Crumb-Topped Salmon with Cucumber Salad image

Crunchy, zesty and flavorful, a freshly made cucumber salad is the ideal accompaniment to cracker crumb-crusted salmon fillets.

4 skinless salmon fillets (1 lb.)
1 Tbsp. lemon juice
1/4 cup KRAFT Real Mayo
2 Tbsp. KRAFT Grated Parmesan Cheese
1/8 tsp. ground red pepper (cayenne)
10 round buttery crackers, crushed (about 1/2 cup)
1 cup thinly sliced cucumbers
1/4 cup thinly sliced red onions
2 Tbsp. KRAFT Zesty Italian Dressing
1/2 tsp. dill weed

Steps:

  • Heat oven to 400°F.
  • Place fish in 13x9-inch baking dish; drizzle with lemon juice. Mix mayo, cheese and red pepper; spread over fish. Sprinkle with cracker crumbs.
  • Bake 12 to 14 min. or until fish flakes easily with fork. Meanwhile, combine remaining ingredients.
  • Serve fish with vegetable mixture.
