1/2 cup butter, softened
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup Kraft caramel bits
1 cup semisweet chocolate chips
3 ounces white candy coating, melted

Steps:

  • Preheat oven to 325°. Cream butter and sugar until light and fluffy; beat in eggs and vanilla. In another bowl, whisk together flour, baking powder and salt; gradually beat into creamed mixture (dough will be stiff). Stir in caramel bits and chocolate chips., Divide dough into three portions. On parchment-paper lined baking sheets, shape each portion into a 7x3-in. rectangle. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool on pans on wire racks 5 minutes., On a cutting board, use a serrated knife to cut each rectangle crosswise into eight slices. Place slices on baking sheets, cut side down. Bake until crisp, 10-12 minutes per side. Remove from pans to wire racks; cool completely., Drizzle melted candy coating over tops; let stand until set. Store between pieces of waxed paper in airtight containers.

Salted Caramel Chocolate Biscotti

3/4 cup sugar
1 1/2 tsp vanilla extract
2 large eggs
1 cup all purpose flour
3/4 cup white whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup bittersweet chocolate chips
15 caramel candies, unwrapped and chopped small
sea salt for sprinkling

Steps:

  • Preheat oven to 300. Line a baking sheet with parchment paper and set aside. In the bowl of a stand mixer, beat together sugar, vanilla and eggs until white and creamy. In a separate bowl whisk together flours, baking soda and salt. With the mixer on low, slowing add dry ingredients to the wet ingredients. Mix until just incorporated. Fold in caramels and 1/3 cup of chocolate chips. Divide dough in half and form into two 12 inch logs on prepared baking sheet. Flatten slightly so logs are about 3/4 inch high. Bake for 35 minutes. Remove and allow to cool for 10 min. With a sharp knife, slice each log into 24 cookies. Lay biscotti down on the cut sides. Bake again for 10 minutes. Flip the biscotti over and bake for an additional 10 minutes or until biscotti are nicely dried. Allow to cool completely on wire racks. In a microwave safe bowl, place remaining chocolate chips. Microwave on high for 30 seconds, stir and microwave again for 15 seconds. Repeat, microwaving for 15 second intervals until chocolate is completely melted. Use a fork or spoon to dip in the melted chocolate and drizzle over biscotti. Sprinkle with sea salt. Allow chocolate to set (these can be popped into the fridge to speed the chocolate hardening process along). I love to experiment with different recipes and combine classic and new flavors. I've been making this shortbread for over 20 years and finally have found the perfect pairing! I love salted caramel, and of course I love dark chocolate, so I layered these two flavors with my favorite shortbread crust. It's melt-in-your-mouth good, and it is quickly becoming a favorite with my family, friends and customers! For even more gooey goodness, drizzle bottled caramel sauce over top. -Lisa Glenn, Sarasota

2 cups butter, softened
1-1/2 cups confectioners' sugar
1 cup sugar
6 teaspoons vanilla extract
4 cups all-purpose flour
1 package (14 ounces) caramels
1/3 cup heavy whipping cream
1 teaspoon kosher salt
1 package (12 ounces) dark chocolate chips

Steps:

  • Preheat oven to 325°. Beat butter, sugars and vanilla until light and fluffy, 5-7 minutes. Gradually beat in flour, mixing well. Press 3 cups of dough onto bottom of a greased 13x9-in. pan. Bake until set, 20-22 minutes. , Cool 10 minutes on a wire rack. Meanwhile, in a small saucepan, melt caramels with cream over low heat until smooth. Pour over crust. Sprinkle with salt, then chocolate chips. Drop remaining dough by teaspoonfuls over top. Bake until light golden brown, 30-35 minutes longer. Cool on a wire rack.
