Shrimp Pasta Salad With Fresh Fruit Salsa image

2 cups uncooked farfalle (bow-tie) pasta (4 ounces)
1 head Boston lettuce
1 medium cucumber, cut lengthwise in half, then sliced crosswise
12 ounces cooked (peeled and deveined) large shrimp
1 avocado, sliced
1/2 cup coarsely chopped pineapple
1/2 cup coarsely chopped strawberries
1 teaspoon grated orange peel
2 tablespoons orange juice
1 tablespoon olive or vegetable oil
1/4 teaspoon salt
1/8 teaspoon white pepper
2 kiwifruit, peeled and coarsely chopped
1 small jalapeño chile, chopped

Steps:

  • Mix all ingredients for Fresh Fruit Salsa.
  • Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • Divide lettuce leaves among serving plates. Arrange pasta, cucumber, shrimp and avocado on lettuce-lined plates. Serve with salsa.

2 cups dry rainbow radiatore pasta
1 onion, chopped
1 red bell pepper, chopped
1 (6 ounce) can sliced black olives
3 tomatoes, diced
1 (4 ounce) can diced green chiles
⅓ cup distilled white vinegar
¼ cup chopped fresh cilantro
1 ½ teaspoons garlic salt
⅓ cup lemon juice
½ cup vegetable oil
1 tablespoon white sugar
1 tablespoon chili powder

Steps:

  • In a large pot with boiling salted water cook radiatore pasta until al dente. Drain.
  • Meanwhile, combine chopped onion, bell pepper, olives, tomatoes, and green chilies in a large bowl.
  • In a small bowl, whisk together vinegar, cilantro, garlic salt, lemon juice, vegetable oil, sugar and chili powder.
  • Mix cooked pasta with vegetables. Toss with cilantro dressing and serve.

12 ounces peeled and deveined cooked large shrimp
1 avocado, sliced
Fresh Fruit Salsa:
1/2 cup coarsely chopped fresh pineapple
1/2 cup coarsely chopped strawberries
1 teaspoon grated orange peel
2 tablespoons orange juice
1 tablespoon vegetable oil or olive
1/4 teaspoon salt
1/8 teaspoon white pepper
2 kiwi fruits, , peeled and coarsely chopped
1 small jalapeno chiles, chopped
Mix all ingredients.

Steps:

  • Prepare Fresh Fruit Salsa. Cook and drain pasta as directed on package. Rinse with cold water drain. Divide lettuce leaves among serving plates. Arrange pasta, cucumber, shrimp and avocado on lettuce-lined plates. Number Of Ingredients 20

23 oz. refrigerated cheese tortellini
fresh corn kernels (from 1 ear of sweet corn)
1 1 red bell pepper, chopped
1 cup cherry or grape tomatoes, cut in half
1 cup black beans, rinsed and drained
1/2 of a small red onion, chopped
1 large Avocado, chopped
6 slices thick cut bacon, crumbled ((more or less to taste))
1/2 cup finely grated Pepper Jack cheese (or more to taste)
3/4 cup salsa ((medium for more of a kick))
1/2 cup sour cream ((may sub.plain Greek yogurt))
1/4 cup mayonnaise
juice from 1 lime ((2 tablespoons))
1 jalapeno (seeded, deveined and roughly chopped)
2 garlic cloves, peeled
1/3 cup loosely packed cilantro
1/2 tsp EACH salt, ground cumin, sugar**
1/4 tsp EACH pepper, smoked paprika
Milk as needed
Hot sauce to taste

Steps:

  • Add all of the Creamy Salsa Dressing ingredients to a blender or food processor and "chop" then puree until smooth, scraping sides down as needed. Add milk, a tablespoon at a time, to reach desired consistency.
  • Cook Tortellini in generously salted water just until al dente according to package directions (do NOT overcook - we don't want soggy tortellini). Rinse tortellini in cool water and add to a large serving bowl. Add. corn, bell pepper, tomatoes, black beans, red onion and half of the dressing. Gently toss. Cover and chill in the refrigerator for at least one hour.
  • When ready to serve, add avocado, bacon, cheese and the desired amount of dressing to the salad (you may not use all it) and gently toss to combine. Add additional dressing if needed so its nice and creamy. Taste and season with salt and pepper and hot sauce if desired.

10 ounces (1 pint container) red cherry tomatoes, halved
10 ounces (1 pint container) yellow cherry tomatoes, halved
10 ounces (1 pint container) green cherry tomatoes, halved
1 jalapeno chile, seeded and minced
2 limes, juiced, plus more to taste
1 small red onion, thinly sliced
1/2 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
1/3 cup chopped fresh cilantro
1 pound orecchiette (or other short pasta)

Steps:

  • Combine tomatoes, jalapeno, lime juice, onion, and oil in a large bowl. Sprinkle with 1 1/2 teaspoons salt. Let stand at room temperature until tomatoes release their juices, about 1 hour. Toss with half the cilantro.
  • Bring a large pot of salted water to a boil. Add pasta, and cook until al dente, about 8 minutes. Drain, and rinse with cold water.
  • Toss pasta with tomato mixture. Stir in remaining cilantro, and adjust seasoning with salt, pepper, and lime juice. Serve immediately.

Mexican Pasta Salad With Salsa image

Very different from the other pasta salads already posted here. Got this from makesameal.com. Very simple to make with few ingredients. You could get creative and add more ingredients like corn, beans, and olives but this is a good base. Nice for the warmer weather. We loved this. I used Miracle Whip, which I like better in this salad, and 2 cloves garlic for mine. Mild salsa goes down better with my kids but use a stronger one if you like.

1 -2 garlic clove, minced

  • Cook and drain pasta according to package directions, rinse with cold water.

1 onion (chopped)

  • Mix rest of ingredients. Mixture should have a slight creaminess.
  • Excellent warm or ice cold.
  • Variation: add diced leftover chicken for a quick main dish.
