Corn gives this dish a mildly sweet flavor that folks find appealing. When cooking for two, I divide the ingredients into smaller dishes for fast meals in the future.

1-1/2 pounds bulk pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
4 tablespoons butter, divided
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon white pepper
1-1/2 cups milk
1 can (14-3/4 ounces) cream-style corn
3-1/2 cups (10 ounces) egg noodles, cooked and drained
1/4 cup shredded cheddar cheese
1/2 cup dry bread crumbs

Steps:

  • Preheat oven to 325°. In a large skillet, cook the sausage, green pepper and onion over medium heat until sausage is no longer pink; drain and set aside. , In a large saucepan, melt 3 tablespoons butter over medium heat. Stir in the flour, salt and pepper. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in corn. Add noodles and corn mixture to the sausage mixture. Fold in cheese. , Transfer to a greased 13x9-in. baking dish. Melt remaining butter; stir in bread crumbs. Sprinkle over casserole. Bake, uncovered, 30-40 minutes or until heated through.

I made this up one day and it's the easiest thing to make, but everyone seems to really like it. I used Emeril's Chicken and Apple Sausage but you can really use whatever kind you want.

3 large sweet potatoes
2 lbs sausage (any is fine but Emeril's Chicken and apple is what I use)
1 onion
1 apple
1/4 cup olive oil
1 tablespoon sugar
1 teaspoon cinnamon
1 teaspoon garlic powder
1/2 teaspoon chili powder
salt and pepper

Steps:

  • Preheat oven to 375.
  • Leave peels on sweet potatoes and chop them and apple, onion and sausage into bite sized chunks.
  • Place potatoes, onions and apples into ziploc bag.
  • Pour in olive oil and all seasoning (more or less of these taste.).
  • Shake bag until everything is coated well.
  • Pour into 13x9 in pan and toss with sausage.
  • Bake uncovered in 375 degree oven for 1-1 1/2 hours until sausage is browned and potatoes are tender.

1 lb bulk sausage
2 medium sweet potatoes, peeled and sliced
3 apples, peeled and sliced
2 tablespoons sugar
1 tablespoon flour
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup water

Steps:

  • Preheat oven to 375 degrees F.
  • Brown sausage in skillet. Drain off fat.
  • Arrange potatoes, apples and sausage in 2 qt casserole.
  • Combine remaining ingredients and pour over casserole.
  • Cover and bake for 50-60 minutes or until potatoes and apples are tender. You can alternately use cooked or canned sweet potatoes.
