MEDITERRANEAN SUMMER PASTA WITH SALSA CRUDA

- In a large pasta serving bowl, mix together the olives, tomatoes, mint, capers, garlic, red pepper flakes, orange zest and olive oil. Season with salt and freshly cracked pepper. Stir and lightly press the ingredients with the back of the spoon to incorporate flavors. Let sit for at least 30 minutes, or up to a day.
- Just before serving, cook the angel hair pasta in salted boiling water according to package instructions. Remove the garlic clove from the pasta sauce. Drain the pasta and while still steaming hot, place the pasta on top of the cold sauce. Let sit for a minute before tossing the pasta. Top with grated Parmesan and serve.

- Crush garlic in garlic press or mortar and mash with salt to create a paste. Add the olive oil and mix well.
- Chop tomatoes in 1/2-inch cubes. Add them with juices to garlic mixture in large bowl.
- Use a small, sharp knife to cut the corn kernels from the cob. Add to the bowl.
- Finely chop basil and parsley. Add to bowl, along with lots of pepper. Add chopped jalapenos, if desired. Mix well, cover, and let stand at room temperature while cooking pasta. For the most flavor, let the sauce stand longer (1-3 hours), but do not refrigerate.
- Cook 1 pound of your favorite pasta, drain, and toss with sauce. Serve with freshly grated parmesan or your favorite cheese or cheese substitute, if desired (I don't think it needs any).

- Heat 2 tablespoons oil in large skillet over medium-high heat. Add cabbage; sauté until wilted, about 3 minutes. Add haricots verts and remaining garlic; toss 1 minute. Add 3/4 cup cheese, pasta, and 2/3 cup pasta cooking liquid, then parsley mixture from processor. Toss until sauce coats pasta, adding more pasta cooking liquid if dry, about 2 minutes. - Add all of the Creamy Salsa Dressing ingredients to a blender or food processor and "chop" then puree until smooth, scraping sides down as needed. Add milk, a tablespoon at a time, to reach desired consistency.
- Cook Tortellini in generously salted water just until al dente according to package directions (do NOT overcook - we don't want soggy tortellini). Rinse tortellini in cool water and add to a large serving bowl. Add. corn, bell pepper, tomatoes, black beans, red onion and half of the dressing. Gently toss. Cover and chill in the refrigerator for at least one hour.
- When ready to serve, add avocado, bacon, cheese and the desired amount of dressing to the salad (you may not use all it) and gently toss to combine. Add additional dressing if needed so its nice and creamy. Taste and season with salt and pepper and hot sauce if desired.

- Begin heating a large pot of water. Cut the tomatoes in half across the equator, and grate on the large holes of a box grater into a wide bowl. Stir in the garlic, salt and pepper, vinegar and olive oil.

SCALLOP CEVICHE ON BLACK PASTA CAKES WITH CILANTRO SALSA

- Combine onion, juices, jalapeño, and salt in a bowl.
- Poach scallops in 4 quarts of simmering salted water, stirring occasionally, until just cooked through (scallops should be opaque with centers slightly pink), about 1 minute. Drain scallops and gently toss with marinade. Marinate scallops, covered and chilled, 3 hours.
- Boil pasta in a large pot of boiling salted water until just cooked through, 1 to 2 minutes. Reserve 1 cup cooking water, then drain pasta in a colander. Rinse briefly under cold running water to stop cooking (don't cool pasta completely) and drain well. Toss pasta with extra-virgin olive oil.
- Heat 1/4 inch olive or vegetable oil in a 10-inch nonstick skillet over moderate heat until hot but not smoking. Form cakes by dropping a few strands of loosely squiggled pasta into a 1-tablespoon measure to fill it and inverting tablespoon into oil, flattening cake slightly if necessary. (If strands in bowl become too sticky to handle, stir in a little reserved pasta water, 1 teaspoon at a time. You need some starch from pasta to hold cake together, but you don't want strands to become wet.) Cook cakes, 4 at a time, until crisp, 45 seconds to 1 minute per side, and drain on paper towels. Season cakes with salt.
- Soak onion in cold water to cover 20 minutes, then drain and rinse well. Stir together onion, cilantro, tomatillos, tomato, jalapeño, and salt and chill, covered, until ready to use.
- Lift scallops out of marinade and put 1 on top of each pasta cake. Top with salsa and serve immediately.
"MAKE THAT CHICKEN DANCE" SALSA PASTA
I made this up the other night after I started to make Mirjam's Penne Arrabiatta (#22941) but discovered I was missing a few ingredients. Like the Italian dish I meant to make, this one is also spicy and loaded with garlic. I'm sure it would be even more flavourful with fresh herbs, but dried ones were all I had on hand.

- Heat oil in a frying pan and sauté the onions and mushrooms until soft, about two minutes.
- Add the water, tomatoes (with all their seeds and juice), garlic, oregano, basil, parsley and hot sauce.

- Add salsa and chicken.

MEXICAN PASTA SALAD WITH SALSA
Very different from the other pasta salads already posted here. Got this from makesameal.com. Very simple to make with few ingredients. You could get creative and add more ingredients like corn, beans, and olives but this is a good base. Nice for the warmer weather. We loved this. I used Miracle Whip, which I like better in this salad, and 2 cloves garlic for mine. Mild salsa goes down better with my kids but use a stronger one if you like.
