We still can't settle on our favorite salsa, but, honestly, why bother? There are so many fantastic options! We love trying them all in this twist on classic meat loaf. You can make these loaves ahead, and they'll last for a few days-perfect for meat loaf sandwiches topped with a little Monterey Jack cheese. -Tasha Tully, Owings Mills, Maryland

3/4 cup uncooked instant brown rice
1 can (8 ounces) tomato sauce
1-1/2 cups salsa, divided
1 large onion, chopped
1 large egg, lightly beaten
1 celery rib, finely chopped
1/4 cup minced fresh parsley
2 tablespoons minced fresh cilantro
2 garlic cloves, minced
1 tablespoon chili powder
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 pounds lean ground beef (90% lean)
1 pound ground turkey
1/2 cup shredded reduced-fat Monterey Jack cheese or Mexican cheese blend

Steps:

  • Preheat oven to 350°. Cook rice according to package directions; cool slightly. In a large bowl, combine tomato sauce, 1/2 cup salsa, onion, egg, celery, parsley, cilantro, garlic and seasonings; stir in rice. Add beef and turkey; mix lightly but thoroughly., Shape into two 8x4-in. loaves in a greased 15x10x1-in. baking pan. Bake until a thermometer inserted in center reads 165°, 1 to 1-1/4 hours., Spread with remaining salsa and sprinkle with cheese; bake until cheese is melted, about 5 minutes. Let stand 10 minutes before slicing., Freeze option: Bake meat loaves without topping. Securely wrap and freeze cooled meat loaf in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaves; place in a greased 15x10x1-in. baking pan. Reheat in a preheated 350° oven until a thermometer inserted in center reads 165°, 40-45 minutes; top as directed.

1 teaspoon smoked Spanish paprika

1/2 cup evaporated milk or 2 egg whites mixed with 2 teaspoons water
6 tilapia fillets (1 1/2 lb)
Cooking Spray
4 slices smoked thick-sliced bacon, crisply cooked, crumbled
2 avocados, pitted, peeled and chopped
2 cups diced seeded tomatoes (about 2 large)
1/3 cup chopped red onion
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Heat oven to 375°F. Spray 15x10x1-inch baking pan with cooking spray.
  • In shallow dish, mix Bisquick mix, salt, paprika, chile powder and lemon-pepper seasoning. In another shallow dish, place evaporated milk. Dip fillets in milk, then coat with seasoned Bisquick mixture (discard any remaining mixture). Place fillets in baking dish. Spray tops of fillets with cooking spray to moisten.
  • Bake uncovered 15 to 20 minutes or until fish flakes easily with fork. Meanwhile, in large bowl, mix all salsa ingredients. Let stand 10 to 15 minutes. Stir well; taste and adjust seasoning as needed.
  • To serve, place fish on warm plates and top each fillet with 1/2 cup of salsa.

1 green, red, yellow or purple bell pepper
4 large ripe tomatoes, cored, seeded, diced
1 medium onion, diced
2 hot peppers (jalapeno or serrano) minced
1 bunch cilantro, chopped
5 green onions, sliced into 1/8" rings
1/4 c olive oil
1/3 c red wine vinegar
green onions, sliced into 1/8" rings
1 tsp freshly ground black pepper
1-2 Tbsp chili powder

  • 1. In a medium mixing bowl with a cover, stir together garlic, peppers, tomatoes, onion, hot peppers, cilantro and green onions.
