Steps:
- Place all ingredients except the cones and chocolate chips in a medium bowl. Using an electric mixer, beat on high until mixture is fully combined and fluffy. Fold in half of the chocolate chips.
- Carefully transfer mixture to a large plastic bag, squeezing it down toward one bottom corner of the bag. Snip that corner off with scissors, so that you have a makeshift piping bag.
- Gently squeeze the ricotta mixture into the cones, evenly distributing it among them.
- Sprinkle the remaining chocolate chips evenly on top of the filling in each cone.
- Eat and enjoy!

CINNAMONLICIOUS FRENCH TOAST (HUNGRY GIRL ) 3 WW POINTS!
I really like this. It is quick and easy to make and really good! I used weight watcher wheat bread because it meets the requirements for her recipe. This 3 slice of bread serving is very filling! I think next time I will just eat the two pieces and maybe a piece of fruit or yogurt, I ate mine just the way the recipe states but, she says to feel free to serve it with sugar free maple syrup, sugar-free preserves, fresh berries, and/ or a squirt of fat-free whipped cream. You can also cut these into sticks if y ou wish. just cut the bread into srtips before dipping into the egg wash.Enjoy! *THIS would not let me add 1 packet of splenda or no-calorie sweetener! so dont forget it, you will need it at the end! :)

- In a medium pot, combine cranberries, Splenda, and sugar with 1 3/4 cups water. Set stove to medium heat, cover pot, and bring to a boil.
- Once boiling, reduce to a simmer and continue to cook for 10 minutes, uncovering to stir occasionally. Meanwhile, in a small dish, combine gelatin with 1/4 cup cold water, stir well and set aside.
- Turn off heat and stir in gelatin mixture, stirring until dissolved and thoroughly combined. Stir in cinnamon and apples and mix well. Transfer mixture to a bowl, and refrigerate for at least 5 hours (overnight is best).
- Once chilled and set, remove mixture from the fridge and give it a good stir. Drain juice from the can of orange segments. Roughly chop orange segments and drain any excess liquid from them. Slightly crush almonds so that they break into smaller pieces. Add chopped orange segments and almond pieces to the cranberry sauce, and mix thoroughly. Serve with lean turkey, pork, or chicken, or anything else you like cranberries with!

These cupcakes are absolutely darling. I found the recipe in a cupcake cookbook a couple of years ago. They are perfect for little girl birthday parties (and even older girl birthday parties as my adult friends also love them!). They are tangy and sweet and not too dense. I often make bite-size ones in my mini cupcake pan. Reduce the baking time if making minis or they will dry out.

- Pre heat oven to 350°F.
- In a small bowl, mix together flour, baking powder, baking soda and salt.
- In a large bowl, whisk together sugar, oil, egg whites and lemonade concentrate until smooth.
- Alternately beat in flour mixture and buttermilk, making three additions of flour mixture and two of buttermilk, beating just until smooth.
- Add enough food colouring to turn batter light pink.
- Scoop batter into paper lined muffin pans.
- Bake for 20-25 minutes or until tops of cupcakes spring back when lightly touched.
- Let cool in pan on rack for 10 minutes.
- Remove cupcakes from pan and let cool completely on rack.
- To make the frosting: In a bowl, using and electric mixer on low speed, beat together sugar, butter and salt until creamy.
- Increase speed to high and beat until light and fluffy.
- Add lemonade concentrate, lemon extract, beat 1 minute.
- Add cream, beat until frosting is smooth and fluffy. If you would like stiffer or sweeter frosting you can add more sugar at this stage 1/4 cup at a time until desired consistency is reached.
- Pipe or spoon frosting onto completely cooled cupcakes.
