3 tablespoons vegetable oil
1 bag (24 ounces) frozen diced potatoes with onions and peppers
1/2 teaspoon dried oregano or basil leaves
1/2 teaspoon pepper
2 cups broccoli flowerets
1 ring (about 3/4 pound) bologna or smoked sausage
3 slices process American cheese, cut diagonally in half

Steps:

  • Heat oil in 10-inch skillet over medium-high heat. Add potatoes, oregano and pepper. Cover and cook 8 to 10 minutes, stirring occasionally, until potatoes are light brown.
  • Stir in broccoli; add bologna. Cover and cook about 15 minutes or until bologna is hot. Top with cheese. Cover and heat until cheese is melted.

SKILLET PENNE AND SAUSAGE SUPPER

Try this recipe if you're looking for something quick and easy with great flavor. The pasta cooks right in the skillet so there's no need for extra pots. Don't make this without the sun-dried tomatoes because it will not have as much flavor. My husband recently told me that this is his favorite of the pasta dishes I cook. Recipe is from America's Test Kitchen.

1 tablespoon olive oil
1 onion, minced
salt
1 lb sweet Italian turkey sausage or 1 lb hot Italian turkey sausage, casings removed
3 garlic cloves, minced
1/2 cup sun-dried tomato packed in oil, rinsed and chopped fine
8 ounces penne (about 2 1/2 cups, can also use ziti)
2 cups low sodium chicken broth
1 cup milk
1 (5 ounce) bag Baby Spinach
1 ounce parmesan cheese, grated or 1/2 cup parmesan cheese
pepper, to taste

Steps:

  • Heat olive oil in a 12-inch nonstick skillet over medium heat until shimmering. (Be sure to use at least a 12-inch size skillet to hold all ingredients.) Add the onion and 1/2 teaspoon salt and cook until softened, about 5 minutes.
  • Stir in the sausage and cook, breaking it up with a wooden spoon, until no longer pink, about 4 minutes.
  • Stir in the garlic and cook until fragrant, about 15 seconds. Sprinkle the sun-dried tomatoes and penne evenly over the sausage. Pour the broth and milk over the pasta. Cover and bring to a simmer. Reduce heat to medium-low and continue to simmer, stirring occasionally, until the pasta is tender, about 10 minutes.
  • Stir in the spinach a handful at a time and cook until wilted, about 2 minutes. (It may seem like a lot of spinach, but it will wilt considerably.) Stir in the Parmesan and season with salt and pepper to taste.
  • Note: You can use Italian pork sausage, but you may have to spoon some of the fat off before adding the pasta.

Of course you can use turkey or chicken sausage and it doesn't change the flavor. If I don't have any left-over chicken then I buy a roasted one from the store.

1 (16 ounce) package Cajun-style sausage, sliced
1 medium sweet onion, chopped
1 red bell pepper, chopped
1 tablespoon olive oil
2 garlic cloves, minced
1 (14 ounce) can low sodium chicken broth
2 cups cooked chicken breasts, shredded
1 cup long-grain rice, uncooked
1 1/2 teaspoons cajun seasoning
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1/3 cup fresh parsley, chopped

Steps:

  • Heat the olive oil to medium heat in a large skillet and saute the sausage, onion and peppers for about 10 minutes or until the vegetables are tender.
  • Add the garlic and cook, stirring constantly, for 30 seconds.
  • Add the chicken broth and bring to a boil.
  • Stir in the rice and Cajun seasoning.
  • Reduce heat to low, cover, and cook, stirring occasionally, for 25 minutes.
  • Stir in tomatoes and cooked shredded chicken; cook, uncovered, 10 minutes, stirring occasionally.
  • Remove from heat and stir in parsley.

1 pkg 16-oz. pkg. cajun sausage, sliced (or your choice of sausage)
1 medium onion, chopped
1 medium green bell pepper, chopped
1 Tbsp vegetable oil
2 garlic cloves, minced
1 can(s) 14-oz can low-sodium chicken broth
2 c shredded cooked chicken
1 c uncooked long-grain rice
1 1/2 tsp cajun seasoning
2 can(s) 10-oz cans diced tomatoes and green chiles, undrained (rotel - mild or spicy, your choice)
1/3 c chopped fresh parsley

Steps:

  • 1. Saute sausage, onion, and pepper in hot oil in a large nonstick skillet over medium heat 10 minutes or until vegetables are tender. Add garlic and cook, stirring constantly, 30 seconds.
  • 2. Add broth and chicken; bring to a boil. Stir in rice and cajun seasoning; reduce heat to low, cover and cook stirring occasionally, 25 minutes. Stir in tomatoes and green chiles; cook uncovered 10 minutes, stirring occasionally. Remove from heat and stir in parsley.

3/4 cup uncooked instant rice

1 can (4 ounces) mushroom stems and pieces, drained
1 cup shredded Swiss cheese

8 ounces low-fat kielbasa (sliced into coins)
1 tablespoon extra virgin olive oil
2 medium onions
2 medium zucchini
1 large red bell pepper
4 ounces green chilies (diced)
2 garlic cloves
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon salt
2 cups cooked brown rice
1 (15 ounce) can pinto beans
1/2 cup water
hot sauce

Steps:

  • Cook kielbasa in a large nonstick skillet over high heat, turning from time to time, until lightly browned, about 2 minutes. Transfer to a plate.
  • Add oil to the pan. Add onions, zucchini, bell pepper, chillies, garlic, cumin, oregano and salt; cook, stirring, until the onions are tender, 4 to 5 minutes. hot sauce, to taste

Steps:

  • 1. Cook sausage in a large skillet over high heat, turning occasionally, until lightly browned, about 2 minutes. Transfer to a plate. 2. Add oil to the skillet. Add onions, zucchini, bell pepper, jalapenos, garlic, cumin, oregano and salt; cook, stirring until onions are tneder, about 4-5 minutes. 1 lb ground sausage
1/2 medium yellow onion
16 oz pakage cubed frozen potatoes
1/2 lb bacon, cut into bite-sized pieces
1 tsp salt
1/2 tsp pepper
6 large eggs
1 c Mexican blend shredded cheese

Steps:

  • 1. In a nonstick or cast iron skillet, brown up bacon pieces. Drain, but reserve 3 Tablespoons of bacon drippings. Set aside.
  • 2. To bacon drippings, add the whole bag of broken up bag of frozen potatoes and chopped onion. Stir until potatoes are browned and onion is translucent. Set aside.
  • 3. In a separate skillet, brown sausage. Add sausage to potato-onion mixture. Add bacon. Stir until combined.
  • 4. Evenly spread out mixture in skillet. Make 6 wells in potato mixture. Break 1 egg in each well. Cover and cook on low until eggs are set, about 8 min.
  • 5. Uncover and sprinkle evenly with cheese and bacon. Cover again until cheese is melted.

I originally found this recipe over 20 years ago, in the first "Brand Name" cookbook that I ever saw. Our family has enjoyed this recipe many times over the years. It is quick and easy, and when my children were young it was one of their favorites. Yo can substitute some other flavor of cream soup.

2 tablespoons butter
1/2 cup finely-chopped onion
1/2 cup chopped green pepper
1 package frozen sausage meat, thawed
3/4 teaspoon salt
1/4 teaspoon ground oregano
pinch garlic powder
1 3/4 cups water
1 can beef broth
1 3/4 cup elbow macaroni
3 tablespoons flour
2 cups milk
1/3 cup grated Canadian Parmesan cheese
2 tablespoon chopped parsley

Steps:

  • Melt butter in a large frypan. Sauté onion and green pepper 5 minutes. Add meat to pan and continue cooking until meat is lightly browned. Blend in salt, oregano and garlic powder. Stir in water and beef broth. Add macaroni. Bring to a boil. Reduce heat; cover and simmer 15 to 20 minutes or until macaroni is tender. Blend in flour. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture just comes to a boil and thickens. Stir in cheese and parsley. Makes 6 servings.
