SAUSAGE AND PEPPER GRINDER

Number Of Ingredients 19

8 ounces sweet Italian pork sausage
8 ounces spicy Italian pork sausage
1 green bell pepper, halved and cored
1 red bell pepper, halved and cored
1 poblano pepper, halved and cored
1 Spanish onion, sliced into rings
1/2 bunch broccoli rabe
About 1/2 cup extra-virgin olive oil
2 cloves garlic, very thinly sliced, plus 1 clove, to rub on toasted grinder rolls
1 cup tomato sauce
4 fresh Italian grinder rolls
Kosher salt and freshly ground black pepper
1/4 cup sliced pickled cherry peppers plus 2 tablespoons of the pickling liquid
1/2 teaspoon dried oregano
Pinch red pepper flakes
1/2 cup fresh basil, minced
1/4 cup fresh parsley, minced
2 tablespoons red wine vinegar
8 slices provolone cheese

Steps:

  • Preheat a grill to medium heat.
  • Toss the sausage, peppers, onion and broccoli rabe with about 2 tablespoons olive oil. Grill until the sausage is cooked through and the vegetables are slightly tender and a little charred, 10 to 15 minutes. Slice the sausage, peppers and onions. Cut the broccoli rabe into 1/2-inch pieces.
  • In a small pot, heat 2 tablespoons oil over medium-low heat. Add the sliced garlic and saute until fragrant but not browned, 1 to 2 minutes. Add the tomato sauce and bring to a simmer. Turn the heat to low and cook for about 5 minutes to allow the garlic to infuse into the tomato sauce.
  • Remove some of the bread from the inside of each grinder roll. Dress the grinder rolls with about 2 tablespoons olive oil and some salt and pepper. Grill until toasted, 1 to 2 minutes, then rub with a clove of garlic.
  • In a large bowl, combine the sausage, peppers, onion, broccoli rabe, tomato sauce, pickling liquid from the cherry peppers, oregano and red pepper flakes and season with salt and pepper. Toss until coated.
  • In a separate bowl, combine the cherry peppers, basil, parsley and red wine vinegar and season with salt and pepper. Add about 2 tablespoons olive oil to bind it all. Mix until well combined.
  • Place enough of the sausage mixture into each bun to fill. Cover with 2 slices of provolone cheese in each grinder. Place back on the grill on the top rack with the cover down. Cook until the cheese is melted, about 5 minutes. Top with the cherry pepper mixture.

This main dish is a nice change of pace from traditional sweet-and-sour meatballs. It's much quicker to make, too. For variety, I like to substitute a different kind of sausage, like spicy Italian.-Nova MacIsaac, Souris, Prince Edward Island

1 package (12 ounces) uncooked sausage links
1 cup sugar
3 tablespoons cornstarch
1 cup water
1/2 cup vinegar
1/2 cup ketchup
1 can (8 ounces) crushed pineapple, drained
Hot cooked rice

Steps:

  • In a large skillet, cook sausage until a thermometer reads 160° drain. When cool enough to handle, cut into bite-size pieces; set aside. , Combine the sugar, cornstarch, water, vinegar and ketchup; add to skillet. Bring to a boil. Reduce heat; cook for 2 minutes or until thickened. Add pineapple and sausage; heat through. Serve with rice.

8 Italian sausages (hot or mild)
1 1/2 cups ketchup
2 tablespoons honey
1/2 green pepper, chopped
1/2 onion, chopped
3 tablespoons hot sauce
salt and pepper
1/2 cup mustard
3 tablespoons brown sugar, to make it sweeter you can add (optional)
1 (16 ounce) package Italian rolls (or whatever size you can find them in)

Steps:

  • Brown sausage on both sides.
  • Add all ingredients (except italian rolls) in crock pot and cook slowly for about 3 or 4 hours.
  • If you do not have a crock pot just cook slowly on the stove until sausage is done to your taste.
  • Slice a roll in half lenthwise (like a hot dog bun) and place on a plate, put a sausage inside. Spoon onions, peppers and some of the sauce on top.
  • Enjoy!

1/2 store-bought garlic bread
1/2 cup tomato sauce
Any of the leftover sausage, peppers and onions from the Sausage and Pepper Grinder, recipe follows, could be added for a topping
1 cup shredded mozzarella cheese
4 pork sausages
2 tablespoon canola oil
1 (16-ounce) bag frozen pepper stir-fry mix
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup yellow mustard
1 tablespoon brown sugar
1 teaspoon cider vinegar
1 teaspoon hot sauce
4 hot dog buns

Steps:

  • Preheat oven to 425 degrees F.
  • Place the garlic bread on the baking sheet. Spoon tomato sauce on the bread and top with any of the leftover sausage or pepper from the grinders. You can also top it with any leftover vegetables or toppings you have in your refrigerator. Sprinkle the cheese on top. Bake in the preheated oven for 15 minutes until the cheese is melted and bubbly. Slice and serve.
  • Cook sausages in a medium size skillet over medium-high heat until browned and cooked through, about 10 to 12 minutes.
  • In a separate saute pan, heat oil over medium-high heat. Add onion and peppers stir-fry mix and salt and pepper. Cook until softened, about 4 to 5 minutes.
  • In a small bowl whisk together mustard, brown sugar, vinegar, and hot sauce.
  • For assembly, generously spread mustard on each side of the hot dog buns. Place a sausage in each bun and top with onion and pepper mixture.

4 cups prosecco
3 cloves garlic, smashed, plus 2 cloves, chopped
1 bay leaf
2 large sweet Italian sausages
Olive oil
Salt and freshly ground black pepper
Baguette, sliced on the bias 1/4-inch thick
2 red bell peppers
2 yellow bell peppers
1 onion, halved and sliced
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh thyme

Steps:

  • Preheat the oven to 375 degrees F.
  • Pour the prosecco into a deep skillet and bring to a simmer over medium heat. Add the smashed garlic, bay leaf and sausages. Simmer until the sausages are cooked through, about 15 minutes. Remove the sausages, reserve the cooking liquid, and let the sausages rest a few minutes. Bring the cooking liquid to a simmer and cook until reduced and slightly thickened into a sauce. Slice the sausages on the bias into thin slices.
  • In a small bowl, combine the chopped garlic with a few tablespoons of olive oil and some salt and pepper. Brush the garlic and oil onto each baguette slice and bake until golden brown and crispy.
  • Roast the peppers in the oven or over an open flame until almost blackened. Transfer the peppers to a bowl, cover and let steam and cool. Remove the skin and slice into thin slices.
  • In a large saute pan, heat 2 tablespoons olive oil over medium heat. Saute the onions until translucent, and then add the peppers, basil, oregano and thyme and cook for 5 minutes.
  • To assemble the crostini: Top each bread slice with a slice of sausage, brush with reduced prosecco broth and top with the peppers and onions.
