BRAISED WURST SAUSAGES WITH CABBAGE, RED ONION, & APPLE SLAW



Braised Wurst Sausages with Cabbage, Red Onion, & Apple Slaw image

Number Of Ingredients 19

8 links good-quality bratwurst, bockwurst, weisswurst, or knackwurst sausages
A drizzle plus 1/4 cup olive or vegetable oil
1 cup white wine vinegar or cider vinegar
1/4 to 1/3 cup sugar (eyeball it)
8 peppercorns
2 to 3 whole cloves
2 fresh bay leaves
1 teaspoon sea salt or kosher salt
1 small head of red cabbage or 1/2 medium head, cored and thinly shredded, 1 pound
1 medium red onion, peeled, halved, and thinly sliced
1 green apple, quartered, cored, and thinly sliced
1 teaspoon caraway seed or cumin seed (optional)
Salt and pepper
4 slices pumpernickel bread
8 tablespoons (1 stick) butter, softened
1/4 cup finely chopped fresh herbs such as chives, dill, or flat-leaf parsley
1 cup good-quality spicy mustard
Fresh radishes, trimmed and lightly salted
Cornichons or baby gherkin pickles

Steps:

  • Place the sausages in a skillet and add 1/2 inch of water and a drizzle of oil. Bring to a boil, then reduce the heat to medium and allow the liquid to evaporate, cooking the sausages through. Once the liquid evaporates, the oil will help brown and crisp up the casings.
  • Meanwhile, combine the vinegar, sugar, peppercorns, cloves, bay leaves, and sea salt in a small pot. Bring to a boil, stir, then reduce for 5 to 6 minutes over medium-low heat.
  • While the brine reduces, combine the cabbage, red onions, and apples in a bowl. Sprinkle with caraway or cumin seed if you like the flavor.
  • Pour the hot reduced brine through a strainer over the cabbage mix in a slow stream. Evenly distribute it, then pour about 1/4 cup of oil over the salad. Season with salt and pepper, toss to combine, and adjust the seasoning.
  • Toast the bread. In a small bowl, combine the softened butter with the herbs. Spread the mixture on the warm toast.
  • Serve the sausages with the toast, slaw salad, mustard, radishes, and pickles.

A sweet & sour version of coleslaw that has been a big hit with my family & friends. I found this recipe in my local newspaper and adjusted it a bit to meet our needs. Prepared recipe makes about 12 servings. **Update 2/10** Once I read the review I realized I should have stated that due to the fruits within this coleslaw - it truly does not store well after 2 days. Adjust servings as needed to meet your needs.

1 (16 ounce) bag of shredded coleslaw mix (with red cabbage & carrots, not just plain cabbage)
1 (8 ounce) can pineapple chunks in juice, not syrup (reserve the juice)
1 large granny smith apple (or other tart apple)
1 cup chopped celery
3/4 cup dried cranberries
1 cup light mayonnaise
2 tablespoons cider vinegar
3 tablespoons reserved pineapple juice

Steps:

  • Drain pineapple, reserving the juice in a bowl.
  • Cut the apple into small cubes.
  • Combine the coleslaw mix, pineapple tidbits, cubed apple, chopped celery and dried cranberries in a large bowl - mixing well.
  • In a small bowl or 2 cup measure, blend together the mayonnaise, vinegar and the 3 tablespoons of reserved pineapple juice.
  • Pour mayonnaise mixture over the coleslaw mixture and toss gently to mix it well.
  • Cover and chill for 2-4 hours.
  • Before serving, toss the coleslaw gently.

1 package (16.9 ounces) frozen potato and onion pierogi
1 package (14 ounces) smoked turkey sausage, cut in half lengthwise and sliced into 1/2-inch pieces
2 tablespoons butter, divided
2 tablespoons canola oil, divided
1 medium onion, sliced
1 package (14 ounces) coleslaw mix
1/2 teaspoon garlic powder
1/4 teaspoon celery salt
1/4 teaspoon pepper
1 bay leaf

Steps:

  • Cook pierogi according to package directions. Meanwhile, in a large skillet over medium heat,cook sausage in 1 tablespoon butter and 1 tablespoon oil; cook and stir for 2 minutes. Add the remaining ingredients; cook and stir for 1-2 minutes longer or until coleslaw is wilted. Remove from the heat; keep warm., In another large skillet, heat remaining butter and oil. Drain pierogi; add to skillet. Cook and stir until browned; add the sausage mixture and toss to coat. Discard bay leaf.
