Sandy's Homemade Broccoli and Cheddar Soup image

I found many recipes for broccoli Cheddar soup. I changed many of the ingredients in those recipes. This is the recipe I came up with. It's the best one yet. You don't need all the extra ingredients to make it. Just basic ingredients. and it's delicious. I think it tastes just like Panera®.

3 tablespoons butter
¼ small onion, chopped
2 tablespoons all-purpose flour
1 cup half-and-half
1 ½ cups chicken broth
salt and ground black pepper to taste
2 cups chopped broccoli
1 carrot, chopped
1 celery stalk, chopped
1 ¼ cups shredded mild Cheddar cheese

Steps:

  • Melt butter in a stock pot over medium-high heat; add onion and saute until tender, 3 to 4 minutes. Whisk in flour and continue to stir until mixture turns golden brown, about 5 minutes. Slowly add half-and-half to onion mixture, stirring until mixture is smooth. Add chicken broth; season with salt and ground black pepper.
  • Reduce heat to medium-low and simmer mixture until thickened, about 10 minutes. Add broccoli, carrot, and celery. Simmer until vegetables are tender yet crisp, about 20 minutes.
  • Reduce heat to low. Add Cheddar cheese to soup and cook, stirring occasionally, until cheese melts, about 5 minutes.

This is so easy with amazing results. A mildly spiced summer sausage made with mustard seed and black pepper. It's great for snacks with chunks of cheese on the side.

2 tablespoons mustard seed
1 tablespoon garlic powder
2 tablespoons liquid smoke flavoring
2 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
1 teaspoon coarse ground black pepper

Steps:

  • In a large bowl, mix together the ground beef, mustard seed, garlic powder, liquid smoke, curing salt, and pepper using your hands. Form into two equal logs, and wrap each one in aluminum foil with the shiny side facing the meat. Refrigerate for 24 hours.
  • Preheat the oven to 325 degrees F (165 degrees C). Poke small holes through the aluminum foil in the bottom of the meat rolls using a toothpick. Place on a broiler rack and fill the broiler pan with 1/2 inch of water.
  • Bake for 90 minutes in the preheated oven. Cool slightly, then refrigerate for 12 hours before unwrapping and serving.

8 (6 ounce) chicken cutlets
1 teaspoon salt
½ teaspoon black pepper
16 large fresh sage leaves
16 thin slices prosciutto
3 tablespoons olive oil
1 cup dry white wine
1 cup low-sodium chicken broth
½ stick butter

Steps:

  • If cutlets are thick, lay them between 2 sheets of wax paper and pound to 1/2-inch thickness with flat side of a meat mallet or bottom of a small, heavy skillet. Sprinkle with salt and pepper. Put 2 large (or 5 small) sage leaves on top of each cutlet, then wrap 2 slices of prosciutto crosswise around each cutlet, holding sage in place.
  • Heat 1 1/2 tablespoons oil in a large skillet over medium heat. Add 4 cutlets and cook until no longer pink in the center and the juices run clear, about 2 minutes per side. Transfer to a platter; tent with foil to keep warm. Repeat with remaining 1 1/2 tablespoons oil and remaining 4 cutlets.
  • Add wine to skillet and simmer, scraping up any browned bits, 1 minute. Add broth and simmer until slightly reduced, 4 to 5 minutes. Remove from heat, add butter, and swirl skillet until butter has melted and sauce is creamy. Spoon 2 tablespoons sauce over each cutlet and serve.

The "Bishop of Bivalves" suggests the Royals from Vancouver Island for his renowned Oysters Rockefeller recipe, perfect for a holiday appetizer, and one of the signature dishes of the historic seafood restaurant "below sea level" at Grand Central Terminal. Scott Conant featured this dish on the Food Network's The Best Thing I Ever Ate, calling it "old-school cooking at its best." As he says, every component needs to be perfect.

24 oysters
1 lb frozen chopped spinach, defrosted
white wine
1 pinch ground nutmeg
1 pinch kosher salt
6 egg yolks
1 tablespoon dry white wine
1 1/2 cups clarified butter
2 tablespoons lemon juice
12 dashes Tabasco sauce (or to taste)
1/4 teaspoon kosher salt

Steps:

  • Position an oven rack in the top position and heat the broiler. Remove the (Royal Miyagi) oysters from their shells. Oysters should be on the half shell.
  • Arrange the shells on a rimmed baking sheet and spread 1 heaping tablespoon of the creamed spinach into each shell. (You'll have some spinach left over.) Set the oysters on top of the spinach. Broil until the oysters are just starting to ruffle, about 1 minute. Remove from the broiler and nap each oyster with about 1 tablespoon hollandaise sauce. Broil until the sauce browns, 1 to 1 1/2 minutes.
  • Using tongs, divide the oysters among 4 dinner plates and serve.
  • Creamed Spinach.
  • Place the spinach in a clean kitchen towel and squeeze out the excess liquid.
  • Transfer the spinach to a large skillet over medium heat and cook, stirring often, until the spinach is warm. Stir in the vin blanc sauce, then season with nutmeg and salt and stir again. Keep the spinach warm until you serve it.
  • Hollandaise Sauce.
  • Put the egg yolks and wine in a large stainless steel bowl set over a pot of simmering water. The bowl should not touch the water. Whisk vigorously until the yolks are light and tripled in volume. The consistency will be like a pudding, and the yolks will make a ribbon that sits on the surface for 3 seconds when you lift the whisk. Be careful not to scramble the eggs as you whisk; make sure to whisk along the sides of the bowl, and take the bowl off the heat periodically.
  • Set the bowl on the counter-on a damp kitchen towel to keep it steady-and whisk in the butter in a very slow, steady stream. Don't add the butter too quickly, or the sauce will break. Once all the butter is added, whisk in the lemon juice, Tabasco, and salt.
  • Keep the sauce warm until you're ready to serve it.

1 cup unsalted butter, softened
1 cup sugar
1 lemon, zested and juiced
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
8 to 10 drops each food coloring in 2 different colors

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, beat the butter and sugar on medium-high speed with an electric mixer until fluffy, about 3 minutes. Add the lemon zest and juice and mix well. In a separate medium bowl, combine the flour, baking soda, and salt. Gradually add the flour mixture to butter mixture and mix to combine. Shape into a log and wrap in heavy-duty plastic wrap. Refrigerate until firm, at least 2 hours.
  • Divide the sugar between 2 small resealable plastic bags. Add 8 to 10 drops of 1 color of food coloring to each bag. Shake vigorously to distribute and color the sugar. Put the colored sugar into 2 separate plates.
  • Slice the log into 1/2-inch thick rounds. Dip the cookies on 1 side into the sugar, making 12 of each color. Arrange the cookies on baking sheets, spacing evenly, and bake until lightly browned, about 12 to 15 minutes. Remove from the oven, allow to cool slightly, then remove the cookies from the pans. Cool completely on wire racks before serving.

2/3 cup milk or 2/3 cup buttermilk
1/8 cup oil or 1/8 cup bacon drippings

Steps:

  • Blend above ingredients in a mixing bowl.
  • Dump a hand full of flour on a pastry cloth or whatever.
  • A brown paper sack also works.
  • Newspaper also works just fine.
  • Dump the blended dough onto the flour.
  • Pour a dash of oil into your skillet and smear it around with your fingers.
  • Coat the inside of the skillet and the palms of your hands with oil.
  • Knead the dough for about 30 seconds, rolling it in the flour and thickening it.
  • Halve the dough.
  • Halve it again, making 4 pieces of dough.

  • Use a spoon or a pastry brush and put a little oil or bacon drippings on the top of each unbaked biscuit.

1/2 cup chopped onion

1 can (15 ounces) pizza sauce
1 can (4 ounces) chopped green chiles
4 teaspoons chili powder

6 chicken bouillon cubes
10 ounces angel hair pasta (break up in pieces)
2 (10 ounce) broccoli, pkg frozen chopped
6 cups milk
32 ounces Velveeta cheese, cut up

Steps:

  • Saute onion in butter, add water and bouillon cubes and bring to a boil. Add noodles and cook until almost done.
  • Add frozen broccoli and cook about 5 more minutes.
  • Add milk and cheese, keep stirring until cheese has melted, and heat to serving temperature.

1 pkg helluva good onion dip (red container)
Half tsp fresh black pepper
ALMOST READY - ONE MORE STEP

Steps:

  • 1. Chop up crab meat to nice consistency (not too fine) Use a nut chopper if you have one as works well.
  • 2. Fold in full container Onion Dip and the pepper.
  • 3. Leave overnight in fridge as flavour enhances. Serve with nice crunchy crackers - i.e. Mary's Crackers work nicely.
  • 4. When using place in nice serving dish and voila!

8 ounces cream cheese
1/4 cup butter
1/2 cup sour cream
1/2 cup cream
2 eggs

  • Boil peeled potatoes until consistently is right for mashing.
  • Mash potatoes with cream cheese, butter, sour cream, cream, and eggs.
  • Add salt and garlic salt.

  • Cover with foil and refrigerate overnight.

3 cups orange juice
⅓ cup white sugar
⅓ cup olive oil
2 teaspoons finely grated lemon zest
2 teaspoons grated fresh ginger
2 cups dried pitted prunes, quartered
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Stir together carrots, orange juice, sugar, oil, zest, and ginger in a large skillet or 5-quart pot; bring to a boil over medium-high heat. Reduce heat to medium and cook, stirring occasionally, until carrots are tender and glazed, about 15 minutes. Stir in prunes and simmer until tender, 5 to 10 minutes. Stir in salt and pepper.
