nonstick cooking spray
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
1 1/4 cups granulated sugar
2 eggs
3/4 cup sour cream
1 teaspoon pure vanilla extract
1/3 cup milk
3 ounces bittersweet chocolate, melted and cooled
1/2 cup creamy peanut butter
1/4 cup unsalted butter
1/4 cup brown sugar, packed
1/4 cup granulated sugar
1/2 cup whipping cream
1/2 teaspoon sea salt

Steps:

  • Preheat oven to 350 degrees F. Lightly spray 10-inch fluted tube pan with cooking spray; set aside. In bowl stir together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  • In large mixing bowl beat butter with an electric mixer on low to medium speed 30 seconds. Add sugar; beat until fluffy. Add eggs, one at a time, beating on low to medium speed 1 minute after each addition and scraping bowl frequently. Beat in sour cream and vanilla. Alternately add flour mixture and milk to butter mixture, beating on low speed after each addition just until combined.
  • Divide batter into two bowls. Stir melted chocolate into half the batter until well combined. Stir peanut butter into remaining half until well combined.
  • Alternately drop spoonfuls of batter into prepared pan. Use a small metal spatula or butter knife to gently swirl the batters together (no not overmix).
  • Bake in preheated oven 40 to 45 minutes or until wooden toothpick inserted near center comes out clean. Cool 15 minutes on wire rack. Remove cake from pan; cool thoroughly on wire rack. Drizzle cake with half of the Salted Caramel Glaze. If desired, sprinkle with Sea Salt. Pass remaining sauce.

My mother-in-law shared this treasured family recipe with me. We adore the tender nutty cake with its smooth frosting. When my husband, Ralph, finds I've fixed this dessert, he's one happy man!

1/2 cup shortening
1 cup sugar
1 egg
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup buttermilk
1 pound salted peanuts, ground
FROSTING:
1/2 cup all-purpose flour
1 cup milk
1 cup butter, softened
1 cup confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a bowl, cream shortening and sugar. Add egg; beat well. Combine the flour, baking soda and baking powder; add to creamed mixture alternately with buttermilk. Set aside 3/4 cup peanuts for topping. Stir remaining peanuts into batter. Spread into a greased 13x9-in. baking pan. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., Meanwhile, for the frosting, combine the flour and the milk in a saucepan until smooth. Bring to a boil over medium heat, stirring frequently. Cook and stir for 2 minutes or until thickened. Remove from the heat; cool completely. In a bowl, cream the butter and confectioners' sugar until fluffy. Add the cooled flour mixture and the vanilla; beat until fluffy, about 4 minutes. Spread over the cake; sprinkle with the reserved peanuts.

GRANDMA MABEL'S SALTED PEANUT CAKE

This was my grandma's recipe. She would make it when my dad was just a little guy and he's now 68 - so it's a pretty old recipe. I haven't seen any recipe like this on JAP. It's unique and ohhhhhhh so yummy! It takes a little extra work, but believe me it's well worth it!!

1/2 c shortening
1 c sugar
1 egg
1 1/2 c all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 c buttermilk
1 lb salted peanuts - ground
FROSTING
1/2 c all-purpose flour
1 c milk
1 c butter-softened
1 c powdered sugar
1 tsp vanilla extract

Steps:

  • 1. In a bowl, cream shortening and sugar. Add egg and beat well. Combine the 1 1/2 cups of flour, baking soda and baking powder and add to creamed mixture slowly alternating with the buttermilk. Set aside 3/4 cup of the ground peanuts for the topping. Stir remaining peanuts into batter. Spread into a greased 13X9 cake pan. Bake at 350 degrees for 40-45 minutes or until a toothpick comes out clean from the center. Cool completely before frosting.
  • 2. FROSTING DIRECTIONS- combine 1/2 cup of flour and the milk in a saucepan until smooth. Bring to a boil over medium heat stirring frequently. Cook and stir for 2 minutes or until thickened. Remove from the heat and cool completly. In a bowl cream the butter and the powdered sugar until fluffy. Add the cooled flour mixture and the vanilla and beat until fluffy -about 4 minutes. Spread over the cooled cake and sprinkle with the reserved ground peanuts.
  • 3. *NOTE* Grandma and mom always used one of those old, silver, cast iron grinders to grind the peanuts. I do it as well because I just like the way the peanuts come out. You might be able to use a food processor, but personally I have never tried it. Just like keeping some of the old traditions I guess!
