Red Potato Salad image

This pretty red potato salad has great flavor. Goes well with a summer barbeque, or anytime! For a tangy twist, try using plain fat-free yogurt in place of some or all of the sour cream. Garnish with additional sliced hard-boiled eggs, if desired.

3 pounds red potatoes, cut into chunks
1 cup low-fat sour cream
½ cup light mayonnaise
2 teaspoons Dijon mustard
1 teaspoon white vinegar
4 hard-cooked eggs, chopped
1 dill pickle, chopped
⅓ celery stalk, chopped
2 green onions, chopped
1 dash hot sauce
1 tablespoon dried dill weed
½ teaspoon garlic powder
1 dash onion salt
salt and pepper to taste

Steps:

  • Place the potatoes in a pot with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and transfer to a large bowl to cool.
  • In a medium bowl, mix the sour cream, mayonnaise, mustard, vinegar, eggs, pickle, celery, green onions, and hot sauce. Season with dill, garlic powder, onion salt, salt, and pepper. Pour over the potatoes, and gently toss to coat. Chill at least 3 hours in the refrigerator before serving.

5 pounds medium red potatoes, halved
5 hard-boiled large eggs, chopped
1 celery rib, finely chopped
1/2 medium onion, finely chopped
1-1/2 cups mayonnaise
1/4 cup sweet pickle relish
3 tablespoons sugar
2 tablespoons dried parsley flakes
2 teaspoons prepared mustard
1 teaspoon salt
1 teaspoon cider vinegar
1/8 teaspoon pepper

Steps:

  • Place potatoes in a large kettle; cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 15-20 minutes. Drain and cool. Cut potatoes into 3/4-in. cubes., In a large bowl, combine the potatoes, eggs, celery and onion. In a small bowl, combine the remaining ingredients. Pour over potato mixture and stir gently to coat. Cover and refrigerate for 6 hours or overnight.

Number Of Ingredients 8

3 lbs small red potatoes (about 25 potatoes) or 3 lbs medium red potatoes, unpeeled and sliced (about 25 potatoes)
1 cup chopped vidalia onions or 1 cup another variety sweet onion
1 cup mayonnaise
1 cup sour cream
8 ounces cream cheese
1 1/2 tablespoons dill
1 teaspoon beau monde seasoning
1 tablespoon chopped fresh parsley

Steps:

  • Wash and slice the potatoes.
  • Boil them with their jackets on for about 20 minutes until they are soft.
  • Rinse them with cold water and set aside.
  • In a large bowl mix chopped Vidalia onion with mayonnaise, sour cream and cream cheese.
  • To this add the dill, Beau Monde seasoning and chopped fresh parsley.
  • Fold all of the ingredients together and add the cooked potatoes.
  • Chill the salad for at least a few hours before serving.
