1/4 cup Dijon mustard
4 teaspoons honey
1 teaspoon apple cider or 1 teaspoon white-wine vinegar
1/4 teaspoon black pepper
20 ounces bone-in loin pork chops, 4 each about 1 inch thick

Steps:

  • Whisk together marinade ingredients in small bowl or cup: mustard, honey, vinegar, and pepper.
  • Transfer marinade to large zip lock plastic bag and add pork. Squeeze out air and seal bag. Coat pork completely with marinade by turning bag several times.
  • Chill pork in marinade 4 hours or overnight, turning bag occasionally.
  • Preheat broiler. Spray broiler rack with nonstick spray.
  • Remove chops from bag and discard marinade. Place chops on broiler rack and broil 5 inches from heat until browned and cooked through, about 6 minutes per side.

4 ounces whole wheat linguine (1/4 of a 1 pound package)
1/2 cup low sodium vegetable broth
8 ounces mushrooms, roughly chopped
2 garlic cloves, finely minced
3/4-1 lb raw shrimp, peeled and deveined (if using pre-cooked shrimp use 8-10 ounces)
1 tablespoon unsalted butter
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup fresh chives, chopped

Steps:

  • Boil pasta according to package directions. Set aside.
  • Heat a large skillet over medium-high heat. Add vegetable stock, mushrooms, and garlic; cook for 2-4 minutes, stirring occasionally. Add shrimp, salt, and pepper; cook about 1-2 minutes on each side or until shrimp is pink on the outside. If using pre-cooked shrimp, cook until heated through. Stir in butter and fresh chives and add cooked pasta. Toss to coat.

1 small zucchini, cubed
1 firm tomatoes, peeled and diced
1 teaspoon italian seasoning

1 tablespoon grated parmesan cheese

Steps:

  • Melt butter in non-stick skillet on med-hi heat.
