probably from bon appetit. I have so many from that magazine that I've saved. I have tweaked it a little to suit my way of doing things.

- Preheat oven to 450. Toss broccoli with all the other ingredients. Transfer to a rimmed baking sheet. Spread them out in a single layer. Sprinkle with salt and pepper.
- Roast 15 minutes. Toss them and turn them over and roast another 8 to 10 minutes until broccoli is browned nicely. Serve immediately. Yum!

- Cut off broccoli florets; cut large florets in half lengthwise.
- Peel stems and slice 1/4-inch thick.
- Steam broccoli until just crisp-tender, about 4 minutes for florets and 7 minutes for stems.

- 1. Wash broccoli in a colander & cut larger pieces into smaller pieces, rinse under cold running water.
- 2. Cut the onions in half and then slice into medium slices, and separate into rings, then add to broccoli.
- 3. Drain the roasted red peppers, then using a cutting board cut into medium size strips.
- 4. In a large skillet, Heat the oil over medium high heat, & then add in the broccoli and onion mixture, sauté about 4-5 minutes.
- 5. Add the roasted sweet pepper strip, and steak seasoning, then stir till mixed together and heated through, until veggies are al dente, or as desired, an additional 4-5 minutes or so, or as desired.
- 6. Serve while still hot, can add shaved Parmesan Cheese over the top while veggies are still hot, if desired or serve as is. Excellent side dish.
