KALE, SAUSAGE AND MUSHROOM STEW

Number Of Ingredients 8

1 tablespoon extra virgin olive oil
3/4 to 1 pound Italian sausage, sweet or hot, cut into 1-inch pieces
1 pound kale, leaves stripped from stems, stems reserved
3/4 pound trimmed and sliced mushrooms
1 tablespoon roughly chopped garlic
1 tablespoon hot paprika or dried red chili flakes, or to taste
Salt and pepper
2 cups chicken stock or water

Steps:

  • Put olive oil in large deep skillet or casserole, and turn heat to medium-high; a minute later, add sausage and cook without stirring until well browned on one side, about 5 minutes. Meanwhile, chop kale stems into 1/2-inch lengths and shred leaves.
  • Stir sausage and let it brown a bit more. Remove it with a slotted spoon (don't worry if it isn't cooked through). Cook mushrooms in remaining fat, stirring occasionally, until lightly browned, about 10 minutes. Remove with a slotted spoon and keep warm.
  • Add kale stems and cook, stirring frequently, until they begin to brown, in 3 or 4 minutes. Turn heat to medium and add garlic, paprika or chili flakes, kale leaves, salt and pepper; stir and cook about 1 minute. Return sausage to pan and add stock or water. Raise heat to high and cook about 5 minutes, stirring occasionally and scraping bottom of pan with wooden spoon. Add salt and pepper to taste, ladle stew into bowls and top with reserved mushrooms.

1 pound bulk sweet Italian sausage
1 medium onion, chopped
3 cloves garlic, minced
1 pound kale, stems removed and cut into bite-sized pieces
2 (14.5 ounce) cans diced tomatoes
1 teaspoon freshly ground black pepper
1 (14.5 ounce) can vegetable broth
1 russet potato, diced with skin on
1 (15.5 ounce) can cannellini beans
¼ cup water as needed

Steps:

  • Heat a Dutch oven over medium heat. Add sausage and cook, breaking it up with a fork, until browned and crumbly, 5 to 7 minutes. Stir in onion and cook until soft, 4 to 5 minutes. Add garlic, and cook another 2 to 3 minutes.
  • Add kale and cook until wilted, 1 to 2 minutes. Stir in tomatoes and pepper; bring to a simmer. Add vegetable broth and diced potato; cover and simmer for 15 minutes.
  • Add beans and continue to simmer until beans are warm, 2 to 3 minutes. Add water if needed to keep stew from getting too thick or salty.

There's nothing like a big, steaming bowl of comfort food to make everything seem all right, and this dark but delightful black lentil stew with sausage and kale is no exception. Sausage and lentils is a marriage made in heaven, and so good together, that not even kale can ruin it. I'm kidding, and actually love kale, but if you're not the biggest fan in the world, maybe try it one more time in this.

2 tablespoons butter
1 yellow onion, chopped
1 large carrot, cubed
1 rib celery, chopped
1 (12 ounce) ring smoked garlic sausage, sliced
1 bay leaf
1 ½ cups black lentils
6 cups chicken broth
1 teaspoon salt, or more to taste
freshly ground black pepper to taste
2 bunches lacinato (dinosaur) kale
1 large tomato, diced
2 tablespoons sour cream, or to taste
1 pinch cayenne pepper, or to taste

Steps:

  • Melt butter in a pot over medium heat. Saute onion, carrot, and celery until starting to soften, about 5 minutes. Add sausage; mix to coat. Stir in bay leaf and lentils. Pour in broth; season with salt and pepper. Increase heat and bring soup to a simmer. Reduce heat to medium-low and simmer until lentils start to swell up, about 20 minutes.
  • In the meantime, pull kale leaves away from the stem. Roll leaves up and chop into ribbons. Place in a colander and wash.
  • Stir kale and tomato into the soup. Cook until kale and lentils are tender, 20 to 25 minutes. Taste and season as desired.
  • Ladle soup into serving bowls and garnish with sour cream and cayenne pepper.

1 lb bulk Italian sausage, broken into small pieces
1 lb baby red potatoes (about 6)
1 white or yellow onion, chopped
1 can (28 oz) Muir Glen™ organic diced tomatoes, undrained
2 tablespoons tomato paste
2 teaspoons minced garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup water or vegetable broth
1 bunch kale, stems removed, coarsely chopped
1/3 cup milk (plus more as needed)
1/4 cup unsalted butter, softened
Additional salt and pepper to taste

Steps:

  • In 4-quart or larger slow cooker, mix sausage, potatoes, onion, tomatoes with liquid, tomato paste, garlic, 1/2 teaspoon salt and 1/2 teaspoon pepper. Add water. Top mixture with chopped kale.
  • Cover; cook on High heat setting 4 hours 30 minutes to 5 hours.
  • If needed, season with additional salt and pepper. Transfer potatoes to medium bowl. To potatoes, add milk and butter; mash until smooth. Add salt and pepper to taste, and more milk if needed.
  • Serve stew with mashed potatoes on top.

1 lb great Northern beans picked through soaked overnight in water drained and rinsed
8 to 9 cups homemade chicken stock unsalted chicken stock or reduced sodium chicken broth
3 Tbsp plus 1 tsp extra virgin olive oil
2 cups diced onion
1/2 cup diced celery ( 3 stalks)
1/2 cup peeled and diced carrots ( 1-2 med)
1 1/2 tsp finely chopped garlic ( about 3 cloves) remove any green shoots outside
1/4 tsp dried thyme crushed
1 14.5 oz can whole peeled tomatoes drained and crushed
Freshly ground black pepper
1 bunch black kale or regular kale washed and stemmed ( about 8 cups)
1 lb smoked sausage such as kielbasa or andouille cut into 1/2 inches slices

Steps:

  • In a heavy nonreactive 4-6 quart dutch oven combine drained and rinsed beans 8 cups stock and a generous pinch of kosher salt. Bring to boiling Reduce heat and simmer partially covered 30-45 mins until beans are tender stirring occasionally and adding stock if level is below top of the beans Beans should move about easily in the stock Cooking time for beans varies from batch to batch Meanwhile in a 12 in skillet heat the 3 Tbsp olive oil over med heat. Cook onion in oil until celery, carrots and garlic, sprinkle with a pinch of salt and dried thyme Stri well Cook 5-7 mins. add crushed tomatoes season with a pinch of salt and a few grinds of black pepper cook 5 mins longer Add to simmering beans In a large pot of slightly salted boiling water cook kale for 5 mins Drain set aside to cool When cool enough to handle squeeze any remaining water from Kale then coarsely chop kale Rinse and wipe out skillet In skillet cook sausage in 1 tsp olive oil over medium heat about 3 mins until well browned on each side. When beans are tender, add kale and sausage to beans in Dutch oven. Simmer 10 minutes Taste for seasoning Let stand 30 mins. Can be made up to 2 days ahead. Makes 8 servings
