1 (6 ounce) can CONTADINA® Tomato Paste, divided
1 egg
2 teaspoons dried basil, divided
2 teaspoons dried oregano, divided
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon pepper
1 ½ cups fresh bread crumbs*
½ cup grated Parmesan cheese
½ cup golden raisins, coarsely chopped
1 ¼ pounds lean ground beef or ground turkey, 93% lean (not turkey breast)
2 (14.5 ounce) cans CONTADINA® Diced Tomatoes, undrained
1 teaspoon sugar
½ teaspoon salt
Cooked pasta

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with foil; coat with cooking spray.
  • Combine 1/2 can tomato paste, egg, 1 tsp. each basil and oregano, onion powder, garlic powder and pepper in a large bowl. Stir in bread crumbs, Parmesan and raisins.
  • Mix in turkey with hands or a large spoon until mixture is combined well. Shape into 16 meatballs, about 1 1/2-inches in diameter. Bake 20 minutes or until browned and cooked through (165 degrees F internal temperature).
  • Meanwhile, stir together remaining tomato paste, diced tomatoes, 1 tsp. each oregano and basil, sugar and salt in a large saucepan. Bring to a boil; reduce heat and simmer, uncovered, 10 minutes. Add baked meatballs to sauce and simmer 5 minutes for flavors to blend. Serve meatballs and sauce over pasta with Parmesan cheese, if desired.

2 lbs ground turkey
1 cup brown rice, uncooked
1/2 cup celery, finely chopped
1/2 cup green pepper, finely chopped
1 cup red onion, finely chopped
2 1/2 tablespoons parsley, dried
3/4 teaspoon kosher salt
1/2 teaspoon thyme, dried
1/4 teaspoon rosemary, dried
1 teaspoon black pepper
32 ounces campbell's tomato soup, undiluted
2 tablespoons Worcestershire sauce
2 1/2 cups beef broth, hot
28 ounces stewed tomatoes

Steps:

  • Preheat oven to 350 degrees.
  • In a large non-stick skillet cook celery, green pepper, and red onion until just beginning to soften. Add mix to a large bowl and stir in the brown rice, parsley, kosher salt, thyme, rosemary and black pepper. Set aside until cool enough to handle. When cool add ground turkey and work together until well combined and form into 16 evenly sized meatballs.
  • Grease or use cooking spray on large casserole dish and place meatballs gently. In a large bowl add the undiluted tomato soup, worcestershire sauce, hot beef broth, stewed tomatoes and stir well. Pour mixture over meatballs and cover with lid or aluminum foil. Bake for approximately 2 hours and turn meatballs twice during cooking.

This afternoon I was trying to decide what to make for dinner, and suddenly I found myself craving good old porcupine meatballs. But I couldn't make plain meatballs, no sir! Here's the recipe I made up, and it came out wonderfully well. An adult update of one of our childhood favorites. Very tasty!

2 lbs lean ground beef (or 1 pound beef and 1 pound ground turkey)
1 cup uncooked rice (converted rice suggested)
1/2 cup finely chopped onions or 1/4 cup dried onion flakes
2 eggs, beaten
2 tablespoons Worcestershire sauce
2 teaspoons Dijon mustard
2 teaspoons salt, divided
1/2 teaspoon garlic powder
1 (10 3/4 ounce) can condensed cream of mushroom soup
3/4 cup water
1/2 cup vodka (or an additional 1/2 cup water)
1/8 teaspoon white pepper
1/4 teaspoon ground caraway powder (see note below)

Steps:

  • Combine the beef, rice, onion, egg, Worcestershire sauce, mustard, 1 1/2 teaspoon salt, and garlic powder in mixing bowl.
  • Form into 1 1/2-inch balls and place in a lightly-buttered 2 1/2-quart casserole.
  • Combine soup, water, vodka, remaining 1/2 teaspoon salt, white pepper, and ground caraway in a saucepan; bring to a boil.
  • Pour sauce over meat balls, cover, and bake at 350 degrees F for 1 hour.
  • Makes 6 servings.
  • Note: To make caraway powder, use a mortar and pestle to crush caraway seed into powder. Also, don't use a pearl or other thick rice for this, or it won't cook well inside the meatballs - converted rice (not "instant") is what I use.

4 cups tomato juice
2 teaspoons chili powder
1/4 teaspoon allspice
1/2 teaspoon celery seed
1 teaspoon Worcestershire sauce
1 teaspoon brown sugar
2 lbs lean ground beef
1/2 cup rice, uncooked
1/2 cup onion, chopped fine
1/2 cup green pepper, chopped fine
1/2 cup celery, finely chopped
1 egg, beaten
2 teaspoons prepared mustard
1 1/2 teaspoons salt
1 1/4 teaspoons black pepper

Steps:

  • Combine tomato juice, chili powder, allspice, celery seed, Worcestershire sauce, and brown sugar in a medium saucepan.
  • Mix well and simmer for 10 minutes.
  • Meanwhile, combine the rest of the ingredients, mix well, and form 1/4 cup of the meat mixer into meatballs ( or I use a large cookie scoop) and place them in a 9 x 13 baking dish.
  • Pour the sauce over the top of the meatballs, cover and bake at 350 degrees for 1 hour.

What an easy recipe, and only 4 ingredients. This was on the cover of the newest issue of Kraft's "What's Cooking" magazine. I did add minced garlic and some Italian seasoning....just couldn't help myself :) I baked the meatballs on a rack to eliminate excess fat. Two sauce options were given as serving suggestions. I have listed them in the instructions so that they will not interfere with the nutritional values of the meatballs. These are terrific for freezing, making future meals even faster.

2 lbs ground beef, extra lean
1 (120 g) package Stove Top stuffing mix
1 cup water
2 eggs

Steps:

  • Preheat oven to 400*F. Line 2 large pans with foil. Spray pan and rack (if using) with cooking oil.
  • Mix together all ingredients, and form into 32, 1-1/2" balls.
  • Place meatballs on the pan (or rack if using) and bake for 16 - 18 minutes, or until done. (160*).
  • Tomato-Basil Cream Sauce:.
  • Mix 1-1/2 cups pasta sauce, 1/4 cup light cream cheese spread, and 2 tbsp chopped fresh basil in a large skillet. Cook on medium-low heat for 3 minutes or until heated through, stirring occasionally. Add 16 hot meatballs and stirr to evenly coat. Sprinkle with 1/4 cup grated Parmesan cheese before serving.
  • Creamy Brown Gravy:.
  • Mix 1 cup beef gravy, 1/4 cup light cream cheese spread and 2 tbsp chopped fresh parsley in a large skillet. Continue with the directions as given for the tomato basil sauce, omitting the Parmesan.

This is a Company's Coming recipe and one I have been making since 1989...yes, I marked the recipe and gave it 5 stars. It is delicious and we love it. I am making tonight for dinner so thought I'd post...will take a pic and post it later.

1/2 c milk or water
1 c rolled oats
1/2 c chopped onion
1 tsp salt
1/4 tsp pepper
1 tsp chili powder
1/4 tsp garlic powder
1 1/2 lb ground beef
SAUCE
3/4 c ketchup
3/4 c brown sugar
2 tsp liquid smoke
1/4 tsp garlic powder
1 tsp worcestershire sauce

Steps:

  • 1. Beat egg with spoon in a large bowl. Add the next ingredients. Mix thoroughly and shape into meatballs. Place in a large baking dish or sided baking sheet large enough for a single layer.A roasting pan works good too.
  • 2. Combine sauce ingredients and pour over meatballs. Bake covered in 350 oven for 1 hour. Serve over steamed rice with a nice green salad.
