PIZZA RUSTICA (A SICILIAN SAUSAGE AND PROSCIUTTO PIE)

Pizza Rustica (A Sicilian Sausage and Prosciutto Pie) image

My grandma Puglia would make this as an appetizer for Easter and Christmas. It can be a meal in itself with a tossed green salad. Enjoy!

Time 10h30m

Yield 16

Number Of Ingredients 11

2 pounds ricotta cheese
2 pounds bulk Italian sausage
5 large eggs, beaten
1 pound shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 tablespoon finely chopped parsley
¼ pound prosciutto, chopped
freshly cracked black pepper to taste
2 pounds prepared pizza dough
1 egg
2 tablespoons water

Steps:

  • Place a piece of cheesecloth into a strainer, and place the ricotta cheese into the cheesecloth. Set a bowl underneath the strainer to catch drips, and refrigerate 8 hours, or overnight, to allow moisture to drip from ricotta.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place sausage into a large skillet over medium heat, and cook and stir until browned and crumbly, about 10 minutes. Drain excess grease, and allow sausage to cool.
  • Place the drained ricotta cheese into a large bowl, and stir in 5 beaten eggs and mozzarella cheese until well mixed. Mix in the cooked sausage, Parmesan cheese, parsley, prosciutto, and black pepper until thoroughly combined.
  • Divide the pizza dough into fourths, and roll out 2 of the pieces into 12-inch circles. Fit the circles into 2 10-inch pie plates, leaving 1 inch of dough hanging over the edge. Divide the filling between the 2 pies. Roll out 2 top crusts, place onto the pies, and fold the edges of the bottom crusts over the edges of the top crusts to seal. Crimp and flute the edges of the pie crusts.
  • Beat 1 egg with water in a small bowl, and brush the egg wash over the tops and edges of both pies. Cut several slits into the top crusts to vent steam.
  • Bake pies in the preheated oven for 15 minutes, then lower oven temperature to 325 degrees F (165 degrees C). Continue to bake until the crust is browned and the filling is hot, 45 to 50 more minutes. Serve at room temperature.

ANDOUILLE SAUSAGE PIZZA PIE WITH ONION CONFIT AND FONTINA CHEESE

Andouille Sausage Pizza Pie with Onion Confit and Fontina Cheese image

Provided by Food Network

Categories     main-dish

Time 3h15m

Yield 1 large pizza

Number Of Ingredients 20

2 yellow onions
1/4 cup extra-virgin olive oil
Pinch sugar
1/2 cup Champagne vinegar
1/2 tablespoon salt
2 tablespoons white wine
4 Roma tomatoes
2 teaspoons fresh thyme leaves
3 cloves garlic, sliced thin
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
Freshly ground black pepper
1 pound pizza dough
Cornmeal
1 -ounce Fontina cheese, grated
2 tablespoons prepared Onion Confit
1 link Louisiana-style andouille sausage, cut into 1/4-inch slices
6 to 8 slices Oven-Dried Tomatoes
1 -ounce mozzarella, grated
2 teaspoons freshly chopped parsley leaves

Steps:

  • Slice the onions in 1/4-inch thick. In a heavy bottom pot, slowly simmer the onions in the olive oil over medium-high heat for a few minutes until softening. Add all the remaining onion confit ingredients. Bring to steamy simmer. Reduce heat and cover with a parchment paper lid that has a 2-inch hole in the center to allow the steam to escape but protect it so that it can cook low and slow. Press the parchment paper down to touch and cover the onion mixture. Place the covered pan into a 250 degree F oven and bake for 2 to 3 hours or until the onions have softened and the liquids have reduced to a sticky gravy that clings to the onions.
  • Slice ends off the tomatoes. Cut the tomato through into 2 to 3 slices. In a mixing bowl mix the tomatoes, thyme, garlic, olive oil, salt and pepper. Gently toss to coat the tomatoes. Place on sheet pan and cook at 250 degrees F for 2 to 3 hours until the tomatoes are concentrated and dehydrated. (The onions and the tomatoes can cook in the oven at the same time.)
  • Raise the oven temperature to 450 degrees F.
  • Stretch or roll the dough to about 10 to 12 inches. Place a piece of dough on a pizza paddle or baking sheet that is sprinkled with cornmeal. Oil the edges of the dough and top it with Fontina, 1/2 of the onion confit, the sausage slices, tomatoes and top with mozzarella. Bake until golden brown. Top with parsley and serve hot.

ITALIAN SAUSAGE PIZZA POT PIE

Italian Sausage Pizza Pot Pie image

This was an orphaned recipe. It sounded so good I had to try it and I found it was very good.

Provided by Caroline ShupertRecipes

Categories     Pizza

Time 50m

Number Of Ingredients 13

2 lb italian sausage, sweet
2 lb italian sausage, hot
2-3 clove garlic, minced, to your taste
4 1/2 c tomato sauce, spicy
2 c ricotta cheese
1/2 c parmesan, freshly grated
2 1/2 Tbsp oregano, dried
2 eggs
pinch pepper
4 c mozzarella cheese, shredded
1/2 c black or green olives, optional
1 can(s) refrigerated pizza dough
3/4 c parsley, chopped

Steps:

  • 1. Preheat oven to 350 degrees. In a heavy skillet saute sausages and minced garlic until brown; drain well and transfer to a bowl. Stir spicy tomato sauce into the sausages and reserve. Mix ricotta, parmesan, 1/2 cup of parsley, 2 tablespoons of oregano, 1 egg, and freshly ground black pepper to taste.
  • 2. In a rectangular ovenproof dish, about 9 by 13 inches, spread half of the sausage mixture; dot this with half of the ricotta mixture and sprinkle 2 cups of the mozzarella evenly over the entire surface. Add olives if using. Sprinkle with 1/2 of the remaining parsley and half of the remaining oregano; repeat.
  • 3. Roll out three-quarters of the dough to a thickness of about 1/3 inch, being certain the dough is about 1 inch larger than the pan all the way around; transfer dough to top of pizza and tuck in excess all around. Cut slits or designs in dough to allow steam to escape. Beat remaining egg with 1 tablespoon water and brush some of it on top of crust. Bake for 35 to 45 minutes, or until the top is golden brown and the edges are bubbling. Let pizza stand for 30 minutes before cutting.
  • 4. Roll out remaining dough and use it to form bread sticks if you like. Brush with butter and sprinkle with garlic salt. Bake for 12-15 minutes dring last part of pizza baking time. Baking time will depend on how thick you make the bread sticks so check as they bake.

EASY SAUSAGE PIZZA POT PIE

Easy Sausage Pizza Pot Pie image

This fun new spin on pizza will please the whole family!

Provided by @MakeItYours

Number Of Ingredients 10

1 small onion, diced
1 lb. ground Italian sausage (I use turkey sausage)
6 oz. bag fresh baby spinach
14 oz. can fire-roasted diced tomatoes with garlic, drained
8 oz. fresh mozzarella cheese, diced into ½" cubes
1 egg
¼ c. milk
½ c. biscuit baking mix (I used gluten-free mix)
¼ tsp. Italian seasoning
1 tbsp. grated parmesan cheese

Steps:

  • Preheat oven to 400 degrees F. Spray a 9-inch deep dish or 12" shallow pie pan with cooking spray and set aside.
  • Spray a 12" skillet with cooking spray, and heat over medium-high heat. Add onion and sausage, and saute, crumbling meat as it cooks, until sausage is mostly cooked through.
  • Reduce heat to medium. Stir in half of the spinach, and cook until wilted. Stir in remaining spinach and drained tomatoes. Gently stir and cook until spinach is all wilted.
  • Drain sausage and spinach mixture well, and then pour into pie pain. Spread cubed mozzarella over the top, and gently press cheese into the meat.
  • Stir together egg, milk, biscuit mix, and Italian seasoning. Spread dough over the top of the sausage and cheese. (Note: This dough is a good amount for a 9" dish but doesn't completely cover the 12" dish as shown here. You can double the egg, milk, and biscuit mix if you are using a large pan and would like more coverage.)
  • Sprinkle parmesan over the top, and bake in preheated oven for 25 minutes or until top is brown and cheese is melted. Allow to stand for about 5 minutes before serving.
