SARASOTA'S SUPREME SMOKY SCALLOPED POTATOES & HAM
The best way I know to use up Holiday ham. Now I cook ham all the time, almost once every 6 weeks or less, so I love to keep bags of chopped ham in my freezer. There are so many great uses and this is one. I love to use a smoky gouda for this and a little bacon and onion which just takes this dish over the top. Otherwise it is a pretty basic scalloped potato recipe. Give it a try for dinner one night. I serve this with a fresh salad and nothing more. It is rich, deep in flavors and a perfect way to use up some of that ham in the freezer.

- Bacon -- In a small sauce pan, heat to medium and add the bacon and saute slowly, not butter or oil needed. Just go slowly and crisp until golden brown and crisp. Remove the bacon to a plate lined with a paper towel to drain.
- Onions and Celery -- Now in the same pan with the bacon drippings (just keep 1 teaspoon of the drippings), you don't need any more. Just toss out any additional drippings. Saute your onion and celery until tender. It should take around 4-5 minutes if that on medium heat. Add the bacon and a little salt and pepper and set to the side.
- Ham and Potatoes -- Just have them thin sliced and diced and ready to go.
- Sauce -- In a medium size pot, medium heat, add the butter and melt. Add in the flour and mix well to combine. Cook on medium low until the butter and flour are well combined. Slowly add in the milk and cream while stirring constantly as well as the salt/pepper and cayenne. Stir well and cook on medium heat until the sauce begins to thicken. Add in the cheese (gouda and cheddar) stir until melted. If the sauce is a bit thick, just add a little more milk. I like happen to like mine thick, but my Mom always liked them a bit thinner, so I always added a little more milk when I made it for her. That is just personal taste.
- Casserole -- Spray a 13x9" or any similar casserole dish with non stick spray. Layer 1/3 potatoes, 1/2 the vegetables, 1/2 the ham, 1/2 the cheese sauce; then repeat. Top with potatoes and the remaining 1/2 cup cheese and a sprinkle of paprika for the topping.
- Bake -- I bake mine in a 350 oven for 30 minutes, covered with foil, then uncover and cook another 20-30 minutes until bubbly and golden brown.
CHEESY SCALLOPED POTATOES AND HAM

- Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
- Melt butter in a large skillet over medium heat. Add onion; cook and stir until starting to soften, 3 to 4 minutes. Sprinkle flour over onion and whisk together. Cook until golden brown, about 2 minutes. Stir in half-and-half and milk; whisk until thickened, 3 to 4 minutes more. Remove from heat; season sauce with salt and pepper. Add garlic powder, Worcestershire sauce, onion powder, and paprika.
- Place half the sliced potatoes into the baking dish; top with half the chopped ham. Sprinkle half the Cheddar cheese and half the Monterey Jack cheese on top. Pour in half the sauce from the skillet. Repeat layering the remaining potatoes, ham, cheeses, and sauce, ending with a layer of cheese and sauce. Cover dish with aluminum foil.
- Bake in the preheated oven for 40 minutes. Remove the foil and bake until the cheese on top is golden and sauce is bubbling, 20 to 30 minutes more.

I sometimes make this when we are going to a big cookout, or for hubby's work "luncheons". I do tend to only make 2 casseroles, but the original recipe makes four, and I decided to include it here.

- Preheat oven to 325. In 2 large bowls, combine soups and milk. Add potatoes and ham;toss to coat. Dived among four greased 13x9 inch baking dishes.

- Preheat oven to 375°. In a large saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, parsley, salt, thyme and pepper until smooth. Gradually add milk; bring to a boil. Cook and stir for 2 minutes. , Combine potatoes, ham and onion; place half in a greased 2-1/2-qt. baking dish. - Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Bring a large pot of water to a boil. Add sliced potatoes and cook until almost tender, 5 to 10 minutes. Transfer to a colander and rinse with cold water until cool enough to handle. Drain well.

- Heat oven to 350°. Spray 1 1/2-quart casserole with nonstick cooking spray. Melt margarine in 1 1/2-quart saucepan over medium heat. Stir in flour, mustard, salt and pepper. Cook, stirring constantly, until margarine is absorbed. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
- Layer one-third of the potatoes, half of the ham, half of the onion and one-third of the sauce in casserole; repeat. Top with remaining potatoes and sauce. Cover and bake 30 minutes. Uncover and bake about 40 minutes longer or until potatoes are tender. Let stand 5 to 10 minutes before serving.
