You'll need a large, heavy-duty roasting pan (or a couple of smaller ones) and a very hot oven for this delicious dish. The long oven time makes everything beautifully caramelized and the chicken fork tender.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.
- When sausages are cool enough to handle, cut them into serving pieces, about 2-inch slices. Transfer back to pan along with any accumulated juices from the cutting board.
- Cut two slashes down to the bone on the skin side of each chicken thigh.
- Depending on the size of the peppers, halve or quarter them and place in a large mixing bowl. Add the sliced red and yellow onions and potato chunks. Add chicken thighs and sausage pieces with pan juices.
- Season with kosher salt, black pepper, and Italian herbs. Drizzle with a tablespoon of olive oil.
- Mix with your hands until all ingredients are coated in oil, 3 or 4 minutes. Transfer to large, heavy-duty roasting pan. Evenly space the chicken thighs skin side up. Position potatoes near the top.
- Place in preheated oven until chicken is cooked through and everything is caramelized, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Sprinkle with chopped fresh Italian parsley, if desired.

- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, 12 to 15 minutes. Drain and set aside.
- Heat oil in a large skillet over medium heat. Crumble sausage into skillet and cook, stirring frequently, until browned and no longer pink, about 7 minutes. Remove sausage with slotted spoon and drain on paper towels.
- Pour off all but 1 tablespoon oil from the skillet. Heat oil over medium heat and add bell peppers, onion and garlic and cook until softened, about 7 minutes.
- Add to the skillet the potatoes, sausage, salsa and cumin. Stir and cook about 5 minutes to heat through and blend flavors. Season with salt and pepper.

- 1. Prepare vegetables. Arrange sausage links in a large shallow casserole dish. Arrange vegetables around sausage.
- 2. Sprinkle with salt, pepper and garlic. Drizzle with oil. Add water to casserole dish.
- 3. Seal with tin foil and bake for 1 hour at 350-degrees. Remove foil and bake an addtional 20 or so until sausage and potatoes are browned.

- Preheat oven to 350.
- Heat a large pot of water to boiling, add sausage, (poke a few holes in them to let the fat out) cover and turn the heat off. Let poach for 20 minutes; drain and refrigerate untill cool. (I usually do this while making dinner the night before). Slice the sausages into 1/4 to 1/2 inch coins.
- In a large casserole dish, layer half the potatoes, half the onion, half the peppers and half the sausage. Salt and pepper if desired.
- Repeat layers.
- Sprinkle cheese on top, cover with foil and bake at 350 for 1 1/2 hours or untill potatoes are cooked through. Remove foil for last 15 minutes of cooking.

- Heat the oil in a large heavy skillet.
- Crumble in the sausage and cook, stirring and breaking up the meat, until it loses its pink color.
- Drain all but 1 tablespoon of fat off.
- Add onions and bell peppers, season with salt and saute.

- Add the oregano, crushed red pepper and tomatoes.

- Repeat layers ending with potatoes and seasonings.
- Pour in the half-and-half and cover the casserole with aluminum foil.
- Bake for 45 minutes.
- Uncover the casserole and push the potatoes down to submerge them.
- Sprinkle with the remaining 1/4 cup cheese and bake for another 40 minutes or so.
- The top of the casserole will be a rich brown, and the dish will be very juicy.
- Let rest for at least 20 minutes before serving.

- 1. Heat the oven to 400 degrees. (this can be done on a grill as well, med-high grill). Place the sausages and the potatoes in a large pan or roaster, and transfer to the oven or grill. (put cover over if grilling) (I add the sausages whole, but can cut in half or in chunks) I add a little oil in the pot for the oven baked. You don't need but a couple tablespoons. Use large roasting pan. Larger than a 9x13. I buy those foil throw away pans.
- 2. Roast or grill them , turning the food several times for 30 minutes or until they have begun to brown.
- 3. Add the peppers, onions, mushrooms and herbs to the pan. Add a little more vegetable oil, a couple of Tablespoons. Roast or grill 45 to 60 minutes more. Check and turn occasionally until potatoes are brown and tender. Check that the potatoes are done. Ovens vary so it can take longer for some. I put a Tablespoon of mustard on my plate to dip the sausage in. I salt and pepper it also. Enjoy with your favorite condiment. Enjoy! Great company dish :)

- Add oil and sausages to a large heavy skillet.
- Fry over medium heat until sausages are cooked through and well browned, remove with a slotted spoon.
- Increase heat to high, add potatoes and fry, turning often, until crispy and tender.

- For the mustard vinaigrette: Add the vinegar, honey, mustard, hot sauce, garlic and lemon juice to a medium mixing bowl. Whisk constantly while slowly adding the vegetable oil. Whisk until fully combined. Taste the vinaigrette and season with salt and black pepper.
- For the sausage and peppers: Bring a medium pot of lightly salted water to a boil. Add the potatoes and sweet potatoes and boil until they are almost cooked, but still raw in the center, about 5 minutes. Drain and cool them completely until ready to grill.
- Preheat a char-grill to medium-high heat
- Combine the potatoes, sausages, oil, grill seasoning and bell peppers in a large bowl. Toss carefully until well coated. Grill the sausages, peppers and potatoes until char marks have formed and everything is completely heated through, about 6 minutes.
- Remove and arrange on a platter. Drizzle with some of the mustard vinaigrette. Serve extra vinaigrette on the side.

- Set a 10-inch cast-iron skillet over medium-high heat. After it gets good and hot, add the olive oil, then the sausages. Brown all over-about 2 minutes per side-then remove to a waiting plate. We're not trying to cook them through, just sear 'em!

- 1. Scrub and dry potatoes, but do not peel. Slice them lengthwise into sticks & wedges, about 1/2 inch wide.
- 2. In large skillet, heat the oil over medium high heat. Scatter the garlic and red pepper flakes into the oil. Stir for 1 minute or until garlic is lightly colored.
