SAUSAGE NOODLE CASSEROLE

Steps:
- Cook noodles according to package directions; drain. In a large skillet, cook sausage over medium heat until no longer pink; drain., In a Dutch oven, combine the soup, sour cream and blue cheese; cook and stir over medium heat until cheese is melted. Stir in the noodles, sausage, mushrooms, pimientos and green pepper., Transfer to 2 greased 3-qt. baking dishes. Toss bread crumbs and butter; sprinkle over top. Bake, uncovered, at 350° for 30-35 minutes or until edges are bubbly.

SAUSAGE - NOODLE CASSEROLE
This is great to make the night before without the corn chips, cover with plastic wrap, stow in the fridge. The next night top with the chips and bake. I've made it with an incredible varity of ingredients. You can't make many mistakes, it comes out good in almost any circumstances. When I first got the recipe it called for breakfast sausage hence the name.

Steps:
- Preheat oven to 350 F.
- Cook and drain the noodles.
- Meanwhile, Brown the meat, (not any that is precooked) drain.
- Drain and wipe the pan.
- Add oil and heat.
- Saute the Bell Pepper and Onion 'til the onion is translucent.
- Mix together all except the corn chips.
- Pour into a 2 qt. casserole dish
- At this point you can cover the dish with plastic wrap and put it in the fridge to be baked later.
- Top evenly with corn chip crumbs.
- Bake 35- 40 minutes.
UKRAINIAN SAUSAGE NOODLE CASSEROLE
Make the casserole ahead of time except for baking it, leave in fridge and pop in oven 45 minutes before dinner. I threw this together last night and rather liked it so thought I would post it, Freezes well Make it as hot or as mild as you like. I found 2 tablespoons of hot sauce was just right but I moderated it to 2 tsp cause I know only some like it hot! Even with 2 tbsp I didn't find it too hot .Serve with a green salad and a crispy roll

- In a large skillet heat oil over medium heat, saute the onions for 5 minutes, add mushrooms continue sauting for 4 minutes more.
- Add celery, peppers, green onions, continue to saute for another 3 minutes.
- Add soup& hot sauce, mix well.
- Add sausage & Noodles ,remove from heat.
- Preheat oven to 350F.
- Lightly grease a 9"x9"x3", Pour in the casserole mix.
- Cover and bake for 30 minutes, remove cover& sprinkle on the onion flakes.
- Return to the oven for 15 minutes to brown the flakes and finish cooking.
- Serve Hot.

- 1. Brown sausage, break up as it cooks, drain off grease. Cook Noodles according to package, DO NOT over cook.
- 2. Layer in a 13 X 9 baking pan. Half of the noodles, half of the sausage, half of the sauerkraut (no need to heat kraut) Repeat layers in order again, then dot with the butter.
- 3. Bake in 350 degree over for 30-40 min. or until heated through and the top is starting to brown. This is an old depression recipe that my Grandmother would make.

SAUSAGE AND BROCCOLI NOODLE CASSEROLE
The original recipe calls for roasted red peppers but we like them without. I usually cook the sausage with onions and crushed garlic for awesome flavor. If I don't have any sausage on hand I'll sometimes do a package of vegetable medley instead. This is a great quick meal that I make on weeknights.

- 1. I cooked sausage and onions in skillet. While cooking this I sprinkled on these ingredients: red pepper flakes, pepper, salt, paprika, ginger, and nutmeg. I cooked until sausage was browned and onions tender.
- 2. Then I added 1 teaspoon minced garlic (from a jar), 2 Tablespoons parsley, and a half Tablespoon up to 1 Tablespoon of dried basil, stirring to cook for a few seconds.
- 3. I then added ¼ cup flour to make a roux and cook for at least 2 or 3 minutes to cook out the raw taste of the flour. Then I added two cups of milk and a ¼ cup water. I cooked this until bubbly and beginning to thicken (WHICH TOOK ME SEVEN MINUTES). Then I added the COOKED egg noodles, stirring to combine. I poured the entire mixture into a buttered casserole dish (8x8).
- 4. For the topping: In a med bowl I crumbled up two pieces of bread, added ¾ cup grated parmesan cheese and mixed these together then poured 3 Tablespoons melted butter over the bread and parmesan cheese and mixed well. I sprinkled this over the casserole.
- 5. I put the casserole in a 400° pre-heated oven for about 30 minutes or until it is golden brown on top.

When I was working full time as a dental assistant I used to layer this ahead of time and just pop it in the oven when I got home. Got this from a church cookbook a wedding gift when my husband and I were married in 1986.
