My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
¼ cup white wine

Steps:

  • Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
  • Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
  • Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

2 teaspoons olive oil
2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges
2 large red bell peppers, seeded and cut into wedges
3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
  • Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
  • Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
  • Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

1/4 cup extra-virgin olive oil
1 pound sweet Italian turkey sausage
2 red bell peppers, sliced
2 yellow onions, sliced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/2 cup chopped fresh basil leaves
4 garlic cloves, chopped
2 tablespoons tomato paste
1 cup Marsala wine
1 (15-ounce) can diced tomatoes
1/4 teaspoon red pepper flakes, optional
4 to 6 fresh Italian sandwich rolls, optional

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
  • Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
  • Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
  • Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
  • Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.

1 1/2 pounds mild or hot sausages links
5 medium red bell peppers, cut into thin strips
2 large red onions, thinly sliced into rings
1 tablespoon tomato paste
3 cloves garlic, minced
1/2 cup chicken stock
Kosher salt and freshly ground black pepper
6 hoagie rolls, split lengthwise three-quarters of the way through and toasted

Steps:

  • In a large saute pan, heat 2 tablespoons of the olive oil over medium-high heat. Add the sausage to the skillet and brown on all sides, 10 to 12 minutes. Transfer the sausage to a plate.
  • Add the bell peppers, onions and remaining 1 tablespoon of olive oil to the saute pan used for the sausage and cook, stirring occasionally, until the vegetables are soft, about 10 minutes. Add the tomato paste and garlic. Let cook for 1 minute, and add the chicken stock. Cut the sausages on the diagonal into 2-inch pieces and add them to the saute pan. Cook until the sauce is slightly thickened, about 5 minutes. Season with salt and pepper.
  • Fill the toasted rolls with the sausages, peppers and onions and serve warm.

Steps:

  • Preheat the grill to 350 degrees F.
  • In a large bowl mix together the pork and all of the spices. Mix well until evenly distributed. Shape the mixture into 5 equal patties. Grill the patties on each side until cooked to desired doneness, about 4 minutes on each side.
  • In a large bowl, add olive oil, peppers, onions, salt and pepper, and toss together. Coat the mozzarella in the oil mixture, and transfer the slices to a large plate.
  • Using a grate on top of the grill, arrange the onions and sliced peppers. Close the grill and allow to cook for 1 to 2 minutes on each side.

  • Position a rack on the top of the oven and preheat to broil.

  • Drizzle the oil over the peppers, season with 1 teaspoon salt and arrange on a baking sheet cut-side up. Broil on the upper rack of the oven until blistered and softened, 4 to 6 minutes.

8 green peppers, sliced into strips
4 vidalia onions, quartered
1 cup water

  • put italian sausage ropes in roasting pan large enough to fit amount you are making.
  • quarter onions and put on top.
  • cut green peppers into strips and throw on top.
  • add water.
  • cover pan with heavy duty foil and bake for 2 hours at 300 degrees (time varies depending on amount of sausage).
  • once done, cut into roll length pieces.

¼ cup extra-virgin olive oil
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced

1 tablespoon chopped fresh oregano
Course sea salt and freshly ground black pepper, to season
For polenta:
3 cups water
1 quart chicken broth (or water if you prefer)
2 teaspoons salt
2 tablespoons extra-virgin olive oil
1 1/2 cups instant polenta
4 tablespoons unsalted butter
½ cup grated Parmesan
Grated Parmesan, for sprinkling

Steps:

  • In a large skillet, warm 2 tablespoons olive oil over medium-high heat. Add the sausages and brown well. Remove and set aside. Reduce heat to medium and stir in the peppers and onions. Sauté, stirring often, until very tender and lightly browned, about 8 minutes. Return the sausage to the pan and stir in the remaining olive oil and the oregano. Reduce heat to very low, cover and set aside while you make the polenta. To make the polenta, bring water to a boil in a teakettle. Turn off heat. Bring broth to boil in a large, heavy saucepan. Reduce heat to low. Stir in the salt and olive oil. Add the polenta very, very gradually, stirring constantly with a wooden spoon. Take your time. Once all the polenta is added let it cook over very low heat for about 5 minutes, stirring constantly. If the polenta becomes to thick to stir, pour in some hot water and blend it in. The polenta is done when it is smooth, shiny and tender. Turn off the heat and stir in the butter and Parmesan. Divide polenta among 4 bowls. Spoon sausage, peppers and onions over the polenta and serve. Pass extra Parmesan for sprinkling.

1 1/2 lbs mild Italian sausage or 1 1/2 lbs hot Italian sausage

1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
3 cubanelle peppers, seeded and cut into strips
1 yellow onion, cut into slices
2 garlic cloves, chopped
1/2 teaspoon dried oregano
6 fresh basil leaves, shredded
1/2 cup white wine
1 tablespoon butter
1/2 teaspoon salt
1 teaspoon ground black pepper
1/2 cup flat-leaf Italian parsley, fresh
1/2 cup parmesan cheese, grated fresh

Steps:

  • In 6 quarts of boiling salted water, cook the pasta until al dente. About 10 to 13 minutes. Drain and set aside.
  • Stir in 2 Tbls of olive oil into the pasta.
  • In the meantime, fry the sausage in a large frying pan in 2 Tbls of olive oil until the sausage cooked through and browned all over.
  • Remove the sausage from the pan and let stand.
  • Drain the excess oil in the frying pan.
  • Add the peppers, onions, garlic, oregano and basil to the pan, cover and cook on medium heat until the peppers are tender and slightly browned.
  • Cut the sausages into 1 inch pieces and add to the peppers.
  • Increase the heat and add the white wine.
  • Cook until the wine is reduced by half.
  • Stir in the butter and the parsley.
  • Season with salt and pepper.
  • Plate the pasta and spoon the sausage mixture on top.
  • Optional: Plate the pasta, pour a good quality, or homemade vodka sauce over the pasta, then top with sausages and peppers.
  • Serve with Parmesan cheese.

8-10 large potatoes, peeled and chunked
4 large onions, chunked
3 medium bell peppers, seeded and sliced
1 tsp garlic powder with parsley
kosher salt and freshly ground black pepper to taste
1 1/2 c hot water
1/4 c olive oil, extra virgin or more to your taste

Steps:

  • 1. Prepare vegetables. Arrange sausage links in a large shallow casserole dish. Arrange vegetables around sausage.
  • 2. Sprinkle with salt, pepper and garlic. Drizzle with oil. Add water to casserole dish.
  • 3. Seal with tin foil and bake for 1 hour at 350-degrees. Remove foil and bake an addtional 20 or so until sausage and potatoes are browned.
  • 4. Serve with a good Italian or French bread to sop up the juices. Or if you prefer, serve sausage on a hoagie bun that has been dipped in the juices and then top sausage with peppers and onions and serve potatoes on the side.

1/2 pound Italian hot sausage
1 large red onion, cut into 1/4-inch thick slices
2 large yellow pepper, cored, seeded and quartered
2 large red pepper, cored, seeded and quartered
Olive oil
Salt and pepper
1 recipe favorite pizza dough, rolled into 4 (6-inch) rounds
1/2 pound grated fontina cheese
1 cup sheep's milk ricotta
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh oregano
Basil Vinaigrette, recipe follows
1/2 cup fresh basil leaves
1/4 cup white wine vinegar
1 tablespoon honey
Salt and freshly ground black pepper
1/2 cup olive oil

Steps:

  • Preheat a grill.
  • Grill the sausage on both sides until golden brown and cooked through, about 10 minutes per side. Brush onions and peppers with the oil and season with salt and pepper. Grill the onions and peppers until soft, about 3 to 4 minutes per side. Remove the sausage from the grill and slice into 1/4-inch thick slices. Remove the onions, separate into rings, and roughly chop. Remove the peppers and slice into 1/8-inch thick slices.
  • Heat grill to high. Brush dough with olive oil, season with salt and pepper and grill for 2 to 3 minutes or until golden brown. Turn over and grill for 1 to 2 minutes. Remove from the grill and place on a flat surface.
  • Divide the fontina cheese among the 4 pizza rounds. Divide the sausage, onions and peppers over the cheese. Place the pizza on the grill, close the cover and grill until the cheese has melted, about 3 to 4 minutes. To finish in the oven, preheat the oven to 450 degrees F. Place the pizza on sheet pans and bake until the cheese has melted, about 5 to 10 minutes.
  • Mix together the ricotta, extra-virgin olive oil, and oregano in a small bowl and season with salt and pepper, to taste. Remove the pizzas from the oven and drizzle with Basil Vinaigrette. Top with dollops of the ricotta cheese mixture and let rest for 5 minutes. Slice and serve.
  • Combine all ingredients and blend until smooth. Adjust seasoning with salt and pepper, to taste.

I got this recipe from my mother inlaw, it is cheap and easy to put together. I love to throw this together on a cold, snowy Sunday morning - then I can just throw it in the oven later and go about my business while dinner cooks. Add a salad or crusty itallian bread for a side and you are all set. I sometimes use turkey sausage for a lower fat dish.

6 italian sausage links
6 medium potatoes, peeled and sliced thin
1 large onion, sliced
1 red pepper, sliced
1 green pepper, sliced
1 cup 2% cheddar cheese, shredded
salt and pepper (optional)

Steps:

  • Preheat oven to 350.
  • Heat a large pot of water to boiling, add sausage, (poke a few holes in them to let the fat out) cover and turn the heat off. Let poach for 20 minutes; drain and refrigerate untill cool. (I usually do this while making dinner the night before). Slice the sausages into 1/4 to 1/2 inch coins.
  • In a large casserole dish, layer half the potatoes, half the onion, half the peppers and half the sausage. Salt and pepper if desired.
  • Repeat layers.
  • Sprinkle cheese on top, cover with foil and bake at 350 for 1 1/2 hours or untill potatoes are cooked through. Remove foil for last 15 minutes of cooking.

16 oz. uncooked linguine
1 (7-oz.) container refrigerated pesto
1 medium green bell pepper, cut into 8 pieces
1 medium red bell pepper, cut into 8 pieces
1 medium onion, cut into wedges
1/2 teaspoon salt
1 1/4 lb. boneless skinless chicken thighs
4 mild Italian sausage links, each cut into thirds

Steps:

  • Heat grill. Cook and drain linguine as directed on package. Return to saucepan. Add pesto; toss to coat. Cover to keep warm. Place bell peppers and onion in grill basket; sprinkle with salt.
  • Place grill basket, chicken and sausage pieces on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 20 to 25 minutes or until chicken is fork-tender and juices run clear, and sausages are browned and thoroughly cooked, turning chicken and sausages frequently. Stir vegetables several times and cook until browned and tender. Serve chicken, sausage and vegetables mixture over linguini.

I found this recipe in Woman's World magazine. When I made this recipe I've baked my sausages for 30 minutes at 350 in a 1"-inch of water. During baking I've cooked my peppers, onions added the garlic for the last 5 minutes. After peppers and onions are tender I added my sliced sausages to brown them. I boiled my Pierogies for 15 minutes. I have added my pierogies to my sausage mix or I just top the pierogies with the sausage mix as serving. I skipped the mozzarella.

8 ounces sweet sausage links or 8 ounces hot Italian sausage links
2 garlic cloves, sliced
1 large red onion, chopped (1 3/4 cup)
2 green peppers or 2 yellow peppers, sliced
16 ounces frozen potato and onion pierogies
4 ounces shredded mozzarella cheese (1 cup)

Steps:

  • In large nonstick skillet over medium-high heat, cook sausage until browned, 5 minutes. Remove from skillet; cut into 1/4"-thick slices.
  • In same skillet, heat 1 tablespoon oil over medium heat. Add garlic; cook, stirring, until fragrant, 1 minute. Add onion, peppers, sausage, 1/4 teaspoon salt and pepper; cook, stirring, until sausage is cooked through and onions and peppers are tender, 5 minutes.
