BREAKFAST SAUSAGE ROLLS

Steps:
- Allow dough to rise until nearly doubled.
- Cook and crumble sausage. Add mushrooms and onions.
- Cook and stir until sausage is brown and vegetables are tender.
- Drain and cool.
- Beat 1 egg and set aside. Add to sausage mixture 2 eggs, cheese and seasonings.
- Roll each loaf of dough into a 16x12 inch rectangle. Spread each loaf with 1/2 sausage mixture, to within 1 inch of edges.
- Roll up, starting at narrow end, seal edges.
- Place on greased baking sheet. Bake at 350'F for 25 minutes; brush with beaten egg.
- Bake at 5-10 minutes longer or until golden brown.
- Serve warm.

BREAKFAST SAUSAGE BREAD

- Cover dough and let rise in a warm place until doubled. Preheat oven to 350°. In a large skillet, cook sausage, mushrooms and onion over medium-high heat until sausage is no longer pink, breaking up sausage into crumbles, 6-8 minutes. Drain. Transfer to a bowl; cool., Stir in two eggs, cheese and seasonings. Roll each loaf of dough into a 16x12-in. rectangle. Spread half of the sausage mixture over each rectangle to within 1 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seams to seal. Place on a greased baking sheet., In a small bowl, whisk remaining egg. Brush over tops. Bake until golden brown, 25-30 minutes. Serve warm. Freeze option: Securely wrap and freeze cooled loaves in foil and place in resealable plastic freezer bags. To use, place foil-wrapped loaf on a baking sheet and reheat in a 450° oven until heated through, 10-15 minutes. Carefully remove foil; return to oven a few minutes longer until crust is crisp.

SAUSAGE BREAKFAST ROLLS
This is a must have for breakfast. I made this one sunday morning and my husband loved it so much he asks for it every sunday. If you make the rolls with a lot of the mixture only one package of cresent rolls is needed. If you make the rolls with a smaller amount there may be enough for 2 packages of cresents. You can also use biscuit rolls if you like.

Steps:
- Cook sausage and drain. Let cool and mix with cream cheese. Put 3-4 tablespoons full of sausage and cream cheese mixture into each cresent roll. Roll cresent roll as usual and bake for 15 minutes or until golden brown on top. Any leftover mixture will store in frige or freezer for next batch.

MARK'S ENGLISH SAUSAGE ROLLS
I had never heard of these until I met my husband, Mark, who is English. They are simple and delicious! They freeze really well too.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Unfold the puff pastry sheets, and cut along the fold lines of each sheet to form 6 equal squares for a total of 12 squares. Brush each square with mustard. Divide sausage into 12 pieces, and roll into small logs. Place one log on each square. Roll dough around the sausage, and seal with a bit of beaten egg. Place rolls onto an ungreased baking sheet, and brush the tops with the rest of the egg.
- Bake for 20 minutes in the preheated oven, or until the rolls are puffed and golden. I usually watch after 10 minutes or so to make sure they don't burn. These freeze (unbaked) very well.

- Preheat oven to 375°. In a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Unroll crescent roll dough into a greased 13x9-in. baking dish. Seal seams and perforations. Sprinkle with sausage and cheese., In a large bowl, whisk eggs, milk, salt and pepper. Pour over sausage and cheese., Bake, uncovered, 35-40 minutes or until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving., Make-Ahead: Refrigerate unbaked casserole, covered, several hours or overnight. To use, preheat oven to 375°. Remove casserole from refrigerator while oven heats. Bake as directed, increasing time as necessary until a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.
