This Cheesy Broccoli Cauliflower Casserole is the perfect side dish for the holidays or any occasion! Made with tons of fresh veggies and an easy homemade cheese sauce, and baked to comfort food perfection!

10 cups fresh broccoli and cauliflower florets, washed, dried and cut into bite-sized pieces
1 red bell pepper, diced
4 tablespoons unsalted butter
4 tablespoons all purpose flour
2 1/2 cups milk
a pinch of nutmeg
salt and pepper (to taste)
4 cups shredded cheddar cheese
1 cup shredded or grated fresh parmesan cheese
2 1/2 cups dried breadcrumbs
1 teaspoon dried parsley
3 tablespoons melted butter

Steps:

  • Steam the broccoli and cauliflower florets just until bright in colour and only slightly tender (3-4 minutes). Set aside.
  • Preheat the oven to 375 degrees Fahrenheit and grease a large 9-inch by 13-inch baking dish.
  • Heat a medium pot over medium-low heat and add the butter.
  • Melt the butter in the pot and add the flour, whisking constantly for about 1-2 minutes.
  • Slowly pour in the milk, whisking constantly to remove lumps.
  • Add the nutmeg and salt and pepper, whisking to combine.
  • Add the cheeses and stir gently until melted and the cheese sauce is smooth.
  • Add the steamed veggies and the diced red pepper to the bottom of the baking dish, pouring the hot cheese sauce over the top.
  • Stir just a little bit to be sure all the veggies are well coated in the sauce.
  • Mix the breadcrumbs and parsley in a small bowl and sprinkle them evenly over the top of the veggie and sauce.
  • Drizzle the melted butter over top of the breadcrumb topping and bake, uncovered, for 25-30 minutes or until the cheese sauce is bubbling and the topping is golden brown.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup sour cream
1-1/2 cups shredded sharp cheddar cheese, divided
1 can (6 ounces) french-fried onions, divided
2 packages (16 ounces each) frozen broccoli florets, thawed

Steps:

  • Preheat oven to 325°. In a large saucepan, combine soup, sour cream, 1 cup cheese and 1-1/4 cups onions; heat through over medium heat, stirring until blended, 4-5 minutes. Stir in broccoli. Transfer to a greased 2-qt. baking dish., Bake, uncovered, until bubbly, 25-30 minutes. Sprinkle with the remaining cheese and onions. Bake until cheese is melted, 10-15 minutes.

A delicious cheesy white sauce makes these veggies oh so good! I like to mix the two veggies, but you could also use one or the other. Either way, if not a lover of these veggies, you will be after you try them. This delicious dish could be served as a side with just about anything. They were devoured by my family. Enjoy!

3 c each - broccoli & cauliflower florets - steamed just until tender - ( or boil in salted water )
CHEESE SAUCE
2 Tbsp butter
3 Tbsp flour
1/4 tsp each - salt & pepper
pinch nutmeg
1 1/2 Tbsp dried chives
2 c milk
3/4 c sharp cheddar cheese
1/2 c parmesan cheese
TOPPING
1/2 c seasoned panko crumbs
1/2 c shredded cheddar cheese
1 1/2 Tbsp melted butter

Steps:

  • 1. Prepare your vegetables - either by steaming or boiling in salted water. Only cook until tender as they will cook more in oven and you don't want mushy vegetables. In a medium saucepan melt your butter over medium heat. Whisk into the butter your flour and cook for at least a minute, stirring continuously. Whisk in the milk and stir until thickened.
  • 2. Remove from heat and stir in the salt, pepper, chives, nutmeg and cheeses. Stir until cheese is melted. Preheat oven to 375 degree F.
  • 3. Pour 1/3 sauce into a 1 1/2 quart casserole dish. Place the vegetables over the sauce and evenly pour remaining sauce over the vegetables.
  • 4. In a small bowl, mix Panko crumbs with the cheese. Sprinkle evenly over the top of casserole. Drizzle melted butter over the crumbs.
  • 5. Place in oven and bake for 25 minutes or until bubbly and cheese is melted. Serve immediately.

6 ounces fresh cauliflower
6 ounces fresh broccoli
2 tablespoons butter
2 ½ tablespoons all-purpose flour
2 ½ cups milk
1 (8 ounce) package shredded sharp Cheddar cheese
1 teaspoon English mustard
cayenne pepper to taste
salt and pepper to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a medium saucepan with enough water to cover, boil cauliflower and broccoli until tender, about 10 minutes. Drain, and transfer to a medium baking dish.
  • In a separate medium saucepan over low heat, melt butter, and stir in flour. Gradually whisk in milk, and increase heat to medium. As the mixture thickens, whisk in English mustard, cayenne pepper, salt and pepper. Continue whisking until a thick sauce has formed, being careful not to allow the mixture to boil. Sprinkle in 2/3 of the cheese, and stir until melted.
  • Pour sauce over broccoli and cauliflower. Bake in the preheated oven 30 minutes, until bubbly and lightly brown. Sprinkle with remaining cheese during the final 10 minutes of cooking.
