Chicken breast simmered with onion, bell pepper, tomatoes, soy sauce, and spices to be served with a rich, pepper steak style gravy. If you like the taste of pepper steak but really don't enjoy red meat, try it with chicken!

1 tablespoon vegetable oil
4 boneless, skinless chicken breasts
1 teaspoon seasoning salt
½ teaspoon onion powder
2 teaspoons minced garlic
½ cup soy sauce, divided
1 large onion, cut into long slices
2 tablespoons cornstarch
2 ½ cups water
1 green bell pepper, sliced
4 roma (plum) tomatoes, seeded and chopped

Steps:

  • Heat oil in a large skillet over medium heat. Season chicken with salt and onion powder, and place in skillet. Cook for about 5 to 7 minutes, then add the garlic, 4 tablespoons soy sauce, and half of the sliced onion. Cook until chicken is no longer pink, and the juices run clear.
  • Dissolve cornstarch in water in a small bowl, and blend into the chicken mixture. Stir in 4 tablespoons soy sauce, bell pepper, tomatoes, and remaining onion. Simmer until gravy has reached desired consistency.

1-1/2 pounds beef top round steak
2 tablespoons canola oil
1 cup chopped onion
1/4 cup reduced-sodium soy sauce
1 garlic clove, minced
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon pepper
4 medium tomatoes, cut into wedges or 1 can (14-1/2 ounces) diced tomatoes, undrained
1 large green pepper, cut into strips
1 tablespoon cornstarch
1/2 cup cold water
Hot cooked noodles or rice

Steps:

  • Cut beef into 3x1-in. strips. In a large skillet, brown beef in oil. Transfer to a 3-qt. slow cooker. Combine the onion, soy sauce, garlic, sugar, salt, ginger and pepper; pour over beef. Cover and cook on low until meat is tender, for 5-6 hours. Add tomatoes and green pepper; cook on low until vegetables are tender, about 1 hour longer., Combine cornstarch and cold water until smooth; gradually stir into slow cooker. Cover and cook on high until thickened, 20-30 minutes. Serve with noodles or rice. Freeze option: Freeze cooled beef mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring gently. Add a little broth or water if necessary.

Very tender and flavorful, this recipe is one of our family's favorites. It's great to make ahead of time in the slow cooker and then serve over rice, egg noodles, or chow mein.

2 pounds beef sirloin, cut into 2 inch strips
garlic powder to taste
3 tablespoons vegetable oil
1 cube beef bouillon
¼ cup hot water
1 tablespoon cornstarch
½ cup chopped onion
2 large green bell peppers, roughly chopped
1 (14.5 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce
1 teaspoon white sugar
1 teaspoon salt

Steps:

  • Sprinkle strips of sirloin with garlic powder to taste. In a large skillet over medium heat, heat the vegetable oil and brown the seasoned beef strips. Transfer to a slow cooker.
  • Mix bouillon cube with hot water until dissolved, then mix in cornstarch until dissolved. Pour into the slow cooker with meat. Stir in onion, green peppers, stewed tomatoes, soy sauce, sugar, and salt.
  • Cover, and cook on High for 3 to 4 hours, or on Low for 6 to 8 hours.

I love pepper steak, but sometimes I wish it was chicken rather than steak -- just a bit lighter. So I made chicken "pepper steak." Same flavors, same ingredients, just chicken vs. steak. Cooked right in the crock pot while you worked, and it took no time. Serve over Jasmine, or your favorite rice and a nice crisp cucumber salad with rice wine vinegar or a fresh fruit salad. A baguette cut into thin slices is a must to soak up some of the great sauce. It cooks in approximately 4 hours in the crock pot and then done. Make your rice, toss a quick salad and serve.

4 -6 cups jasmine rice, cooked (any white rice will work fine for this dish)
1 1/4 lbs chicken, thighs and breasts, boneless skinless and thin sliced
2 tablespoons cornstarch (for coating the chicken)
1 very large onion, cut in quarters and thin sliced
1 large red bell pepper, thin sliced
1 large yellow bell pepper, thin sliced
1 large green pepper, thin sliced
1 large orange bell pepper, thin sliced
2 cups button mushrooms, thin sliced
1 (14 ounce) can diced tomatoes
1 cup chicken broth
1/4 cup sherry wine
1/3 soy sauce (you can also serve some on the side as a garnish if you want more flavor)
3 teaspoons minced garlic
1 tablespoon fresh ginger, grated
1 teaspoon Worcestershire sauce
2 tablespoons brown sugar
salt (go easy, soy is salty)
pepper
chow mein noodles

Steps:

  • Crockpot -- This is so easy. In a large baggie, add the corn starch and all the chicken and toss well until all the chicken is completely coated.
  • Shake the excess cornstarch off and add the chicken to the crock pot. Then add in the onions, peppers, and mushrooms on top.
  • In a medium bowl, add the tomatoes, broth, sherry, soy, garlic, ginger, worcestershire sauce, brown sugar, pinch of salt (go easy) and 1/2 teaspoon pepper. Mix well and pour over the chicken, pepper and onions.
  • Turn on low for about 4-5 hours. Boneless chicken breasts and thighs don't take too long. Now I wish I could give you an exact time. My crockpot took 4 hours My small one took 5. I did stir once during cooking but it is not necessary.
  • Note -- If you like yours a bit thinner, add a little extra chicken stock if you want. Before serving, check for any additional seasoning - salt and pepper if necessary.
  • Rice -- Cook according to package directions. Approximately 1-1/2 cups cooked rice per person.
  • Serve -- I serve a nice helping of rice per person and top with the Chicken Pepper Steak and then some of the chow mein noodles for a little crunch.
  • Just a nice easy dish. ENJOY!
