Popular throughout Central America & Mexico, Salpicón is a refreshing salad that is great as a topping for tostadas or wrapped in fresh corn tortillas. Easy to make in large quantities for parties and family gatherings.My Mom made this for me with my Tia Anita...I loved it,it was so good,yum !!!

3 lb beef flank or skirt steak
1 large onion, chopped
1/3 c olive oil
1/4 c vinegar
1-2 tsp oregano
salt and pepper -- to taste
3-4 tomatoes, seeded and chopped
1 large onion, thinly sliced
3 serrano chiles, chopped or minced
3-4 avocados, chopped
1 whole queso cotija,it is crumbly/crumble by hand

Steps:

  • 1. Add the beef, onion and salt to a large pot and add water to cover. Bring to a boil, reduce heat to medium-low and simmer for 1 1/2 to 2 hours, or until meat is very tender. Remove the meat and reserve the stock for soup or other recipes. Shred the meat with your fingers when it is cool enough to handle.
  • 2. Add the olive oil, vinegar, oregano, salt and pepper to a large bowl and whisk together. Add the tomatoes, sliced onion and chiles and toss together. Set a side for a few minutes to let the vegetables marinate.
  • 3. Gently toss the shredded beef and avocados with the marinated vegetables and adjust seasoning.Add the crumbled Cotija Cheese. Spread on a serving platter and serve chilled or at room temperature with warm tortillas,or Tostadas or some Lettuce,like a lettuce wrap
  • 4. Salpicón can also be made with chicken (salpicón de pollo), seafood (salpicón de mariscos) or tuna (salpicón de atún). ---------------------------------------------------- Other possible additions: chopped lettuce, chopped cucumbers, olives, pickled jalapeños. 1 (1 lb) flank steak (or 1 lb. of beef brisket)
1 white onion, thickly sliced
1 tablespoon sea salt
2 cloves garlic, chopped
1 teaspoon black pepper
1 bay leaf
3 tablespoons white vinegar (distilled)
1 1/2 tablespoons fresh lime juice
1 tablespoon dried oregano
1 teaspoon sea salt
1 teaspoon black pepper
1/3 cup olive oil
2 tomatoes, cut in eighths
1/2 cup thinly sliced bermuda onion
1 head shredded romaine lettuce
6 thinly sliced radishes
1 tablespoon chopped fresh cilantro
2 sliced avocados

Steps:

  • For the beef: place in large pan and cover with enough water to cover meat by 2 inches.
  • Add onion, salt, garlic, pepper and bay leaf.
  • Bring to boil, skimming off any foam.
  • Reduce heat and add oregano.
  • Simmer uncovered about 1-1/2 hours, or until beef is very tender.
  • Refrigerate overnight.
  • Reserve cooking liquid.
  • Slice, then shred beef coarsely.
  • Return to refrigerator, adding enough reserved cooking liquid to meat to cover.
  • Whisk together the vinaigrette ingredients.
  • Combine tomatoes, Bermuda onion and 3 tbsp.
  • of vinaigrette.
  • Toss to coat and season to taste with salt and pepper.
  • Drain beef and add shredded lettuce and cilantro to beef.
  • Mix in more vinaigrette and season with salt and pepper.
  • Divide salad among plates; surround with tomato mixture and garnish with avocado and radish slices.

SHREDDED BEEF TOSTADAS (SALPICON)

One 2-pound boneless beef brisket
1 large white onion, quartered
Kosher salt
3/4 cup olive oil
6 tablespoons distilled white vinegar
1/4 cup fresh lime juice
1/4 cup minced red onion
2 tablespoons dried crumbled Mexican oregano
Freshly ground black pepper
1 cup seeded chopped cucumber (from 1/2 English or hothouse cucumber)
1 cup seeded chopped tomatoes (from 2 tomatoes)
1/2 cup capers, drained
1/4 cup chopped fresh cilantro
4 radishes, finely chopped
12 corn tortillas
2 avocados, halved, pitted, peeled and sliced, for serving

Steps:

  • Put the brisket in a large pot and fill with enough water to cover the meat by an inch. Add the onion quarters and 1/4 cup salt. Bring to a boil. Reduce the heat to medium and simmer partially covered until the brisket is very tender, 2 1/2 hours. Add more water if needed to keep the meat covered. Turn off the heat and let the brisket cool in the cooking liquid to room temperature. Drain the brisket, discard the water and cool completely.
  • Meanwhile, prepare the vinaigrette by whisking the olive oil and vinegar in a medium bowl until well combined. Add the lime juice, red onion and oregano and whisk again. Season the vinaigrette with salt and pepper.
  • Shred the brisket into a large bowl. Add the cucumbers, tomatoes, capers, cilantro and radishes and toss to combine. Add the vinaigrette and toss to coat. Season with additional salt and pepper if needed.
  • To make the grilled tostadas: Heat a grill pan on the stovetop over medium-high heat. Place a corn tortilla onto the hot pan until the tortilla is crisp with a slight char. Cook for about 5 minutes each side. Scoop the shredded beef salad onto the grilled tostada and garnish with some avocado slices.

Tostadas are a common dinner at our home. I fry my own corn tortillas since I think they taste so much better than store bought. I also fry my own pinto beans in bacon drippings. But for ease and convenience store bought will do. We top our tostadas with shredded lettuce, tomatoes, cheese, sour cream, and salsa.

1 teaspoon kosher salt
1 teaspoon ground black pepper
1 (3 pound) beef brisket, trimmed
2 (12 ounce) cans tomato paste
water to cover
1 onion, halved
1 large carrot, quartered
1 stalk celery, quartered
1 cup chopped fresh cilantro, divided
2 cloves garlic, chopped
4 ounces chipotle peppers in adobo sauce
⅓ cup apple cider vinegar
⅓ cup extra-virgin olive oil
1 onion, minced
1 large tomato, chopped
salt and ground black pepper to taste
1 (12 ounce) package warm corn tortillas, or as needed
½ pound Monterey Jack cheese, shredded

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Sprinkle kosher salt and 1 teaspoon black pepper over the fatty side of brisket. Spread tomato paste over entire brisket. Place brisket, fat-side up, in a heavy pot; pour in enough water to cover brisket. Add halved onion, carrot, celery, 1/2 of the cilantro, and garlic to the pot. Bring liquid to a boil. Cover pot with a lid or aluminum foil and transfer to oven.
  • Bake in the preheated oven until brisket is very tender, about 6 hours.
  • Blend chipotle peppers in adobo sauce in a a food processor until finely chopped. Add vinegar to peppers and continue processing; drizzle olive oil into mixture until smooth.
  • Remove brisket from liquid and cool slightly. Slice meat across the grain into 2-inch slices; shred thoroughly with a fork.
  • Combine shredded meat, chopped onion, tomato, remaining cilantro, and pepper mixture in a large bowl; season with salt and pepper. Serve meat mixture with corn tortillas and top meat with Monterey Jack cheese.

This hearty recipe is from The Border Cookbook by Cheryl and Bill Jamison. This is one of those "flexible" recipes. It serves a lot as a meal, and more as an appetizer. You can adjust the heat by reducing or eliminating the chipotles, or by substituting a milder chile. You can serve it warm, or cold. It's a great party recipe because you can partially prepare a few days before the event. You can prepare the meat in the crockpot, oven, BBQ, or pressure cooker, if you prefer. Steps:

  • Prepare brisket: In a Dutch oven or a small stockpot, combine meat with onion, stock, bay leaves, garlic, chipotles, salt and peppercorns.
  • Bring mixture to a boil over high heat, skimming off any foam.
  • Reduce heat to low, cover and simmer 3 1/2 to 4 hours or until the meat is falling-apart tender.
  • Let cool 30 minutes in cooking liquid.
  • Reserve 2 tablespoons cooking liquid for salad dressing and save remainder, refrigerated, for a Southweswtern soup or stew.
  • Pull meat apart into shreds.
  • (The dish can be made ahead to this point and refrigerated 1 or 2 days. Before proceeding, warm foil-wrapped meat in oven.) To make dressing: In a blender or food processor, combine reserved brisket liquid, chipotles, olive oil, lime juice, vinegar, ketchup, onion, garlic, salt and pepper and purée.
  • To complete salad: In a bowl, mix brisket with about 3/4 of the dressing.
  • Transfer brisket to a serving platter or bowl and toss it lightly with tomatoes, avocados, onion, cheese and cilantro.

Steps:

  • Put the fish in a large bowl, add 1 tablespoon of the lime juice and the salt, and toss well. Put the flour in another large bowl, add the fish, and toss very well to evenly coat the fish.
  • Pour 3 inches of canola oil into a Dutch oven or medium pot and heat the oil over medium-high heat until it reaches 375°F on a deep-fry thermometer. Working in batches to avoid crowding the oil, shake off a little flour from the fish, then add the fish to the oil and fry until the pieces are lightly golden brown and crispy, about 2 minutes per batch. Transfer the fried fish to a paper towel to drain.
  • When the fish is just cool enough to handle, put it in a large bowl and add the onions, cilantro, chiles, Worcestershire sauce, olive oil, and the remaining 2 tablespoons of lime juice. Toss and mix well with your hands or a spoon, breaking up the strips into small pieces as you do. Season to taste with more lime juice, chiles, and salt.
  • Serve alongside tortillas and lime wedges, topped with avocado slices and Fresh Green Salsa.

1 lb flank steaks or 1 lb beef brisket, well trimmed and cut into 2-inch squares
1 garlic clove, peeled and quartered
2 bay leaves
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 small red onion, diced (divided use)
salt
4 large radishes, julienned
1 -2 fresh habanero pepper, stemmed, seeded and finely chopped
1 small tomatoes, cut into 1/4 -inch pieces
2 tablespoons chopped fresh cilantro
6 tablespoons sour orange or 6 tablespoons lime juice
6 leaves romaine lettuce
1 ripe avocado, sliced

Steps:

  • The Meat: bring 3 cups water to a boil in a medium saucepan, add the squares of meat and skim off any grayish foam that rises to the top during the first few minutes of boiling. Add the garlic, bay leaves, herbs, a generous ½ teaspoon salt and half of the onion. Simmer over medium to medium-low heat for an hour or so, until the meat is tender. If there is time, let cool in the broth. Drain and discard all but the meat; then shred the meat into thin strands.
  • The dzik. Combine the cooked meat, the remaining half of the onion, the radishes, chile, tomato and cilantro, and toss with the sour orange or lime juice and generous 1 teaspoon salt. Line a platter with 4 of the romaine leaves; slice the remaining 2 to make a bed in the center. Scoop the dzik into a mound over the sliced lettuce. Decorate with slices of avocado.

Steps:

  • SALPICON First day: Trim the brisket, cook it whole with a whole onion sliced, about 5 pieces of fresh garlic sliced, and a bay leaf. I cook it at 400 degrees for about 3 hours. While the brisket is cooking, freshly squeeze about 6-8 large Limes. They must be limes, not lemons, nor lime/lemon juice, fresh Limes!! Once the brisket is cooked, let it cool.... then put on a pair of gloves and hand shred the brisket. Shredding it will make it look long and stringy, once the brisket is shredded, I take bundles of it and place it on the chopping block to size the length down so that guest will be able to eat it with tostadas, but not too short as the look of shredded brisket is much more appealing than brisket chopped. Next, marinade the brisket in a little bit of Olive Oil (I use 1-2 tablespoons) and all the lime juice. This marinaded brisket needs to go into the refrigerator overnight. DAY TWO: Chop up some long green onions, using mostly the stems chopped in little circles. Chop up some tomatoes into little diced sized pieces. Chop up some cilantro, (trash the stems, but don't worry if some get in) Chop up some jalapeno (Caution: If your audience is not into hot, then you could separate some of the brisket for those that don't like the kick or slice the jalapeno so that it can easily be pulled out. ) I added a little jalapeno but not too much to make it very hot and put some jalapeno on the side. Garnish with cilantro and slices of Avocado. Serve cold with tostadas.

TILAPIA SALPICON TACOS

1 1/2 pounds skinless tilapia fillets
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1/2 cup loosely packed fresh cilantro leaves
1/4 cup fresh lime juice (about 4 limes), plus wedges for serving
2 tablespoons Worcestershire sauce
1 jalapeño pepper, seeded and finely chopped
1/2 red onion, thinly sliced
8 to 12 6-inch corn tortillas
1/2 cup shredded iceberg lettuce, for serving
Sour cream, for serving

Steps:

  • Sprinkle the fish with 1/2 teaspoon salt and a few grinds of pepper. Heat the oil in a large skillet over high heat. When hot, add the fish and sear, flipping once, until golden and cooked through, about 8 minutes. Let the fish cool to warm, then shred with a fork. Toss the fish with the oil from the skillet along with the cilantro, lime juice, Worcestershire, jalapeño, onion, 1 teaspoon salt and a few grinds of pepper. Cover and refrigerate until ready to use or for up to 8 hours.
  • Wipe out the skillet and heat over medium-high. Add the tortillas, in batches, and cook, flipping once, until blackened in spots, about 30 seconds per side. Stack the tortillas as they finish and cover with a kitchen towel.
  • Put out the tilapia mixture with the tortillas, lettuce, lime wedges, and sour cream so everyone can make their own tacos.

  • Place dressing ingredients into a large bowl. Whisk to blend. Set aside.
  • For the salad:.

1 (3 pound) boneless beef roast, or more to taste
2 quarts water to cover
1 (16 ounce) can stewed tomatoes
3 cloves garlic, minced
⅓ cup Italian-style salad dressing
1 (4 ounce) can chopped green chilies

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Place roast in deep pan with enough water to cover; add tomatoes and garlic. Cover pan with aluminum foil or a lid.
  • Roast beef, adding water regularly to keep meat covered, until the meat pulls apart easily with a pair of forks, about 5 hours.
  • Remove roast to a cutting board and shred meat completely. Put shredded meat in a mixing bowl; add Italian-style dressing and green chiles and mix.
  • Cover bowl with plastic wrap and refrigerate 8 hours to overnight.

2 -2 1/2 lbs beef flank steak or 2 -2 1/2 lbs skirt steaks
1 onion, chopped
1/3 cup olive oil
1/4 cup vinegar
1 1/2 teaspoons oregano
salt and pepper, to taste
3 tomatoes, seeded and chopped
1 onion, thinly sliced
3 serrano chilies, minced
2 avocados, chopped

Steps:

  • Add the beef, onion and salt to a large pot and add water to cover. Bring to a boil, reduce heat to medium-low and simmer for 1 1/2 to 2 hours, or until meat is very tender.
  • Remove the meat and reserve the stock for soup or other recipes. Shred the meat with your fingers when it is cool enough to handle.
  • Add the olive oil, vinegar, oregano, salt and pepper to a large bowl and whisk together.
  • Add the tomatoes, sliced onion and chiles and toss together.
  • Set a side for a few minutes to let the vegetables marinate.
  • Gently toss the shredded beef and avocados with the marinated vegetables and adjust seasoning.
  • Spread on a serving platter and serve chilled or at room temperature with warm tortillas.

3 cloves garlic, chopped
1 white onions, chopped
2 canned chiles, chopped
1/4 cup chile juice, from can
3 tablespoons canned pickled carrots, chopped
2 medium tomatoes, chopped
1/4 cup parsley, chopped
1/4 cup cilantro, chopped
Salt and pepper, to taste
1 to 1-1/4 pounds crabmeat, cleaned

Steps:

  • Heat oil and butter in frying pan. Add garlic and onion, and saute. Add chiles, chile juice, carrots, tomatoes, parsley, and cilantro. Season with salt and pepper and cook over low heat until mixture thickens, about 25 minutes. Add crab meat and correct seasonings. To serve, place crab on a platter. Serve with freshly made tortillas to roll into tacos. The shredded crab may also be served in crab shells, sprinkled with bread crumbs, melted butter, and parsley, then baked in a hot oven for 25 minutes.

750g mussels in their shells
50ml sherry
1 garlic clove, sliced
1 bay leaf
½ red onion, finely chopped
½ green pepper and ½ red pepper, both cut into 1cm chunks
½ cucumber or 2 small Lebanese cucumbers, halved lengthways, deseeded and cut into 1cm chunks
3 tomatoes, quartered, deseeded and chopped
300g cooked king prawns, shelled and deveined
2 tbsp flat-leaf parsley, chopped
sweet smoked paprika, for sprinkling
150ml extra virgin olive oil
50ml sherry vinegar
½ tsp sugar

Steps:

  • Wash the mussels in a colander to remove any grit. Remove any stringy beards from the shells and check for any that are slightly open - give these a tap on a work surface, and discard if they remain open.
  • Tip the mussels into a large pan, then add the sherry, garlic and bay. Cover with a lid and steam over a medium-high heat for 3-4 mins, or until the mussels open. Drain and discard any unopened mussels. Remove and discard the shells. Set aside and leave to cool.

  • Bring the salad out of the fridge 30 mins before serving. Spoon onto a serving plate and sprinkle with a pinch of paprika, remembering that a little goes a long way.

This composed salad of beef and purple potatoes originated in Santiago, Chile, where it's often served as a quick lunch. The dressing is a tangy, spicy mix, a good match against all the different textures. Some purple potatoes turn steely gray when cooked, but the color change won't affect the taste of this hearty salad. I got this recipe off of the msnbc web site. I have not tried it but it does look very good so I thought that I would share it with you all.

1 clove garlic, minced
1 tablespoon chili powder
5 tablespoons fresh lime juice
1/2 teaspoon ground cumin

1 lb hanger steak, trimmed of any excess fat
2 lbs purple potatoes, such as purple peruvians or all blues,scrubbed
3/4 cup white corn kernels (about 1 large ear) or 3/4 cup frozen corn, thawed
1 large avocado, peeled,pitted,and cut into 1/2 inch pieces
6 radishes, thinly sliced
2 scallions, thinly sliced
1/3 cup chopped fresh cilantro
1/2 cup extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
4 dashes Tabasco sauce, to taste

Steps:

  • In a small bowl, mix the garlic, chili powder, 1 tablespoon of the lime juice, the cumin, and salt until well combined.
  • Massage this mixture into both sides of the hanger steak.
  • Cover and refrigerate the meat for at least 2 hours, but no more than 6 hours.
  • Meanwhile, bring a medium pot of salted water to a boil.
  • Add the potatoes and cook until tender when pierced with a fork, about 20 minutes.
  • Drain and cool, then cut into quarters, or 2-inch chunks, whichever is smaller.
  • Position the broiler rack 4 inches from the heat and preheat the broiler.
  • Place the hanger steak on a large lipped baking sheet.
  • Broil, turning once, about 3 minutes each side for medium.
  • Transfer the steak to a cutting board and let stand for 5 minutes.
  • Cut it in half, then slice each piece into thin strips against the grain, cutting in long strokes with the knife at a 45-degree angle to the cutting board.
  • Place the sliced steak, potatoes, corn, avocado, radishes, and scallions in a large bowl.

1/4 cup fresh lime juice
1/4 teaspoon white pepper
1 fresh jalapeno pepper, seeded and minced
1 teaspoon coarse salt
1/2 cup olive oil
3 cups raw quinoa (15-16 ounces)
1 cup cucumber, peel seed dice
1 cup tomatoes, seeded and diced
1/2 cup scallion, slice white part
1/3 cup Italian parsley, chopped
1/3 cup of fresh mint, chopped

Steps:

  • I usually note and I did not. Make sure you wash the quinoa very well. It has a natural chemical on it to make it bitter to birds so they will not eat the grains. It can be easily washed off. In large amounts this chemical is toxic to humans. When the water is no longer 'soapy' looking the Quinoa is free of this chemical. Note not of any real value but the soapy water? Makes great laundry detergent.
  • Make a vinaigrette by whisking together the lime juice, white pepper, jalapeno, and salt, then gradually adding the olive oil. Set aside.
  • Place the quinoa in a fine sieve and wash under running water, rubbing the quinoa with your hands, for a few minutes. Drain. In a pot large enough to hold the ingredients comfortably, combine 2 quarts of water and the cleaned and drained quinoa. Bring to the boil, lower the heat, and simmer, uncovered, for about 10 minutes, or until the quinoa is barely tender. Do not overcook.
  • Remove from the heat and pour through a strainer. Drain thoroughly, and let cool. (Do not rinse.).
  • Place the cooled quinoa in a serving bowl with the cucumber, tomato, scallions, parsley, and mint and toss. Add the reserved vinaigrette and toss again. Correct seasoning with extra salt and white pepper to taste, and serve.
