1 (5 ounce) bag salt and vinegar potato chips
4 -5 tilapia fillets

Steps:

  • Pour the milk into a wide, flat dish. Spread the flour in the same kind of dish or waxed paper.
  • Pour the chips into a ziptop bag and seal. Crush them into small pieces (a rolling pin works well for this.
  • Coat the fish with milk, then flour, then potato chips. Arranged in a greased baking dish. Drizzle any leftover milk over the fish to help to coating cook onto the fish.
  • Bake at 400 degrees for 12 to 13 minutes until golden.

4 fillets frozen wild haddock fillets, thawed according to package directions
1/2 cup potato chips, finely crushed (the best is Sea Salt & Malt Vingear Kettle Cooked)
2 tablespoons fresh parsley, finely chopped
2 tablespoons green onions, finely sliced
1/2 teaspoon fresh rosemary, finely chopped
1 teaspoon lemon zest, finely grated
2 tablespoons mayonnaise, light

Steps:

  • Preheat oven to 400f.
  • Place haddock on a parchment paper-liined baking sheet and pat dry. Toss crushed potato chips with parsley, green onions, rosemary and lemon zest and set side.
  • Spread an equal amount of mayonnaise over each piece of fish. Gently press crumb mixture onto the fillets. Bake for 12 minutes or until fish flakes when tested with a fork. Serve with steamed vegetables.

1/4 cup milk
1 cup reduced-fat potato chips, crushed
1/4 cup parmesan cheese, grated
1/4 teaspoon dried thyme
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 tablespoon dry breadcrumbs
2 tablespoons butter, melted

Steps:

  • Cut fish into serving-size pieces.
  • Place milk in a shallow bowl.
  • In another shallow bowl, combine potato chips, parmesan cheese, thyme, garlic powder, pepper.
  • Dip fish in milk, then with the potato chip mixture.

3 cups potato chips
1 cup shredded cheddar cheese (may use low fat)

Steps:

  • Preheat oven to 400 degrees.
  • Pour salad dressing in a bowl, then dip each fillet into the dressing, coating both sides.
  • Arrange in a single layer on a greased cookie sheet.
  • Crush the potato chips in a large zip-top plastic bag using a rolling pin.
  • Sprinkle the chips evenly over the fish.

My family love these light and crispy filet pieces sprinkled with plenty of Kosher salt and malt vinegar.

4 potatoes
corn or peanut oil
1 lb cod or 1 lb other lean fish fillet
2/3 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon vinegar
2/3 cup water

Steps:

  • Cut potatoes lengthwise into ½-inch strips.
  • Heat oil (2 to 3 inches or enough to cover) in deep fryer or Dutch oven to 375 degrees.
  • Fill basket one-fourth full with potatoes. (I don't have a basket - I use a Fry Daddy and it works fine. Just be sure and put the chips in one at a time so they don't stick to each
  • other.) Skip the next step if you're not using a basket.
  • Slowly lower basket into hot oil. (If oil bubbles excessively, raise and lower basket several times.) Use a long-handled fork to keep potatoes separated.
  • Fry potatoes 5 to 7 minutes or until golden brown; drain on paper towels.
  • Place potatoes in single layer on cookie sheet and keep warm.
  • Repeat with remaining potatoes.
  • Cut fish filets into 2 x 1/-1/2-inch pieces. Pat dry with paper towels.
  • Mix flour and salt.
  • Mix baking soda and vinegar.
  • Stir vinegar mixture and water into flour mixture; beat until smooth.
  • Dip fish into batter, allowing excess batter to drip into bowl.
  • Fry 4 or 5 fish pieces at a time (do not use basket) about 3 minutes, turning fish once, until brown. Drain on paper towels.
  • Set oven control to broil. Broil potatoes 6 inches from heat 2 to 3 minutes or until crisp.
