CRISPY BREADED BAKED PORK CHOPS

4 boneless pork center loin chops (about a 1/2" thick)
1 1/2 teaspoon TAK House Seasoning or your favorite spice blend
1 cup all-purpose flour
2 large eggs, slightly beaten
1/3 cup milk
3 dashes hot sauce
1 1/2 cup plain Panko breadcrumbs
2 teaspoons Kosher salt
1 teaspoon black pepper
1/3 cup olive oil

Steps:

  • Preheat the oven 375° and have ready a rimmed sheet pan lined with nonstick aluminum foil. Also, have ready a breading station consisting of three shallow trays or pie plates.
  • Pat the pork chop dry with a paper towel and sprinkle the seasoning blend evenly over both sides. Rub to adhere. Set aside while you prepare the breading trays.
  • Add 1 cup of flour to the first tray. Add eggs, milk, and hot sauce to the second tray and whisk to combine. In the last tray, stir together panko bread crumbs, Kosher salt, and pepper.
  • Dredge the seasoned pork chop in the flour tray, shaking off any excess, then dip it in the egg mixture (allowing excess to drip off), and back into the flour mixture. Then, back into the egg mixture once more, and lastly coat thoroughly in the Panko breadcrumbs.
  • Transfer pork chops to the baking sheet and drizzle evenly with half of the olive oil. Turn the pork chops over, and drizzle with the remaining olive oil.Bake for 13 minutes. Flip the pork chops over, and bake for 13 minutes more. Allow to cool slightly, serve, and enjoy.

Grilled Pork Chops with Roasted Garlic Gremolata image

1/4 cup packed brown sugar
1/4 cup kosher salt
2 tablespoons smoked paprika
1 tablespoon pink peppercorns
4 fresh sage leaves
2 sprigs fresh thyme
1 sprig fresh rosemary
2 14-ounce bone-in center-cut pork chops (about 1 1/4 inches thick)
Freshly ground pepper
1 cup extra-virgin olive oil
1 head garlic, broken into individual cloves, peeled
1/2 cup finely chopped fresh parsley
Grated zest of 3 lemons
Kosher salt and freshly ground pepper

Steps:

  • Brine the pork: In a large bowl, whisk 1 quart warm water, the brown sugar, salt and paprika until the sugar and salt dissolve. Add the peppercorns, sage, thyme and rosemary and let cool to room temperature. Add the pork chops to the brine. Cover and refrigerate 24 hours.
  • Meanwhile, make the gremolata: Preheat the oven to 275 degrees F. Combine the olive oil and garlic in a small baking dish. Cover with foil and bake until the garlic is completely tender, about 1 hour. Remove from the oven and let the garlic cool in the oil. Strain, reserving the roasted garlic and oil separately. Chop enough roasted garlic to measure 1 tablespoon. Reserve the remaining roasted garlic for another use.
  • Mix the parsley, lemon zest, chopped roasted garlic and 1/2 cup of the garlic oil in a small bowl; season with salt and pepper. Reserve the remaining garlic oil to coat the pork.
  • Grill the pork: Preheat a grill to medium high. Remove the pork from the brine and pat dry. Lightly brush the pork with some of the garlic oil and sprinkle with pepper. Grill, turning as needed to prevent flare-ups, until a nicely charred crust forms and an instant-read thermometer inserted into the center registers 135 degrees F for medium doneness, 8 to 10 minutes per side. Transfer to a cutting board and let rest 8 minutes.
  • Carve the meat from the bones and slice against the grain. Serve with the gremolata.

2 eggs
¼ cup milk
4 lean boneless pork chops
½ (16 ounce) package saltine crackers, crushed
1 cup oil for frying
2 cups water
1 cube chicken bouillon

Steps:

  • In a medium bowl, whisk together the eggs and milk until well blended. Run the pork chops under water then roll in the cracker crumbs. Dip into the egg mixture, then back into the cracker crumbs. Make sure the chops are thickly coated.
  • Heat the oil in a large skillet over medium-high heat. Fry chops until golden brown on both sides. Add water to the skillet, just enough to almost come to the top of the pork chops. Dissolve the chicken bouillon cube in the water. Reduce heat to medium-low, cover, and simmer until the pork chops absorb most of the water, about 15 to 20 minutes.
  • To deep fry, skip the water and bouillon cube. Heat frying oil to 350 degrees F (175 degrees C). Fry coated chops for about 10 minutes or until golden brown. Season with salt and pepper immediately after. They come out moist and delicious.

You should get boneless pork chops that are slightly thick (I am not so good at measuring), but still thin enough to cook quickly. If you get thick ones just pound them about a bit so that they will cook faster.

6 boneless pork chops
10 saltine crackers
3 tablespoons grated parmesan cheese
2 tablespoons cornstarch
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3/4 teaspoon lemon pepper

Steps:

  • Crush the saltines very fine in a food processor. If you don't have one, crush the crackers in a baggie with a rolling pin.
  • Add the cheese, corn starch, and seasonings and pulse a couple of times to mix them in well. Again, if no food processor, add them to the crushed crackers in the baggie and mix well.
  • Add the crumb mixture to a pie plate. Dip the pork chops and cover well with the crumbs. Double dip them to ensure a good amount of crumbs.
  • In a hot skillet, add 1/4 cup of oil. Pan fry for about 3-5 minutes on each side and both sides are golden brown.
  • Remove from pan and cover with foil to keep warm if a gravy is desired.

I adapted this recipe from one a friend's Mother gave me over 25 years ago. Since I am such a recipe fiend I have tried many different and delicious pork chop recipes, but this is the one my family always loves and asks for. And it is so simple to make.

6 -8 pork chops (I use 1-inch thick boneless center cut)
2 -3 cups milk
garlic salt (to taste)
16 ounces keebler's Club crackers (other crackers could be used, but the results will NOT be the same)

Steps:

  • Put pork chops in a shallow dish or zip-loc bag.
  • Add enough milk to cover chops.
  • Soak pork chops in the milk several hours or overnight in the refrigerator, turning if necessary.
  • Crush the club crackers into coarse crumbs.(I place them in a zip-loc bag and crush them with a rolling pin.).
  • Preheat oven to 325 degrees Fahrenheit.
  • Remove pork chops from milk.
  • Season VERY well with garlic salt (I often use Morton Nature's Seasons in place of the garlic salt).
  • Dredge seasoned chops with the cracker crumbs, making sure they are well coated with crumbs.
  • Place the coated crumbs on a cookie sheet.(I use an ungreased one and never have a problem with sticking. You can spray it lightly with PAM if you prefer.).
  • Bake for 1 hour in preheated 325 degree Fahrenheit oven.
  • Cooking time includes soaking overnight.
  • Slight variation: Sometimes I will season with Morton's Nature's Seasons instead of the garlic salt.
  • ***I have tried this with other crackers, it is okay, but just not quite as good***.
