Steps:
- Grind chili, corander, garlic and sugar to a paste using mortar and pestle. Brush fish wiht 1/2 the oil, grill until just tender. Heat remaining oil in pan, cook chili mixture, stirring for 2 mins. Stir in sauce, stock, juice, and blended cornflour and extra water. Stir until mixture boils and thickens. Serve sauce over fish.
