Crisco® Original No-Stick Cooking Spray
8 soft white bread slices, crusts trimmed
1/4 cup Crisco® Butter Shortening, melted
1/2 lb. bulk pork sausage, crumbled and cooked
1 (4 oz.) can green chiles, drained and chopped
1 cup grated sharp Cheddar cheese
6 large eggs
1 cup whole milk
1 tsp. mustard
1/2 tsp. salt
1/4 tsp. pepper

Steps:

  • SPRAY an 8 x 8-inch glass baking dish with no-stick cooking spray.
  • BRUSH bread slices with melted shortening. Place 4 slices in prepared dish. Top with half the sausage, chiles and cheese. Top with 4 more slices of bread, then remaining sausage and chiles.
  • BEAT together eggs, milk, mustard, salt and pepper. Pour egg mixture over the layers; sprinkle with remaining cheese.*
  • HEAT oven to 350 degrees F. Bake about 40 minutes or until puffed and center is set. Let stand 5 to 10 minutes before cutting into squares.

1/4 cup crisco butter flavor extract, sticks, melted or 1/4 cup crisco butter flavor shortening, melted
8 slices soft white bread, crusts trimmed
1/2 lb bulk pork sausage, crumbled, cooked and drained
1 cup shredded sharp cheddar cheese
1 (4 ounce) can chopped green chilies, drained
6 eggs
1 cup whole milk (do not use low fat or nonfat milk)
1 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Spray an 8-inch square pan baking dish with Crisco Cooking Spray.
  • Brush bread slices with melted shortening.
  • Place 4 slices in the prepared dish. Top with 1/2 the sausage, chiles and cheese.
  • Top with 4 more slices of bread, then remaining sausage and chiles.
  • Beat together eggs, milk, mustard, salt and pepper.
  • Pour egg mixture over the layers; sprinkle with remaining cheese. (Can be prepared to this point up to 1 day ahead and refrigerated, covered, until ready to bake.).
  • Preheat oven to 350. Bake strata until puffed and center is set, about 40 minutes.

6 slices white bread
1/4 cup soft butter
3 cups shredded cheddar cheese
1 1/2 pounds cooked, drained, crumbled sausage or 3/4 pounds sausage and 3/4 pounds chorizo
3 cups shredded jack cheese
1 small can diced green chiles
9 eggs
3 cups milk
3/4 teaspoon paprika
1 teaspoon oregano
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon dry mustard
Chorizo:
1 pound ground beef
1 pound pork sausage
1 medium onion
1 large clove garlic
1 tablespoon wine vinegar
1 tablespoon sugar
1/4 teaspoon cumin
1/4 teaspoon cloves
1 teaspoon oregano
5 tablespoon chili powder

Steps:

  • For Chorizo: Mix everything together. Cover and refrigerate at least two days. For Strata: Trim crust from bread, butter one side. Place buttered side down in baking pan (use a 9 X 11 1/2 inch baking pan). Sprinkle shredded Cheddar cheese on top; then add meat mixture. Now sprinkle shredded Jack cheese; then chilies. Beat eggs well, add milk and spices. Pour over cheese mixture. Cover and shill over night. (May be frozen at this point.) Bake uncovered at 325 F about 50-60 minutes or until bubbly. (If frozen allow 30 minutes more.)

1 pound pork sausage bulk
5 slices white bread
Soft butter or margarine
3/4 pound sharp cheddar cheese (3 cups) shredded
4 eggs slightly beaten
2 cups milk
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 cup green chili drained, rinsed, seeded and chopped

Steps:

  • Crumble sausage in medium skillet cook over high heat, stirring frequently until meat is browned. Drain off excess grease set aside. Remove crusts from bread lightly butter one side of each slice and cut into cubes. Place half the bread cubes in bottom of buttered 8-inch square baking dish sprinkle with half the cheese and cover with the fried sausage. Place remaining bread cubes over sausage and top with remaining cheese.Combine eggs, milk and seasonings pour over cheese and bread cubes. Cover and refrigerate several hours or overnight. Before baking, sprinkle with chopped green chilies. Bake uncovered at 350° for 1 hour or until golden brown and set.
