5 lbs boneless skinless chicken thighs, cut into cubes
vegetable oil, for deep frying
mochi mochi marinade

Steps:

  • Prepare Mochi Mochi marinade and marinate chicken over night in the refrigerator.
  • When you are ready to start cooking, drain the marinade from the chicken pieces.
  • heat about 2 inches of oil in a wok or deep heavy pot over medium high heat until registers 350 to 360 degrees on a deep fryer thermometer.
  • Fry the chicken pieces in batches, without crowding, until deep golden brown and just cooked through.
  • This will take 2 to 3 minutes, depending on the size of the cubes.
  • Allow the oil to return to 350 degrees before adding a new batch. Drain on paper towels.

3 cups cottonseed oil or 3 cups corn oil, for deep-frying
1/2 cup mochiko sweet rice flour
1/2 cup cornstarch
1/2 cup sugar
1/2 cup chopped green onion
1/2 cup soy sauce
4 large eggs, beaten
4 garlic cloves, minced
1 teaspoon salt

Steps:

  • Combine marinade ingredients, and marinate chicken overnight in refrigerator.
  • Allow excess marinade to drip off each piece before putting into oil.
  • deep-fry until done.

This mochiko chicken is my daughter's favorite thing in the whole wide world. If you have never eaten mochiko chicken then you don't know what you been missing. This is a staple in many potlucks, tailgating and family gatherings. Mochiko is a Japanese sweet flour that makes a light batter. I make this for my family of 8 once a month. I have to triple the recipe and there is never leftovers.

¼ cup white sugar
¼ cup mochiko (sweet rice flour)
¼ cup cornstarch
½ teaspoon salt
2 eggs
½ cup sliced green onions
5 tablespoons soy sauce (such as Aloha™ Shoyu)
2 tablespoons sesame seeds
4 cloves garlic, minced, or more to taste
3 pounds skinless, boneless chicken thighs, cut into strips
2 cups vegetable oil for frying

Steps:

  • Mix sugar, mochiko, cornstarch, and salt together in a bowl.
  • Whisk eggs, green onions, soy sauce, sesame seeds, and garlic together in a bowl. Whisk into the flour mixture to form a smooth batter.

1 cup white rice flour
⅓ cup cornstarch
1 cup soy sauce
1 ½ tablespoons salt
½ cup white sugar
1 cup chopped green onions
6 cloves garlic, minced
1 teaspoon cayenne pepper
5 eggs
oil for frying

Steps:

  • In a large bowl combine the flour, cornstarch, soy sauce, salt, sugar, green onions, garlic, cayenne pepper and eggs. Mix well. Add the chicken and marinate for 24 hours, refrigerated.
  • Remove from refrigerator, deep fry and serve.

Taken from hawaiinewsnow.com. Time to marinate IS NOT included in prep/cook time. Posted for ZWT. ETA: I have now made this chicken, tho I used boneless skinless breasts, as it is what I had on hand. The Cap'n Crunch cereal makes a tasty breading, and the marinade imparts a nice underlying flavor.

8 boneless skinless chicken thighs (trimmed of excess fat)
1 tablespoon shoyu
1 teaspoon garlic, minced
1/2 teaspoon ginger, minced
1 egg
1/2 cup flour
salt and pepper, to taste
12 ounces Cap'n Crunch cereal (small box)
ranch salad dressing, for dipping

Steps:

  • Place Captain Crunch in a Ziplock bag and smash with a rolling pin until finely crushed. Set aside.
  • Season chicken thighs with salt and pepper to taste before lightly dusting with flour.
  • Place chicken in a mixing bowl and add shoyu, garlic, ginger, and egg.
  • Mix until combined and allow chicken to marinate for 30 minutes.
  • Roll chicken in crushed cereal and place in a baking pan that has been sprayed with Pam.
  • Bake at 350 degrees for 45 minutes to 1 hour.
  • Cut into strips or desired size and serve with ranch dressing.
