Number Of Ingredients 11

6 large eggs
1 cup half-and-half
2 tablespoon green onions, chopped (white and green parts)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground mustard
1 tablespoon butter, at room temperature
7 thick slices of Challah or Texas toast (or 10-11 regular sized slices of bread), chopped in 1" cubes
1 lb loose maple breakfast sausage, cooked and drained (or regular breakfast sausage)
1 lb bacon, crispy and chopped in 1" pieces
1 cup grated cheddar cheese

Steps:

  • In a bowl, beat the eggs.
  • Add the half and half, salt, pepper and ground mustard and whisk well.
  • Spread the butter over the bottom and sides of a 13 x 9 inch non-metal baking dish.
  • Spread half of the bread on the bottom of the pan.
  • Top with half of the sausage, bacon, cheese and green onions.
  • Repeat with the remaining bread, sausage, bacon and green onions.
  • Pour the egg mixture over top.
  • Gently press the bread down into the egg mixture.
  • Top with green onions and cheese.
  • Cover with plastic wrap and refrigerate for at least 8 hours, overnight is best.
  • Remove from the refrigerator 30 minutes before baking.
  • Preheat the oven to 350F with the rack in the middle
  • Uncover the dish and bake for 35-40 minutes, or until the casserole is set in the center. *Test with a wooden skewer. It should come out almost clean.
  • Let stand 5-10 minutes before cutting into serving pieces.
  • Serve with warm maple syrup.

6 slices bacon, cut into 1-inch pieces
1 link smoked pineapple-bacon chicken sausage, cut into slices
1 tablespoon canola oil
1 teaspoon butter
2 ½ cups frozen hash brown potatoes, thawed
½ onion, chopped
¾ teaspoon garlic powder, divided
½ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon ground black pepper
1 cup shredded Cheddar cheese
6 eggs
1 tablespoon milk
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a 10-inch skillet and cook over medium heat, turning occasionally, until crisp, about 10 minutes. Use a slotted spoon to remove bacon to a paper towel-lined small bowl. Discard half the bacon fat using a spoon.
  • Cook sausage in the hot skillet until browned on both sides, about 5 minutes. Remove to the bowl with the bacon.
  • Heat canola oil and butter in the same skillet over medium heat. Add hash browns and onion. Sprinkle 1/2 teaspoon garlic powder, onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper on top and stir together. Spread out the hash browns; cook, without stirring, until browned, about 5 minutes. Turn hash browns over and sprinkle Cheddar cheese evenly over the top.
  • Stir remaining garlic powder, eggs, and milk together in a bowl; season with salt and pepper. Pour egg mixture over the Cheddar cheese-covered hash browns in the skillet. Sprinkle bacon and sausage pieces on top.
  • Bake in the preheated oven until top is puffed, cheese is melted, and a knife inserted into the center comes out clean, 10 to 15 minutes.

6 ounces mushrooms, sliced
1 (3 ounce) package bacon bits
12 ounces reduced-fat cheddar cheese, shredded
16 ounces non fat small curd cottage cheese
1/4 cup light butter
1 (20 ounce) package refrigerated diced potatoes with onions
1 pint egg beaters southwestern egg substitute
salt and pepper

Steps:

  • Heat oven to 375 degrees.
  • Coat a 9x13 pan with Pam.
  • Melt butter and mix with the potatoes and onion, then line bottom of prepared pan.
  • Brown the sausage over medium-high heat, adding mushrooms about half way through.
  • Meanwhile, mix cheddar cheese and cottage cheese.
  • Layer 1/2 the cheese mixture, then sausage mixture and bacon bits, then the remaining cheese mixture over potatoes in the pan.
