CHILE MORITA SALSA

Salsa Macha is made out of dried peppers that are gently fried and then ground to form the sauce. Some versions use Arbol, Morita, or Serrano peppers, while others use a mixture of Morita and Chipotle. Variations include the addition of peanuts and garlic cloves.

4 tablespoons vegetable oil*
12 Morita peppers (cleaned and seeded)
4 small garlic cloves (or 2 large)
1 cup of hot water
Salt to season

Steps:

  • Heat oil in a skillet over medium heat. Add the peppers and garlic cloves and fry. Peppers will inflate when ready. This step is quick, so make sure not to burn the peppers to avoid a bitter tasting salsa.
  • Remove peppers and garlic cloves, place in a bowl with the cup of hot water, and let them soak for about 8-10 minutes.
  • Place in a blender with about ½ of the soaking water and the oil where the peppers and garlic were fried. Process until you have a rather grainy textured salsa. Season with salt and enjoy!

Salsa de Tomate con Chile Chipotle: Tomato Sauce with Chipotles image

2 tablespoons lard, preferably home-rendered or vegetable oil
1 medium-sized white onion, sliced into thin half-moons
2 garlic cloves, minced
1 (28-ounce) can tomatoes, preferably San Marzano
2 to 3 canned chipotle chiles in adobo, with the sauce that clings to them
1 teaspoon dried crumbled Mexican oregano
1/2 teaspoon salt

Steps:

  • In a medium-sized heavy-bottomed saucepan, heat the lard to rippling over medium-high heat. Add the onion and garlic; cook, stirring occasionally, until the onion is translucent, about 3 minutes.
  • Break up the tomatoes coarsely with your fingers. Add the tomatoes and their juices to the sauteed onion. Stir in the chiles and oregano. Reduce the heat to medium and cook, covered, stirring occasionally, for 15 minutes or until slightly concentrated.
  • Remove from the heat and let cool to lukewarm, about 15 minutes. Puree the mixture in a blender or food processor. Taste for salt (the tomatoes will have some) and add a little if needed. Serve hot at once or store tightly covered in refrigerator for up to 4 or 5 days and reheat before serving.

6 ounces large, medium hot whole dried red guajillo chiles
Boiling water to cover
1 tablespoon dried oregano
8 garlic cloves, peeled
2 cups water
2 tablespoons vegetable oil
1 1/2 tablespoons flour
2 teaspoons sea salt, or to taste
1 teaspoon sugar
1 teaspoon vinegar

Steps:

  • Heat a comal or a cast iron skillet over medium heat until a drop of water sizzles on contact. Remove the stems and seeds from the chiles and wipe them clean with a dry cloth. Place them on the comal and toast them, just until their aroma is released, 30 to 60 seconds. Be careful not to burn them. Place the chiles in a bowl and cover them with boiling water. Let them soak until softened, about 10 minutes. Drain the chiles and discard the liquid. Place the chiles, oregano, garlic, and the 2 cups of water in a blender and blend to a smooth puree. Add more water if the sauce is too thick. Place the oil in a medium size saucepan. Heat the oil over medium high heat until it is rippling. Add the flour and cook, stirring constantly, until golden. Add the chile puree and salt to the pan and reduce the heat to low. It may splatter as you pour it in, so be careful. Cook, stirring often, until the raw taste is gone and the flavor of the chiles has mellowed, about 10 minutes. Finish the sauce with the sugar and vinegar. Store, tightly covered, in the refrigerator up to a week or indefinitely in the freezer.
