GRILLED FISH WITH CHILI AND CORIANDER SAUCE image

3 mdm fresh red chilies, chopped
1 tbpsn chopped fresh coriander root
3 cloves garlic, crushed
2 tspns sugar
4 white fish fillets
2 tbpsns oil
1 tbspn fish sauce
1/2 cup chicken stock
1 tbpsn lime juice
2 tspns cornflour
2 tspns water

Steps:

  • Grind chili, corander, garlic and sugar to a paste using mortar and pestle. Brush fish wiht 1/2 the oil, grill until just tender. Heat remaining oil in pan, cook chili mixture, stirring for 2 mins. Stir in sauce, stock, juice, and blended cornflour and extra water. Stir until mixture boils and thickens. Serve sauce over fish.
