An easy 3-ingredient breakfast bake made with sausage, cream cheese, and crescent roll dough.

1 pound ground pork sausage
8 oz. cream cheese, softened
2 (8 oz) tubes refrigerated crescent rolls
green onions, for garnish (optional)

Steps:

  • Preheat oven to 375 F. Spray or grease a 9 x 13 baking sheet or baking pan.
  • Brown sausage in a skillet. Drain. Stir in cream cheese until well mixed. Set aside.
  • Spread one roll of crescent dough out from edge to edge onto a non-stick baking sheet (or baking sheet coated with non-stick spray).
  • Top with sausage mixture, spreading it out evenly until ¼ in. from the edge.
  • Cover with the second sheet of crescent roll dough. Spread the dough out to cover the sausage and press to seal up the ends.
  • Bake uncovered until golden brown, about 10 minutes. Cut into squares. Garnish with green onions before serving, if desired.

1 tube (8 ounces) refrigerated crescent rolls
1 package (8 ounces) frozen fully cooked breakfast sausage links, thawed and cut into 1/2-inch slices
2 cups shredded Monterey Jack cheese
4 large eggs
3/4 cup milk
2 tablespoons chopped green pepper
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Unroll dough; place in an ungreased 13x9-in. baking dish. Press onto bottom and 1/2 in. up sides to form a crust. Top with sausage and cheese. Beat eggs in a bowl; add remaining ingredients. Carefully pour over cheese. , Bake, uncovered, at 425° for 20-25 minutes or until a knife inserted in the center comes out clean. Cut into 12 pieces.

2 can(s) pillsbury refrigerated crescent dinner rolls
1 lb hot pork sausage
1 pkg 8 oz. cream cheese
2 c shredded cheddar cheese

Steps:

  • 1. Heat oven to 375°F.
  • 2. Unroll 1 can of dough into 2 long rectangles. Place in ungreased 13x9-inch glass baking dish; press over bottom and 1/2 inch up sides to form crust.
  • 3. Cook sausage over medium heat, stirring frequently, until no longer pink. Remove sausage from skillet; discard drippings. To same skillet, add cream cheese. Cook over low heat until melted. Add cooked sausage; stir to coat. Spoon evenly over crust in baking dish. Sprinkle with cheddar cheese.
  • 4. Unroll second can of dough on work surface. Press to form 13x9-inch rectangle; firmly press perforations to seal. Carefully place over cheese.
  • 5. Bake 21 to 26 minutes or until golden brown. Cool 15 minutes. Cut into small squares.

2 cups mozzarella cheese
4 eggs, beaten
¾ cup milk

Steps:

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 425 degrees F (220 degrees C).

Steps:

  • Heat oven to 425°F. Grease bottom and sides of 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. In 12-inch skillet, cook sausage, onion and garlic over medium heat, stirring frequently, until sausage is no longer pink; drain. Stir in bell pepper; remove from heat.

Easy peasy and adjustable. These are good served hot, fresh from the oven, but I make them for us to take to work and eat there. They also freeze and reheat very well. I also used cubed ham if sausage isn't available. And if I have a lot of chopped green or spring onions left over from something, I use those as well as yellow or white onion. Feel free to play with the ingredients. I use 14 large eggs - adjust accordingly. Nuking the sausage ahead of time makes clean up way easier. I end up putting the eggs, baking mix, spinach, salt pepper in the Cuisinart then I just stir in the sausage and cheese.

1 (16 ounce) bag , chopped frozen spinach, defrosted
1 lb sausage meat or 1 lb ham, cubed
2 1/2 cups shredded cheese, of choice
1 teaspoon salt

1 cup onion, chopped
1/2 cup baking mix or 1/2 cup flour

Steps:

  • Spread the sausage out on a microwave-safe bowl and microwave until it's cooked. Drain it and crumble it and set aside.
  • Beat the eggs with the baking mix (we use Carbquick) and salt and pepper.
  • Drain the spinach and add to the eggs.
  • Add the cheese.
  • Add the sausage.
  • Bake in large rectangular pan that's been well sprayed with non-stick spray (I use a 13x8" pan) You could also bake these (for less time) in sprayed muffin tins.
  • Bake 350 degrees for about 40 minutes or until the center is set. Cool and cut into squares.

If you don't want to use bulk sausage, cut up some pre-cooked link sausages or microwave some uncooked link sausages. Yes, potatoes have carbs, duh, but one potato for 12 servings is very satisfying without doing a lot of damage. Use whichever cheese you prefer: cheddar, jack, colby, whatever.

1 large potato, cut into small cubes
1 lb frozen chopped spinach, defrosted

  • smash the sausage and place in microwave dish and cook until just done; drain off the fat, break it up into chunks
  • chop the potato into small cubes and microwave with a little water until just tender.
  • Let the sausage and potato cubes cool while you whisk the eggs and add the other ingredients.
  • add the sausage and potatoes
  • Pour into one greased 9x13" or two 8x8" or into muffin pans and bake at 350 degrees until set. Time will vary depending on which baking pan(s) you choose. Serve hot or cool, cut into squares. Freeze once cool.
