CORNBREAD AND WILD RICE DRESSING (STUFFING) WITH SAUSAGE
I was looking for a dressing to go with a goose for Christmas when I came up with the idea to combine my 2 favorite dressings. Turned out to be a huge hit.

Steps:
- Preheat oven to 375°F.
- Combine 2 cups of stock, water and rice in a medium saucepan.
- Bring to a boil then turn down heat, cover, and simmer until tender, about 1 hour.
- Drain, put in large mixing bowl with cornbread and set aside.
- Heat olive oil in a large skillet.
- Sauté onion, celery, garlic and shallot over medium heat until translucent.
- Add sausage. Brown.
- Add sage, salt, and pepper.
- Add to rice/cornbread mixture. Toss.
- Put mixture into baking dish (10 X 15 works well) drizzle with remaining stock.
- Cook on lower shelf until top is crispy, about 25 minute.

ARTICHOKE-SAUSAGE STUFFING / DRESSING
from Quick Fix Meals. We actually couldn't find turkey sausage, so we got uncased pork sausage from Whole Foods, cooked it in the pan, drained the fat, and did everything else exactly as stated. Very tasty!

Steps:
- Preheat oven to 325°F (or if cooking inside turkey, preheat to 450°F).
- Place a large skillet over medium-high heat.
- When pan is hot, add sausage and cook 3 to 5 minutes, until browned and cooked through, breaking up the meat as it cooks.
- Add mushrooms, onion, garlic, and poultry seasoning and cook 3 minutes, until mushrooms soften.
- Transfer mixture to a large bowl and add bread cubes, artichoke hearts, cheese, parsley, and 1 1/2 cups broth.
- Toss to combine, allowing liquid to soften bread cubes. If stuffing seems dry, add more broth to soak cubes.
- Bake stuffing at 325°F for 30 minutes in shallow baking dish.
- ** If cooking in turkey: Loosely stuff bread mixture into turkey (extra stuffing can be baked in shallow dish next to the turkey). Place turkey in preheated oven and immediately reduce oven temperature to 325°F Roast turkey 20 minutes per pound, or until an instant-read thermometer registers 180-185°F.
CORNBREAD SPICY SAUSAGE STUFFING/ DRESSING
Sausage loaded dressing. Recipe #407287 was used to flavor the stuffing but your favored poultry seasoning will work fine. This makes enough to stuff the bird and have a casserole for crisper dressing. Leftovers can be frozen for future use.

Steps:
- Brown sausage in large skillet over medium heat until no longer pink, stirring to crumble meat.
- Remove fat from cooked sausage.
- Add butter to sausage over medium high. Add onions, celery, carrot and garlic cook for 10 minutes or until onions are softened. Stir in dried sage and poultry seasoning, cook 1 minute more.
- Combine cornbread crumbs t the sausage and onion mixture.
- Pour broth over stuffing. Toss lightly until evenly moistened. Adding more or less to taste.
- Stuff a turkey or place in a greased casserole.
- This can be placed in the oven when the turkey comes out to rest for perfect timing.
- Preheat oven to 350 degree. Bake for 20 minutes or until heated through. For drier stuffing, uncover during last 15 minutes of baking.
SAUSAGE WATER CHESTNUT DRESSING/STUFFING
This stuffing has been a never fail for me, Everyone likes it. Left overs are usually fried for breakfast the next day or used for stuffing and turkey sandwiches.

- Heat and spray with veggy oil a heavy large frypan.
- scramble fry pork, onions, celery and garlic until onions are transparent.
- Set aside, do not drain.
- In a very large bowl, place bread crumbs, parsley and chives, if using.
- Mix well.
- Add water chestnuts with water, apple, salt and pepper. (I usually add one can of chestnuts with water and add the chestnuts only of the second can adding more water only if needed, a bit at a time.)
- Mix well.
- Add pork and onion mixture with juice from pan.
- Mix well.
- Add poultry seasoning a tablespoon at a time, taste and add more poultry seasoning until the taste is to your liking, make it as spicy as you wish.
- Refrigerate until ready to stuff turkey.
- Pack cavities firmly but not tight.
- Any stuffing left can be cooked in a casserole in the oven with the bird, or freeze and use another time.

- Preheat oven to 325 degrees F.
- Put the stuffing cubes in a large bowl and set aside. Butter a 3-quart casserole dish.
- Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sausage and break up with a wooden spoon. Cook until it loses most of its pink color, but not so much that it's dry, about 5 minutes. Add the sausage and pan drippings to the stuffing cubes. Melt the remaining butter in the pan. Add the onion, apple, celery, and salt. Cook until the vegetables get soft, about 5 minutes. Add the broth and parsley and bring to a boil.
- Pour the vegetable mixture over the stuffing cubes and toss until evenly moistened. Mix in the walnuts and eggs. Loosely pack the dressing in the prepared pan and cook uncovered until the top forms a crust, about 40 minutes. Drizzle about 2 tablespoons of turkey pan drippings or melted butter over the top. Cook until the top is crisp and golden, about 20 minutes more. Set immediately or warm.
- Tips: Put the dressing in the oven during the last hour of cooking the turkey
- Note: To toast nuts, spread them out on a baking sheet and toast in a 350 degree F oven until golden, about 7 minutes.

- Cook sausage in large skillet until browned. Remove with slotted spoon and drain on paper towels. Cook onion and celery in drippings in skillet until tender. Combine sausage, cooked vegetables, sage, marjoram, bread cubes, and parsley in large mixing bowl; blend well. Stir in chicken broth to moisten. Season with salt and pepper. Stuff mixture into turkey and roast according to standard roasting directions. Or spread mixture into greased 9 x 13 x 2" baking dish, dot with butter, cover and bake in 350 F oven for 30 minutes. Uncover and bake 10 minutes more or until golden brown.
MCDONALD'S SAUSAGE STUFFING (DRESSING OF SHAME)
I'd been looking for the perfect sausage stuffing recipe for a long time, but was always disappointed with the flavor. I kept thinking how I wished the sausage was spicier somehow...like the breakfast sausage at McDonalds. AHA! Why not make a sausage stuffing using the breakfast sausage from McDonalds?!! We don't like to admit we eat there...thus the shame part of this recipe. However, it really is the best stuffing we've had!

- Melted butter in saucepan and saute onions and celery until soft. In a large mixing bowl, combine all ingredients until well combined. Stuff into bird OR put in a large baking dish and bake for 1 hour at 350 degrees OR put in a crock pot on low and let it cook away! Yum.
- TIPS:.
- - Do not add your hot onions and celery directly into the eggs or you may get scrambled eggs.
- - Do NOT add any more salt! This stuff is salty enough already - believe me!
- - If you hate cornbread stuffing, make this with regular bread stuffing. Duh.
- - Feel free to add more chicken broth if your stuffing looks dry or you like a more moist stuffing.
- - Don't lecture me on stuffing vs dressing.
- - Don't tell anyone it contains McDonalds unless you want to hear lectures and/or stories about McDonalds.
