MEDITERRANEAN SHRIMP RECIPE WITH BELL PEPPERS



Mediterranean Shrimp Recipe with Bell Peppers image

Easy shrimp recipe, coated in Mediterranean spices and skillet-cooked in a light white wine and olive oil sauce with shallots, bell peppers and tomatoes. Ready in 25 minutes or less!

1 1/4 lb large shrimp (or prawns, peeled and deveined (if frozen, be sure to thaw first))
1 tbsp all-purpose flour
1 to 2 tsp smoked Spanish paprika
1/2 tsp each salt and pepper
1/2 tsp ground coriander
1/4 tsp cayenne
1/4 tsp sugar
1 tbsp butter (I prefer to use ghee clarified butter)
3 tbsp Extra virgin olive oil
1/2 red onion, (thinly sliced)
4 garlic cloves, (chopped)
1/2 green bell pepper and 1/2 yellow bell pepper, (cored and sliced)
1 cup canned diced tomato
1/3 cup chicken or vegetable broth
2 tbsp dry white wine
2 tbsp fresh lemon juice
1/3 cup chopped parsley leaves

Steps:

  • Pat the shrimp dry and place it in a large bowl. Add the flour, smoked paprika, salt and pepper, coriander, cayenne, and sugar. Toss until the shrimp is well-coated.
  • In a large cast iron skillet, melt the butter with the olive oil over medium heat. Add the shallots and garlic. Cook for 2-3 minutes, stirring regularly, until fragrant (be sure not to burn the garlic.) Add the bell peppers and cook another 4 minutes or so, tossing occasionally.
  • Now add the shrimp. Cook for 1 to 2 minutes, then add the diced tomatoes, broth, white wine and lemon juice. Cook for a couple more minutes or until the shrimp turns bright orange.
  • Finally, stir in the chopped fresh parsley and serve!

1 lb large shrimp peeled and deveined
Kosher salt
½ cup extra virgin olive oil
10 garlic cloves, (chopped)
1 teaspoon red pepper flakes ((start with less if you don't want it too spicy))
1 teaspoon paprika
2 tablespoons dry sherry or dry white wine
Juice of ½ lemon
½ cup chopped fresh parsley

Steps:

  • Pat the shrimp dry and season with kosher salt. Set aside for now.
  • Heat the extra virgin olive oil over medium heat until shimmering but not smoking. Add the garlic and red pepper flakes. Cook over medium heat up to 60 seconds or until the garlic gains some color (be careful not to burn it).
  • Add the shrimp and paprika. Cook briefly, tossing regularly, and watching that the flesh turns opaque with a pearly pink color (about 3 minutes or so; this will depend on the size of the shrimp). Remove the pan from the heat.
  • Stir in sherry, lemon juice and parsley.
  • Transfer the shrimp and sauce to a serving bowl. Serve with your favorite crusty bread.

I copied this out of a cookbook but I don't remember which one. The author's note on the recipe says it is from Sofi's restaurant in Los Angeles.

Number Of Ingredients 12

2 cups orzo pasta
salt
1 1/2 tablespoons unsalted butter
1 bunch fresh dill, leaves snipped off at stems
1/2 bunch fresh basil
2 tablespoons virgin olive oil
3 garlic cloves, minced
1 lb ripe plum tomato, peeled, cored and chopped
1 lb medium shrimp, peeled and deveined
fresh ground black pepper
2 tablespoons fresh oregano (or 2 t dried)
9 ounces feta cheese

Steps:

  • Cook the orzo al dente in salted water. Drain well. Return to pot and add the butter, mix well to coat all the pasta.
  • Butter an 11 x 7 Pyrex dish.
  • Mince the dill and basil.
  • Heat olive oil in a large skillet over medium high heat. Add garlic and sauté just until translucent. Add the tomatoes, dill and basil. Cook until the tomatoes are slightly soft, about 10 minutes. Add the shrimp and cook, stirring occasionally, just until pink about 3 or 4 minutes. Remove from heat.
  • Preheat oven to 500°F.
  • While the tomato mixture is cooking, mince the oregano (or crush the dried with your fingers). Crumble feta into a small bowl. Add the oregano and toss with feta until blended.
  • Spread the orzo evenly in the buttered baking dish, top with the tomato shrimp mixture, then put the feta oregano on top.
  • Bake just until feta begins to melt, about 5 minutes.
  • Serve immediately.
