BUFFALO BURGERS

2 pounds ground buffalo meat
1 (8 ounce) can green chiles, drained and diced
1 teaspoon cayenne pepper
1 teaspoon cumin
1 teaspoon salt, plus more, for seasoning
Freshly ground pepper
4 hamburger buns
1 red pepper, roasted, peeled, seeded, and julienned
Famie's Simple and Spicy BBQ Sauce, recipe follows
1 (4 ounce) can chipotles in adobo sauce, pureed
8 ounces your favorite smoky BBQ sauce

Steps:

  • Preheat an outdoor grill or broiler.
  • In a large mixing bowl, mix the buffalo meat, chiles, cayenne, cumin, and salt until well blended. Refrigerate until ready to use.
  • Form the meat mixture into 4 large patties. Place the patties on the grill and cook until desired temperature. Season the burgers with salt and pepper to taste and place on hamburger buns. Top with roasted red peppers and Famie's Simple and Spicy BBQ Sauce.
  • In a small bowl, blend the two ingredients together. Store in refrigerator.
  • Yield: 12 ounces sauce

Number Of Ingredients 12

4 pounds ground buffalo
1 medium red bell pepper, chopped finely
3 tablespoons (more or less to taste) finely chopped fresh Anaheim or poblano chiles
2 tablespoons canned smoked chipotle chili paste (Paste is easier to use and distributes better. Careful, this is smoked jalepeno, adjust for the amount of heat you want.)
2 teaspoons onion powder
2 heaping tablespoons rendered duck fat (can be purchased at most gourmet meat shops)
6 ounces chilled fresh baby spring greens
2 tablespoons extra-virgin olive oil
1 tablespoon freshly squeezed lemon juice
Freshly ground salt and pepper
12 fresh dinner-sized rolls
2 (4-ounce logs) soft goat cheese

Steps:

  • Combine first 6 ingredients well. Form small patties by hand (approximately 3 inches across). Toss baby greens with olive oil, lemon juice, and salt and pepper, to taste. Grill burgers over medium heat until cooked through. Serve on dinner rolls, topped with a slice of the goat cheese and the dressed greens.

1 1/2 pounds ground buffalo
1/2 pound ground chuck
1 medium onion, finely chopped, about 1 cup
3 tablespoons sun-dried tomato paste
1/4 teaspoon liquid smoke
Kosher salt
Freshly ground black pepper
4 hamburger buns, for serving

Steps:

  • Preheat an outdoor grill to medium-high.
  • Put the buffalo, chuck, onion, tomato paste, and liquid smoke in a large bowl and season generously with salt and pepper. Mix everything together with your hands until it is well combined.
  • Take about 1 cup (8 ounces) of the meat mixture and form it into patties with your hands or in a hamburger press. When you have them all made, grill them, turning frequently, until cooked through, about 8 to 10 minutes total. (Alternately, cook them in a large nonstick skillet over medium-high heat until cooked through, about 8 to 10 minutes.) Serve on hamburger rolls with the toppings of your choice.

This was on the package of meat. It is from Great Range Brand. I left out the hot pepper as we're not fond of hot. The flavor was good, but a little sweet. Next time I'll put less ketchup in. It's a good basic recipe to experiment with.

1/4 teaspoon salt
1/4 teaspoon pepper

  • Lightly form into 4 patties 3/4" to 1" thick.
  • Grill or broil 4" from heat, turning once.
