SAUSAGE BALLS WITH TWO DIPPING SAUCES
Traditional, classic, and always a hit! These sausage balls are even better with a choice of dipping sauces.

Steps:
- Preheat the oven to 350 degrees.
- In a stand mixer fitted with a dough hook, mix the cheese and sausage briefly on slow speed. Add the biscuit mix a little at a time increasing the mixer speed as needed.
- Roll the mixture into 1" diameter balls and place on baking sheets. Cook for 15-18 minutes or until a light golden brown. Remove from the oven and cool on the pans.
- Note: the sausage balls may be mixed and rolled, placed on the baking sheets, and frozen. When frozen, remove and place in plastic freezer storage bags. If cooking from frozen, allow several more minutes of cooking time.
- To prepare the dipping sauces, mix each sauce's ingredients together in a small bowl. Stir until well blended.

- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, combine the sausage, cheese, and dry baking mix. Mix together, and shape mixture into walnut-sized balls. Place on a foil-lined cookie sheet.
- Bake for 12 to 15 minutes. Serve hot.

- Preheat the oven to 350°F.
- Either in the bowl of a stand mixer or in a large bowl with an electric mixer, combine the shredded cheese, breakfast sausage, baking mix, chives, garlic powder, and cayenne pepper.
- Mix together until it forms a thick dough/paste. If the mixture seems too crumbly or thick, add in the milk, a couple tablespoons at a time, until it can be formed easily into balls.
- Roll the dough into balls about the size of a golf ball-between 1 1/2 and 2 inches in diameter.
- Place the balls on an ungreased cookie sheet an inch apart. Repeat with the remaining dough.
- Bake sausage balls in preheated oven for 20 to 25 minutes, or until the balls are golden brown.

- In a small bowl, combine the first 6 ingredients. Crumble sausage over mixture and mix well. Shape into 1-in. balls. , Place in a shallow baking pan coated with cooking spray. Bake, uncovered, at 375° for 12-15 minutes or until no longer pink. Drain on paper towels. Serve with sauces if desired.
