SALMON WITH HERB & GARLIC CREAM SAUCE
Recipe video above. This quick, creamy Salmon Sauce gets a fine dining touch with the addition of fresh tarragon and chervil. It's simply an excellent, easy salmon recipe for all those times when you want a touch of luxury with minimal effort!

Steps:
- Season: Pat salmon dry, then sprinkle with salt and pepper.
- Pan-sear: Heat oil in a large non stick skillet over medium high heat. Add salmon, presentation side down, and cook for 3 minutes until golden brown.
- Flip: Turn salmon and cook the other side for another 2 minutes, until the internal temperature registers 49°C / 120°F (for medium-rare, recommended) or until cooked to your taste (Note 5).
- Butter baste: When it's almost cooked, add the butter. Melt, then spoon over the salmon a few times.
- Rest: Remove salmon onto plate, and cover loosely with foil to keep warm.
- Sauté garlic: Add garlic and stir for 20 seconds or until light golden.
- Reduce wine: Add white wine, turn up heat to high. Bring to simmer while stirring base of the pan to dissolve all the golden bits into the sauce. Cook 1 minute or until it most evaporates and the wine-y smell is gone.
- Thicken cream & stock: Add cream and chicken stock, then simmer on medium heat for 2 - 3 minutes until reduced and slightly thickened.
- Add parmesan & herbs: Stir through parmesan (this will thicken sauce more), then the herbs. Taste sauce and see if more salt and pepper is needed.
- Serve: Serve salmon with Creamy Sauce, ensuring there's something on the plate to soak up all that amazing sauce! Mashed Potato rates highly. See above video for list of suggestions (including side salads).

TEQUILA CURED SALMON

- On top of a layer of aluminum foil and plastic wrap (enough to make a pouch), put the salmon on a baking sheet skin-side down. Pat the top dry with paper towels. Combine the coriander, mustard and cumin seeds in a small saute pan over low heat and toast, stirring constantly until fragrant, about 2 minutes. Remove, let cool slightly and coarsely grind in a coffee grinder.
- Spread the chipotle over the top of the salmon fillet. Sprinkle the ground spices, lime zest and cilantro over and press into the flesh. Combine the salt and brown sugar in a bowl, drizzle with the tequila and then spread evenly over the salmon. Tightly wrap the salmon in the plastic wrap and aluminum foil. Place another baking sheet on top of the salmon and weigh down with bricks wrapped in foil or a heavy cutting board. Refrigerate for 48 hours.
- Remove the salmon from the refrigerator and scrape off the curing ingredients. When cured, the fish should have a raw appearance and a firm but not hard texture. Slice the salmon against the grain paper thin and serve with accompaniments of choice.

- Combine the vinegar, lime juice, sugar, salt, coriander seeds, mustard seeds and peppercorns in a small saucepan over high heat. Cook until the sugar and salt is dissolved. Remove from the heat and let cool for 5 minutes.
- Put the onions in a medium bowl, pour the vinegar mixture over and toss to coat. Cover and refrigerate for at least 1 hour and up to 48 hours before serving.
- Combine the cream cheese, goat cheese, milk and salt and pepper to taste in a food processor and process until smooth and fluffy. Scrape into a bowl and fold in the scallions and dill.;

TEQUILA LIME GRILLED SALMON
Some might say that salmon and tequila don't mix, but we beg to differ. This tequila lime grilled salmon recipe is the perfect blend of sweet, smoky, and spicy.

- Combine the cilantro, tequila, lime juice, triple sec, olive oil, garlic, pepper, and salt in a zip-top plastic bag or shallow dish. Add the salmon to the tequila marinade and turn to coat it in the liquid. Seal the bag or cover the dish and refrigerate for 1 hour, turning the salmon after 30 minutes. Preheat and grease the grill. Remove the salmon from the marinade. Place on the hot grill and cook for 8 minutes per inch of thickness (measure at the thickest part). Turn the fish once during the cooking time. Remove from the grill and serve immediately.

- In small bowl, mix sour cream, cilantro, lime peel, lime juice, honey and salt; set aside.
- Season salmon fillets with taco seasoning mix. In 8-inch skillet, heat oil over medium heat. Add fillets to skillet, skin-side down.

SALMON WITH TEQUILA CREAM SAUCE

- Method 1. Roast the chilies in a frying pan until the skins are blistered, being careful not to let the flesh burn. Put them in a strong plastic bag and tie the top to keep the steam in. Set aside for 20 minutes. 2. Heat 15ml/1 tbsp of the oil in a saucepan. Add the onion and fry for 3-4 minutes, then add the stock, lime rind and juice. Cook for 10 minutes, until the stock starts to reduce. Remove the chilies from the bag and peel off the skins, slit and scrape out the seeds. 3. Stir the cream into the onion and stock mixture. Slice the chili flesh into strips and add to the pan. Cook over a gentle heat, stirring constantly, for 2-3 minutes. Season to taste with salt and white pepper. 4. Stir the tequila into the onion and chili mixture. Leave the pan over a very low heat. Peal the avocado, remove the stone and slice the flesh. Brush the salmon fillets on one side with a little of the remaining oil. 5.Heat a frying pan or ridged grill pan until very hot and add the salmon, oiled side down. Cook for 2-3 minutes, until the underside is golden, then brush the top with oil, turn each fillet over and cook the other side until the fish is cooked and flakes easily when tested with the tip of a sharp knife. 6. Serve on a pool of sauce, with the avocado slices. Garnish with strips of green pepper and fresh parsley. This is good with fried potatoes
GRILLED TEQUILA SALMON

Steps:
- Grate peel from limes & place in a bowl.
- Squeeze out 1/2 cup juice from limes.
- Add to bowl along with tequila & oil.
- Finely chop peppers and stir into lime mixture along with sugar, chili powder & salt.
- Place salmon into large resealable plastic bag.
- To support the bag, place in a large bowl.
- Pour marinade over fish and seal bag.
- Let marinade for at least an hour--but preferably 4 hours.
- Lightly oil grill and turn BBQ to medium.
- Remove salmon from marinade & place directly on hot grill.
- BBQ, with lid closed, for about 7- 8 minutes per side or until a knife point inserted into the center of the salmon feels warm.
- While salmon is grilling, pour remaining marinade into a saucepan.
- Boil vigorously, uncovered, stirring often, until sauce is reduced by half--about 3 minutes.
- If you want a thicker sauce, add butter & whisk constantly for about another minute.
