SLOW COOKED BRISKET WITH BROWN SUGAR, CARROTS AND GREMOLATA

Slow Cooked Brisket with Brown Sugar, Carrots and Gremolata image

There are two distinct parts of brisket, the first and second cuts. The first cut is very lean, and the second loaded with beautiful (fat) marbling. This makes cooking a "whole" brisket a felony. It's like cooking a small and large potato in the same oven, for the same amount of time, and expecting them both to be perfectly cooked. Brisket falls under the category of "butcher's cuts" that were prized and taken home more by the butcher than the customers. That said, adjust your cooking time for slightly shorter with the leaner pieces and slightly longer with the more "marbled" ones. This is a simple recipe with a good thickening trick at the end-and don't be scared: gremolata is just a fancy word for garlic, parsley and lemon...

Time 4h20m

Yield 6 to 8 servings

Number Of Ingredients 17

One 3- to 4-pound second-cut or point-cut brisket, preferably in one piece
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
3 large shallots, sliced lengthwise
12 large cloves garlic
1 pound small carrots, halved lengthwise
1/4 cup dark brown sugar
1/4 cup red wine vinegar
5 cups beef stock
2 tablespoons mayonnaise
3 tablespoons grainy mustard
2 teaspoons coriander seeds, lightly crushed
1 teaspoon plus 2 tablespoons extra virgin olive oil
1 cup flat-leaf parsley leaves, stemmed
2 large cloves garlic, minced
Zest and juice from 1 large lemon
Kosher salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the brisket: Tie the circumference of the brisket with butcher's twine. In a large Dutch oven or other wide heavy pot, heat the oil over medium-high heat. When the oil begins to smoke lightly, sprinkle both sides of the brisket with salt and pepper. Use metal tongs to add the meat to the pot. If the oil is hot enough, the meat won't stick. Cook, undisturbed, on its first side, until browned, 3 to 5 minutes. Turn on the other side and brown, 3 to 5 additional minutes. Remove the meat from the pot and place it on a baking sheet.
  • Cook the vegetables: Lower the heat to medium. In the same pot add the shallots, garlic and carrots and sprinkle them with another pinch of salt. Brown for 3 to 5 minutes. Stir in the sugar and vinegar and simmer over very low heat until the liquid reduces and starts to coat the carrots, 3 to 5 minutes. Pour the vegetables and cooking liquid into a bowl.
  • Cook the meat: Return the brisket to the pot and add the beef stock. Bring the stock to a gentle simmer. Cover, then place the pot in the center of the oven and cook for 1 hour. Remove the pot from the oven and add the vegetables and their liquid back in. Return the pot to the oven, uncovered, and cook until the meat is tender when pierced with a fork, an additional 1 to 2 hours. (If the meat looks dry or begins to get overly browned, cover the pot with the lid or a layer of aluminum foil for the remaining oven time.)
  • Make the gremolata: In a small skillet, toast the coriander seeds in 1 teaspoon olive oil until lightly colored and fragrant. Meanwhile, in a small bowl, combine the parsley, garlic, lemon zest and juice and a generous pinch of salt. Add the coriander seeds warm, straight from the skillet. Add the remaining 2 tablespoons olive oil, then stir and set aside.
  • Finish: Remove the pot from the oven and allow it to rest for 10 to 15 minutes. Meanwhile, blend half the cooking liquid and half of the remaining vegetables in a blender until smooth, then pour back into the pot. Whisk in the mayonnaise and mustard. Taste for seasoning. Slice the meat against the grain. (It should be fork-tender without being dry.) Transfer the meat and the remaining vegetables to a serving platter Pour the sauce over the meat. Serve with the gremolata.

SARASOTA'S CROCK POT BRISKET WITH LOTS OF "VEGGIES"

Sarasota's Crock Pot Brisket With Lots of

I love this recipes because you add lots of sweet potatoes, parsnips, crimini mushrooms, onions, white potatoes, and some turnips which I love. But you have the option to use whatever you enjoy This slow cooks and the sweetness of the brown sugar and maple syrup make this a perfect flavor for this brisket. I like to rub the marinade over the brisket and let it work overnight, then in the morning, add the sauce and add the cut vegetables to the sides of the brisket and turn on low for 10-12 hours. If you need it done quicker 7-8 on high heat. Either way it cooks and will fall apart. Serve this with a fall salad with walnuts, bleu cheese, and a nice honey vinaigrette. Very traditional, but I love it with fall roasts and of course some good crusty bread.

Time 10h10m

Yield 8 serving(s)

Number Of Ingredients 21

3 1/2 lbs beef brisket
2 tablespoons brown sugar
1 tablespoon maple syrup
1 teaspoon ground mustard
2 tablespoons minced garlic
1 teaspoon chili powder
2 teaspoons Worcestershire sauce
2 teaspoons black pepper
1 teaspoon kosher salt
1 (15 ounce) can tomato sauce
1/4 cup barbecue sauce
1/4 orange juice
2 bay leaves
1 teaspoon oregano
1 teaspoon dried parsley
4 medium red potatoes, cut in quarters
2 large sweet potatoes, peeled and cut in large 2-inch cubes
1 large onion, rough chopped
2 parsnips, peeled and cut in 1-inch pieces
1 turnip, peeled and rough chopped
10 cremini mushrooms, stems removed (if small left whole, if larger, cut in half)

Steps:

  • Marinade -- I mix all the marinade ingredients and rub over the brisket. Place in the crock pot, cover and put in the refrigerator overnight.
  • Prepare the vegetables -- Now I prepare mine the night before and put in a large baggie so in the morning all I have to do is add them to the crock pot.
  • NOTE: Amounts of the vegetables are not specific. Add what you like. I usually use this amount which works just fine. You can more or less of one particular vegetable accordingly to your taste.
  • In the morning -- Just take out the crock pot and let it set for 15 to 30 minutes before you turn the crock pot on. Then add the vegetables to the sides of the meat and then the tomato/BBQ sauce mixed with the orange juice and seasoning over the meat. Then cover and set it in the crock pot and turn on high. Eight (8) hours later it is done on high. Or you can let it go 10-12 hours which is just as good on low.
  • Enjoy -- I love to serve with a good Fall salad and crunchy bread.

BRISKET

Brisket image

I think the slow cooker was invented with brisket in mind. This sweet and savory version is perfection itself, melting in your mouth. It's very important to buy a "first-cut" or "flat-cut" brisket, which has far less fat than other cuts.

Yield Makes 8 servings

Number Of Ingredients 19

4 Idaho potatoes, peeled and cut into 1/2-inch slices
2 tablespoons vegetable oil
1 (5- to 6-pound) first-cut or flat-cut brisket
2 large onions, peeled and cut into 1/4-inch slices
4 garlic cloves, peeled and minced
1 (12-ounce) can beer
1/2 cup low-sodium beef broth
4 celery stalks, cut into 1/2-inch slices
1/2 cup tomato paste
1 (14 1/2-ounce) can stewed tomatoes
2 bay leaves
1/2 cup packed dark brown sugar
1/3 cup Dijon mustard
1/2 cup red wine vinegar
1/4 cup regular molasses
1/3 cup soy sauce
1 teaspoon paprika
Salt and freshly ground black pepper to taste
N/A freshly ground black pepper

Steps:

  • Lay the potatoes across the bottom of the insert of the slow cooker.
  • Heat 1 tablespoon of the oil in a large sauté pan over medium-high heat. Brown the brisket well on all sides. Place the browned meat in the slow cooker insert. Add more oil, if needed, and sauté the onions until soft, about 4 minutes. Add the garlic and cook 2 minutes more. Scrape the vegetables into the insert.
  • Pour the beer and broth into the sauté pan and bring to a boil, scraping up the meat bits in the pan with a wooden spoon. Pour over the meat. Add the celery, tomato paste, stewed tomatoes, bay leaves, brown sugar, mustard, vinegar, molasses, soy sauce, and paprika to the insert. Cover and cook for 8 hours on LOW or 5 to 6 hours on HIGH, or until the meat is fork-tender.
  • Remove the meat to a cutting board and slice it thinly against the grain. Skim any fat from the cooking liquid, discard the bay leaves, taste for seasoning, and add salt and pepper. Transfer the meat and potatoes to a serving platter or serve them on individual plates. Spoon the cooking liquid on top or on the side.
