TORTILLA-SALSA MEAT LOAF

I'm asked to make this recipe at least once a month during the winter, especially for birthday dinners. My guests like it with braised asparagus and garlic mashed potatoes.

2 slices day-old white bread
2 eggs, lightly beaten
1 cup salsa
1/2 cup crushed tortilla chips
1/2 cup each chopped green pepper, onion and celery
1 jalapeno pepper, seeded and chopped
6 garlic cloves, minced
1 teaspoon pepper
1/2 teaspoon Italian seasoning
1/4 teaspoon seasoned salt
1 pound ground beef
1 pound ground pork

Steps:

  • Place bread in an ungreased 9x5-in. loaf pan; set aside. In a large bowl, combine the eggs, salsa, tortilla chips, green pepper, onion, celery, jalapeno, garlic, pepper, Italian seasoning and seasoned salt. Crumble beef and pork over mixture and mix well. Pat into prepared pan. , Bake, uncovered, at 375° for 1-1/4 to 1-1/2 hours or until a thermometer reads 160°. Invert meat loaf onto a serving platter; discard bread. Let stand for 5 minutes before slicing.

This meat loaf is a bit different and I hope to try it soon. The recipe is from Anne Lindsay's New Light Cooking. A good selection of optional ingredients allows you to make it according to what you have on hand.

Number Of Ingredients 15

1 lb extra lean ground beef
1 large onion, finely chopped
2 garlic cloves, minced
3 slices whole wheat bread, crumbled
1 1/2 teaspoons dried thyme, crushed
1 1/2 teaspoons dried oregano, crushed
1 cup salsa
1 egg, lightly beaten
1/4 cup fresh cilantro (optional) or 1/4 cup parsley, chopped (optional)
1 sweet green pepper, chopped (optional)
1 stalk celery, chopped (optional)
1 carrot, peeled and chopped (optional)
1 cup corn (optional)
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Combine 1/2 the salsa with all other ingredients, mixing until just combined.
  • Spoon into 9x5-inch loaf pan, smoothing top.
  • Spread remaining salsa over top (may be made ahead and refrigerated up to 3 hours at this point).
  • Bake in 350F oven for 55 minutes or until firm to the touch and meat thermometer reads 170°F.
  • Pour off fat.
