homemade marinara sauce
STUFFING
16 oz sweet italian sausage
16 oz ricotta cheese, part-skim
8 oz provolone cheese
6 oz parmesan cheese
1 egg
1 tsp each black pepper, mrs. dash tomato & basil
8 oz mozzrella cheese

Steps:

  • 1. Ground up Italian sausage and cook till done, cool. In a large bowl mix together Ricotta, Parm, Provolone, egg & Mrs. Dash tomato & basil & pepper & Italian Sausage.
  • 2. Place a generous amount of Mararina sauce in bottom of baking dish 13x9 baking dish. Place stuffing on pasta, roll up, nestle seam side down in sauce.
  • 3. Pour enough Mararina sauce on top of manicotti to cover, sprinkle liberally with Mozzrella.
  • 4. Bake 375 for 30-45 min. till bubbly & cheese is melted.

This is one of my bf favorite dishes with a healthy twist. We did the math and this ends up about 380 per serving (2 stuffed noodles). Enjoy sans guilt!

1/2 cup onion (chopped)
1/2 cup green pepper (chopped)
2 garlic cloves (minced)
1 (15 ounce) can tomato sauce
2 (15 ounce) cans chopped tomatoes (drained)
1 teaspoon thyme
1 tablespoon basil
1 tablespoon oregano
1 teaspoon crushed red pepper flakes (optional)
3 hot Italian turkey sausage (removed from casing and crumbled)
2 cups fresh spinach (packed)
1 teaspoon olive oil
1/2 cup part-skim ricotta cheese
1 cup fat-free cottage cheese
1 cup mozzarella cheese
1 (8 ounce) package manicotti (cooked)

Steps:

  • Combine onion, green pepper, garlic, tomato sauce, diced tomatoes, thyme, basil, oregano, red pepper in a medium sauce pan over medium high heat. When heated through reduce heat to low and cover. (simmer about 1 hour).
  • Preheat oven to 350.
  • Heat teaspoons of olive oil in a skillet and saute spinach until wilted. Set aside to cool. When cool chop the spinach.
  • Add sausage to skillet spinach was in and cook until browned. Drain.
  • In a bowl, combine spinach, cheeses, sausage.
  • Place a layer of sauce in the bottom of a 13 by 9 pan.
  • Stuff noodles with cheese, spinach, and sausage and place in pan.
  • Top with the rest of the sauce.
  • Bake 350 for 30 to 45 minutes.

This is a family favorite. The trickiest part is stuffing the manicotti. It helps if you use a large Ziploc bag with a corner cut out.

8 ounces manicotti
1 lb hot Italian sausage
1 1/2 cups mozzarella cheese, shredded
1 1/2 cups provolone cheese, shredded
1/3 cup Italian seasoned breadcrumbs
2 whole eggs, slightly beaten
2 cups spaghetti sauce (your favorite or homemade)
1/4 cup fresh parmesan cheese, grated

Steps:

  • Boil manicotti noodles 8 minutes and drain; set aside.
  • Meanwhile make the filling by combining sausage, 1 cup mozzarella, 1 cup provolone, breadcrumbs and eggs.
  • Pour 3/4 cup sauce into a greased 9x13 baking dish and spread so it covers the whole bottom of the dish.
  • Stuff manicotti with the filling.
  • Arrange the filled manicotti in the baking dish in a single layer (you may need an additional 8 inch square baking dish for all of the manicotti or use a large lasagna baking dish, if you prefer. Sometimes I freeze the remaining stuffed manicotti shells to use for another meal or snack).
  • Top the manicotti with the remaining spaghetti sauce.
  • Cover with foil and bake at 375 degrees for about 25 minutes.
  • Uncover and sprinkle with remaining mozzarella, provolone and parmesan cheese.
  • Bake for another 5-10 minutes until cheese is melted and bubbly.
  • Enjoy.

No pre-cooking is needed for the noodles and sausage, so this Italian entrée can be ready for the oven in 20 minutes.

1/2 cup water
1 1/2 lb uncooked Italian sausage links (7 links)
14 uncooked manicotti pasta shells (8 oz)
2 cups shredded mozzarella cheese (8 oz)
1/4 cup shredded Parmesan cheese (1 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread 1 cup of the pasta sauce in dish. To remaining sauce in jar, add water and mix well.
  • Cut sausage links in half lengthwise; remove casings. Shape each piece of sausage into roll; stuff into uncooked pasta shell. Place stuffed shells on sauce in dish. Pour remaining pasta sauce mixture over shells.
  • Cover tightly with foil; bake 1 hour 20 minutes. Sprinkle with mozzarella and Parmesan cheeses; bake uncovered 10 minutes longer or until cheeses are melted and pasta is tender. Let stand 10 minutes before serving.

Cooking spray
1 poung sweet turkey Italian sausage
1 1/2 cups chopped onion
1 cup chopped green bell pepper
2 tbsp. butter
2 tbsp. all-purpose flour
2 cups fat-free milk
1/8 tsp. black pepper
1 1/2 cups (6ounces) shredded paart-skim mozzarella cheese
2 cups tomato-basil pasta sauce
1/4 cup (1ounce) grated fresh Parmesan cheese

Steps:

  • Cook pasta according to package directions, omitting salt and fat. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Remove casings from sausage. Add sausage to pan;cook 5 minutes or until browned, stirring to crumble. Add onion and bell pepper to pan; saute 5 minutes or until tender. Melt butter in a menium saucepan over medium heat. Stir in flour; cook 2 minutes, stirring constantly with a whisk. Remove from heat; grafually add milk stirring with a whisk. Return pan to heat; bring to a boil. Cook 6 minutes or until thickened, stirring constantly with a whisk. Remove from heat; stir in black pepper.Add1/2 cup milk mixture to sausage mixture; stir well. Preheat oven to 350. Spoon about 1/3 cup sausage mixture into each manicotti; arrange manicoggi in a single layer in a 13x9" baking disg coated with cooking spray. 3/4 lb. Italian sausage
1 tub (8 oz.) PHILADELPHIA Chive & Onion 1/3 Less Fat than Cream Cheese
1 cup POLLY-O Natural Part Skim Ricotta Cheese
1/4 cup milk
1/4 tsp. dried Italian seasoning
1/2 cup chopped fresh parsley
1/4 cup KRAFT Grated Parmesan Cheese, divided
2 cups CLASSICO Tomato and Basil Pasta Sauce, divided
1 cup KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat oven to 350ºF.
  • Cook manicotti as directed on package, omitting salt. Meanwhile, brown crumbled sausage in large skillet; drain. Remove from heat. Stir in reduced-fat cream cheese, ricotta, milk, Italian seasoning, parsley and 2 Tbsp. Parmesan.
  • Drain manicotti; stuff with sausage mixture. Spread 1 cup pasta sauce onto bottom of 13x9-inch baking dish; top with manicotti and remaining sauce.
  • Bake 30 min. or until heated through, topping with mozzarella and remaining Parmesan for the last 5 min.

6 cups all purpose flour
4 cups milk or more
12 eggs
2 teaspoons salt
olive oil sprayer
FILLING
4 pounds hot Italian sausage
8 eggs
8 cups mozzarella cheese grated
2 cups fresh Parmesan cheese grated
4 cups cottage cheese
1 cup dried bread crumb
40 ounces frozen leaf spinach chopped, thawed, and squished (4 packages)
salt and pepper
1/2 teaspoon nutmeg
1 teaspoon garlic powder
TOMATO SAUCE
8 cups mushrooms sliced
4 green peppers chopped
4 onions chopped
24 cloves garlic chopped (2 heads)
4 (26-ounce) jars marinara sauce or tomato basil spaghetti sauce
4 (14 1/2-ounce) cans diced tomatoes with basil, garlic, and oregano
1/4 teaspoon hot pepper flakes
TOPPING
2 cups mozzarella cheese grated
1 cup fresh Parmesan cheese grated
4 small cans sliced olives

Steps:

  • Instructions: CREPES: Coals: 6 to 8 coals 1. Place flour in bowl; whisk in milk, eggs and salt until smooth. Need a real thin batter, may need to add more milk. 2. Put DO lid upside down on lid stand with coals under to make a medium heat. 3. Spray lightly with olive oil. 4. Pour about 2 tablespoons on a hot Dutch oven lid. Spread into a 5-inch circle. Cook until set. Do not brown. 5. Repeat with remaining batter making 72 to 80 crepes. 6. Stack crepes between waxed paper. Set them aside. Instructions: FILLING: Coals: 40-50 coals 7. In a 20" Dutch oven, saute the sausage. 8. Remove sausage from pan and set aside. 9. In a large bowl, beat the eggs lightly, add the remaining filling ingredients and then the sausage; mix well and set aside. Instructions: SAUCE: Coals: 40-50 coals bottom to fry, then 20 to 25 coals, bottom; 30 to 40 coals top. 10. Mince green pepper, onions & garlic 11. In the same pot that you used for sausage, saute onion mixture and the mushrooms. 12. Add the rest of the sauce ingredients. Simmer covered for 25 minutes until thick. (Watch as you may need to add a bit of wine, beer or water). Instructions: BUILDING THE MANICOTTI Coals: 20 coals under, ring of 30 coals on lid 13. Pour half the sauce into a 20-inch shallow DO. 14. Take a crepe in your hand and place 3-4 Tbsp filling on crepe. Roll up. Place seam side down on filling. Repeat 15. Pour remaining sauce over manicotti. 16. Bake about 40 minutes at 350° oven. 17. Sprinkle with remaining mozzarella, Parmesan cheese and olives; and bake another 8-10 minutes until bubbly and heated through.
