A deliciously easy Raspberry Glazed Salmon recipe using 3 simple ingredients for out of this world flavor and a few simple steps to the best baked restaurant style salmon ever!

¼ cup raspberry preserves | or use your favorite jam
2 teaspoons low sodium Tamari | soy sauce (liquid aminos or coconut aminos may be subbed or even try balsamic vinegar)
2-3 garlic cloves (minced or pressed)
½ teaspoon kosher salt
½ teaspoon fresh ground pepper
4 6 oz skin on salmon fillets
⅛-¼ teaspoon red pepper flakes (or just a few shakes)
cayenne pepper to taste
Green onions (thinly sliced or diced)
Lemon wedges
Toasted Pine nuts

Steps:

  • Preheat oven to 450°F and place rack in middle of oven. Spray or brush oil on a foil lined baking pan or cookie sheet.
  • Make the glaze: Combine preserves, garlic, soy sauce, salt and pepper, stir until combined.
  • Arrange salmon, skin side down, a couple inches apart and brush fish fillets evenly with about half of the glaze mixture. Bake a 450 for 4 minutes. Do not remove the fish from the oven, turn broiler to high and broil fish for 6 minutes on middle rack.
  • Spoon remaining sweet glaze mixture onto the center of salmon fillets and broil for 3 more minutes or until desired doneness. Even a few minutes can overcook your salmon, trust the process. Garnish with finely chopped green onions and toasted pine nuts and serve with lemon wedge - optional of course.

24 fresh raspberries
1/2 cup balsamic vinegar
1 teaspoon grated orange peel
4 teaspoons freshly squeezed orange juice
2 teaspoons honey
Splash of red wine
Olive oil cooking spray, for coating the skillet
4 skinless salmon fillets (each approximately 4 ounces in size), preferably wild
Steamed asparagus, for serving

Steps:

  • Mash the raspberries and vinegar with a fork in a small bowl. Stir in the orange peel, orange juice, honey and wine until combined. Set aside.
  • Coat a nonstick skillet with the cooking spray and place over medium heat. Cook the salmon until cooked through, about 4 minutes per side. Set aside.
  • Remove the skillet from the heat and carefully wipe away any liquid with a paper towel. Return the skillet to medium heat and add the reserved raspberry mixture. Stirring constantly, cook until just thickened, about 2 minutes.
  • Pour the sauce over the salmon and serve with asparagus on the side.

½ cup ginger ale
½ cup water
1 lemon, juiced
1 tablespoon lemon zest
2 cups frozen sweetened raspberries, thawed
¼ cup sliced fresh ginger
¼ cup white sugar
2 salmon fillets
2 teaspoons olive oil
sea salt to taste
ground black pepper to taste
1 tablespoon lemon zest, divided

Steps:

  • Mix ginger ale and water in a saucepan, and bring to a boil. Reduce heat to a simmer; stir in lemon juice, 1 tablespoon lemon zest, raspberries, and sliced ginger. Bring to a boil, and cook over medium heat for 30 minutes, stirring occasionally. Strain the sauce through a fine strainer into a clean saucepan; discard solids. Stir sugar into strained sauce, bring to a boil over medium heat, reduce heat, and simmer until the sauce has thickened, about 10 minutes. Remove from heat, and allow to cool while you prepare the salmon.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Coat salmon fillets with olive oil; sprinkle with sea salt, black pepper, and 1 tablespoon of lemon zest. Place salmon fillets into a broiler-proof baking dish. Brush salmon fillets generously with raspberry sauce.
  • Bake in the preheated oven until salmon is almost opaque in the center and the fish flakes easily, about 10 minutes. Turn on the oven's broiler, and broil the fillets until browned, 2 to 3 minutes. Serve with extra sauce if desired.

1/2 cup Melba sauce:
1 pint raspberries
1/4 cup red currant jelly
2 tablespoons granulated sugar, or to taste
1/2 teaspoon cornstarch, mixed in 2 tablespoons water
4 ounces fillet salmon
1 cup lemon water
2 ounces sliced Brie cheese
1/2 cup heavy cream

Steps:

  • For the Melba Sauce: In a blender puree raspberries. Strain out the seeds through a fine sieve. In a small saucepan heat the raspberry puree with the red currant jelly until it comes to a boil. Add the sugar and the cornstarch slurry and cook until the mixture is slightly thickened and clear. Yield: approximately 1 cup
  • Place salmon in an oven safe pan. Immerse the salmon in lemon water. Place in a preheated 450 degree oven. Cook for about 10 minutes.
  • Place Brie on top of the salmon and return to the oven.
  • Combine the cream and Melba Sauce in a saucepan and heat over a medium flame. Drizzle sauce over the melted Brie and salmon, then serve.

6 tablespoons butter
1 ½ cups brown sugar
4 ½ tablespoons lemon juice
2 ¼ teaspoons dried dill weed
¾ teaspoon ground cayenne pepper
1 pound salmon fillets, with skin
lemon pepper to taste

Steps:

  • Preheat an outdoor grill for high heat.
  • Melt the butter in a saucepan over medium heat, and mix in the brown sugar, lemon juice, dill, and cayenne pepper. Cook and stir until the brown sugar is dissolved. Reduce heat and simmer until ready to brush onto the salmon.
  • Season salmon with lemon pepper, and place directly on the grill grate, skin side down. Brushing frequently with the butter and brown sugar glaze, cook the salmon 20 minutes, or until easily flaked with a fork. Reserve some of the glaze for serving.
